2 pound (1-kg) bone-in skin-on chicken thighs and/or legs ((*Footnote 1))
1/2 tablespoon Madras curry powder
1/2 tablespoon paprika powder
1 teaspoon salt
2 tablespoons olive oil
1 onion (, sliced)
1 tablespoon ginger (, minced)
3 cloves garlic (, minced)
1 tablespoon paprika powder
2 tablespoons Madras curry powder
1 cup chicken stock
1/2 can (270-millimeter / 9 ounce) coconut milk
1/4 cup unsalted natural peanut butter
1/4 cup oyster sauce
2 bay leaves
1 (14 ounces / 400 grams) russet potato (, peeled and chopped)
2 bell peppers (, chopped)
Chopped parsley for garnish ((Optional))

Steps:

  • Preheat the oven to 350 degrees F (180 C).
  • Combine all the ingredients of the spice mix. Sprinkle on both sides of the chicken.
  • Heat a large skillet over medium-high heat until hot. Add 1 tablespoon of olive oil. Add chicken, skin side down. Cook until both sides turn dark brown and crispy, 2 to 3 minutes per side. Transfer chicken onto a big plate.
  • Turn to medium heat. Add the rest of the 1 tablespoon of olive oil and onion. Cook until it becomes tender, about 5 minutes.
  • Add ginger and garlic. Stir fry for 30 seconds, to release the aroma.
  • Add paprika powder and curry powder. Stir until the ingredients are well coated with spices, 20 to 30 seconds.
  • Add chicken stock, coconut milk, peanut butter, oyster sauce, and bay leaves. Stir with a spatula to dissolve the peanut butter until it's well blended with the sauce. Bring to the boil.
  • Add potato, peppers, and chicken to the curry. Transfer the pan to the oven. Bake until the chicken is cooked through and the skin crispy, about 45 minutes.
  • Serve hot over steamed rice.

2.5 pounds chicken thighs (boneless and skinless)
3 Tablespoons avocado oil (or other high temperature cooking oil)
1 Tablespoon turmeric
2 teaspoon cumin
2 teaspoon smoked paprika
1 teaspoon ground coriander
1 teaspoon all spice
1/2 teaspoon cinnamon
1/2 teaspoon cayenne
1 teaspoon sea salt
1 teaspoon ground pepper

Steps:

  • Add the chicken to a large bowl then drizzle with avocado oil and all the spices. Using a pair of tongs turn and mix the chicken pieces and spices together until they are evenly distributed over the chicken.
  • Sear the chicken about a minute or to per side on a large frying pan heated to medium high heat.
  • Bake in the oven at 350ºF for 15 minutes, or until the internal temperautre reaches 165ºF.

This dish is my mother's interpretation of a meal we had at a friend's birthday party when we were young. We came home raving about it and had to try making it for ourselves!

1 whole chicken (about 2 1/2 pounds)
3 celery stalks, roughly chopped
2 carrots, roughly chopped
1 medium onion, roughly chopped
3 bay leaves
Sea salt
10 garlic cloves
6 tablespoons (3/4 stick) salted butter
1/2 teaspoon freshly cracked black pepper
1 cinnamon stick
10 ounces baby spinach, chopped (about 8 cups)
1 tablespoon granulated onion
1 tablespoon granulated garlic
1 tablespoon paprika
1/4 teaspoon cayenne pepper
1 tablespoon dried oregano
Cooked basmati rice, for serving
Lemon wedges, for serving (optional)

Steps:

  • PLACE the chicken in a large pot and cover it with water. Add the celery, carrot, onion, and bay leaves and season with 1 tablespoon salt. Cover and bring to a boil, then reduce the heat and simmer for 45 minutes.
  • REMOVE the chicken to a deep dish or bowl and let it drain. Strain the stock into a large bowl or pan and set aside. Transfer the vegetables from the strainer to a blender (remove the bay leaves), add the garlic, and puree until completely smooth. Set aside.
  • TO make the spinach stew, in a large saucepan over medium heat, melt 4 tablespoons of the butter. When it's bubbling slightly, add the vegetable puree. Warm it through, about 2 minutes. Season with 1 teaspoon salt, the pepper, and the cinnamon stick, then add the spinach and cook until wilted, about 2 minutes. Add 1 1/2 cups of the reserved stock and bring to a simmer. Cook to let the flavors develop, about 15 minutes. Reduce the heat and keep warm (remove the cinnamon stick before serving).
  • MEANWHILE, when the chicken is cool enough to handle, pat it completely dry and break it down into 8 pieces: 2 thighs, 2 wings, and 2 breasts, then split the breasts in half. Place the chicken pieces in a large dish. Combine the granulated onion, granulated garlic, paprika, cayenne, oregano, and 1 teaspoon salt in a small bowl. Completely coat the chicken in this dry rub.
  • MELT the remaining 2 tablespoons butter in a large cast-iron skillet over high heat. Add the chicken pieces and sear until charred in spots, about 4 minutes. Flip and cook on the other side, 4 minutes. Remove from the heat.
  • SERVE the chicken with rice and a generous ladle of spinach stew. Squeeze lemon over the plate if desired.

1/2 teaspoon salt
1/4 teaspoon pepper

2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
1 can (28 ounces) crushed tomatoes
1 large sweet potato, peeled and cut into 1-inch cubes
1 cup reduced-sodium chicken broth
1/4 cup creamy peanut butter
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme, divided
1/4 teaspoon cayenne pepper
Hot cooked brown rice, optional

Steps:

  • Sprinkle chicken with salt and pepper. In a Dutch oven, cook chicken over medium heat in 2 teaspoons oil for 4-6 minutes or until no longer pink; remove and set aside., In the same pan, saute onion in remaining oil until tender. Add garlic and ginger; cook 1 minute longer., Stir in the peas, tomatoes, sweet potato, broth, peanut butter, 1-1/4 teaspoons thyme and cayenne. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potato is tender. Add chicken; heat through., Serve with rice if desired. Sprinkle with remaining thyme.

500ml chicken stock , heated
340g jar smooth peanut butter
2 onions , halved and thinly sliced
3 tbsp sunflower oil
3 tbsp finely chopped ginger
½-1 tsp cayenne pepper (optional)
3 tsp ground coriander
3 tsp ground cumin
1-2 scotch bonnet chillies, deseeded and chopped
2 bay leaves
400g can chopped tomato
2 x 800g pack chicken thighs and drumsticks, skinned
3 sweet potatoes , cut into chunks
2 red peppers , deseeded and cut into chunks
good handful coriander , chopped, a little reserved for sprinkling
rice and lime wedges, to serve (optional)

Steps:

  • Pour the hot stock over the peanut butter and stir until dissolved. Heat a very large pan and fry the onions in the oil for 5 mins to soften. Add the ginger, cayenne, if using, ½ tsp black pepper, coriander, cumin, chillies and bay and cook, stirring, for 2 mins.
  • Tip in the tomatoes and the peanut stock, then stir in the chicken pieces. Put a lid on the pan and leave to simmer for 30 mins, stirring frequently to make sure the peanut butter doesn't stick to the base of the pan.
  • Stir in the sweet potatoes, peppers and chopped coriander, then cook for 30 mins more. Serve sprinkled with the reserved coriander, with rice and lime wedges for squeezing over, if you like.

I don't know why this recipe is African. It came to me from a friend in Pennsylvania, who has no African roots that I know of. It can be a complete, vegetarian meal served with rice, or a more protein-rich meal with the addition of a chicken breast. Preparation time does not include cooking rice.

1/2 green bell pepper, chopped
1 tablespoon peanut oil
1/2 lb fresh spinach, trimmed
1/2 tomatoes, chopped

Steps:

  • Cook onion and pepper in the oil in a large pot or skillet for about 3-5 minutes, or until tender.
