AUSTRALIAN MEAT PIES

These terrific little meat pies are often referred to as Australia's national food. Great for munching on during sporting events, or just for a fresh new dinner idea. Cool pies well before serving, as filling will be very hot. Eat by hand or with knife and fork, as desired.

1 pound ground beef
1 onion, chopped
¾ cup water
¼ cup ketchup
2 teaspoons Worcestershire sauce
2 cubes beef bouillon
½ teaspoon dried oregano
¼ teaspoon ground pepper, or to taste
¼ cup cornstarch
¼ cup cold water
1 (15 ounce) package refrigerated pie crusts for a double-crust pie
1 sheet frozen puff pastry, thawed
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. (Drain and discard grease.) Add 3/4 cup water, ketchup, Worcestershire sauce, bouillon cubes, oregano, and black pepper. Bring to a boil, reduce heat, and simmer until combined, about 10 minutes.
  • Mix 1/4 cup cold water and cornstarch together in a bowl to form a paste; stir into meat mixture. Cook until thickened, about 5 minutes more. Remove from heat.
  • Use a 4-inch biscuit cutter to cut the pie crusts into 12 circles. Line each muffin cup with a circle, pressing into the bottom and sides. Fill each with the meat mixture. Use a 3-inch biscuit cutter to cut puff pastry dough into 12 circles. Top each filled muffin cup with with a circle and seal edges together. Brush pastry tops with beaten egg.
  • Bake in the preheated oven until crusts are brown and flaky, 15 to 20 minutes. Cool in pan before removing pies, about 10 minutes.

BEEF AND RUTABAGA HAND PIES WITH JALAPENO KETCHUP



Beef and Rutabaga Hand Pies with Jalapeno Ketchup image

2 1/2 cups all-purpose flour, plus more as needed
1 teaspoon sugar
1 teaspoon kosher salt
1 1/2 sticks cold unsalted butter, cut into small pieces
1 large egg, separated
1 tablespoon cider vinegar
12 ounces sirloin steak, cut into 1/4-inch dice
1 medium carrot, finely diced (about 3/4 cup)
1 medium russet potato, peeled and finely diced (about 1 cup)
1 small rutabaga, peeled and finely diced (about 1 cup)
1/2 medium onion, finely chopped (about 1 cup)
2 teaspoons chopped fresh thyme
1 teaspoon kosher salt
Freshly ground black pepper
Spicy Ketchup, recipe follows
1/2 cup ketchup
2 tablespoons chopped pickled jalapeno plus 2 teaspoons brine from the jar
1 teaspoon Worcestershire sauce

Steps:

  • For the pastry: Combine the flour, sugar and salt in the bowl of a food processor and pulse to combine. Add the cold butter and pulse until the butter is the size of small peas. Whisk the egg yolk, vinegar and 1/2 cup ice water together in a spouted measuring cup. Drizzle over the flour mixture and pulse just until the dough comes together. (If the dough is too crumbly, add a little more water; add more flour if it is too wet.) Dump the dough onto a floured counter and knead a few times to bring it together. Roll into a fat log and wrap in plastic. Chill until firm, about 1 hour.
  • For the filling: Combine the beef, carrot, potato, rutabaga, onion, thyme, salt and pepper in a large bowl and mix well.
  • To make the pastries, cut the chilled dough crosswise into 6 equal pieces. Roll each piece on a floured surface to an approximate 6-by-8-inch oval. Pack a scant cup of the filling in a measuring cup and invert near the bottom of the oval to make a high mound of filling. Beat the remaining egg white in a small bowl with a splash of water. Brush the edges of the pastry with the egg wash. Fold the top of the pastry over the filling and press the dough to make a circular mound of filling in the center. Trim the edges of the dough, if needed, to even them out. Crimp the edges of the pastry and cut two air vents in the top. Place on a parchment-lined baking sheet. Repeat with the remaining dough and filling. Chill 30 minutes.
  • Preheat the oven to 400 degrees F.
  • Brush the chilled pastries with egg wash. Bake the pastries 15 minutes, then reduce the oven temperature to 350 degrees F and continue to bake until deep golden and cooked through, 30 to 35 minutes more.
  • Serve the pastries with Spicy Ketchup.
  • Combine the ketchup, jalapenos, brine and Worcestershire in a small bowl. Chill while the pasties bake.

HARISSA-SPICED ROAST PORK

Have your butcher butterfly the pork so that it lies flat. It should be about 1 1/2 inches thick.

10 ounces harissa (North African chili sauce; about 1 1/4 cups)
1 bunch fresh thyme leaves, roughly chopped (1/4 cup)
1/4 cup fresh lemon zest, plus 1/3 cup lemon juice (from 3 lemons)
1/3 cup red-wine vinegar
1/2 cup coarse salt
2 tablespoons paprika
1 1/2 tablespoons freshly ground pepper
1 skin-on, bone-in pork picnic shoulder (about 11 pounds), butterflied
Harissa-Spiced Barbecue Sauce

Steps:

  • Mix together harissa, thyme, lemon zest and juice, and vinegar for marinade.
  • Mix salt, paprika, and pepper for dry rub. Stir 1 tablespoon dry rub into marinade. Place pork, skin side down, in a large roasting pan; pour marinade over pork. Flip pork; with a sharp knife, score skin (but not meat) in a diamond pattern at 1/2-inch intervals. Pat remaining dry rub over skin. Cover, and refrigerate at least 8 hours and up to 1 day. Bring to room temperature before roasting, 1 to 2 hours.
  • Preheat oven to 325 degrees. Cover pan with parchment-lined foil, and roast pork until fork-tender, about 5 hours. Remove foil from pan, and roast 30 minutes more. Raise temperature to 425 degrees, and roast until skin is deep brown and crisp, about 45 minutes. Remove from oven, and tent with foil. Let rest 45 minutes before carving. Serve with harissa-spice barbecue sauce.

SPICY HARISSA AUBERGINE PIE

Make this veggie bake filled with lentils, sweet potato, feta and aubergine for an easy family meal. You can freeze any leftovers

3 tbsp olive oil
2 aubergines, cut into chunks
2 red onions, finely sliced
2 large garlic cloves, crushed
2 tbsp rose harissa paste
1 tbsp ground coriander
400g can cherry tomatoes
250g pouch cooked puy lentils
100g pitted green olives
1 small bunch parsley, finely chopped
1.3kg sweet potatoes, peeled and cut into 3cm chunks
100g feta, crumbled

Steps:

  • Heat 2 tbsp of the oil in a large frying pan over a medium heat. Fry the aubergines for 10-15 mins until golden and softened. Remove with a slotted spoon and set aside.
  • Fry the onions with the remaining oil for 7-10 mins or until softened. Add the garlic, 1 tbsp of the harissa and the coriander and cook for 1 min more. Return the aubergines to the pan with the tomatoes, lentils, olives and a can of water. Bring to a simmer and cook for 10 mins. Season, then stir through the parsley.
  • Cook the sweet potatoes in a large pan of boiling lightly salted water for 15 mins. Drain and leave to steam-dry, then mash and stir through the remaining harissa. Spoon the aubergine filling into a large baking dish, scatter over half the feta and spoon over the potatoes. Scatter the remaining feta over the pie.
  • Heat the grill to its highest setting. Grill the pie for 7-10 mins or until the top is crisp and golden. To freeze, leave to cool completely before portioning out into small freezerproof containers.
