"This is one of my favorite ways to serve fish," says Kathleen Plake of Fort Wayne, Indiana. "I'm originally from Louisiana, where much of the food is spicy. So I like the spark that the chili powder and green chilies give this good-for-you baked fillets."

Number Of Ingredients 9

2 pounds haddock fillets
1 can (4 ounces) chopped green chilies
2 tablespoons vegetable oil
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
Dash hot pepper sauce

Steps:

  • Place fillets in a 13-in. x 9-in. baking dish coated with cooking spray. Combine the remaining ingredients; spoon over fish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork.

Number Of Ingredients 16

2 Haddock fillets
1/4 cup fresh grated parm cheese
2 tablespoons minced shallot
2 cloves of garlic minced
1 tablespoon portugese crushed hot peppers
1/2 tablespoon fresh cilantro chopped
1/4 cup mayo
1 tablespoon sour cream
Salt and Pepper to taste
1/4 cup chicken broth or white wine
Side sauce -
1 small diced tomato
1/2 cup small diced green pepper
1/2 cup scallions sliced thin
1 table spoon portugese hot peppers
1 cup diced yellow squash seeded

Steps:

  • Mix mayo, sour cream, 1/2 the cheese, the red peppers sauce, cilantro, shallots, garlic, salt and pepper. Spread evenly over both side of the fish. Place in bakng dish. Pour in broth or wine. Sprinkle the rest of the cheese on the top side of the fish. Bake at 375 for about 15 - 20 min until flaky. Do not over cook. Saute the side sauce and spoon over fish when ready
