Peruvian green sauce also known as Aji Verde is a spicy bright green condiment typically found in any Peruvian restaurant.

2 tablespoons olive oil
1/4 cup chopped red onion
1/2 cup light Hellman's mayonnaise (use compliant mayo for whole30)
2 tablespoons white vinegar
4 teaspoons yellow mustard (Guldens)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 jalapeƱos (roughly chopped seeded but keeping the ribs (about 1 cup/3 oz))
2 cups chopped fresh cilantro leaves and stems (2 oz rinsed well)
3 medium cloves garlic (crushed through a press)

Steps:

  • Saute the onion in a small skillet with 1 teaspoon of the oil until soft, 3 to 4 minutes.
  • Transfer to the blender then add the remaining oil, mayo, vinegar, mustard, salt and pepper.
  • Then add the chopped jalapeno, cilantro and garlic and blend on high speed until the sauce is smooth and creamy, about 30 seconds.

Aji Verde is a Peruvian green hot sauce. It's made up of fresh cilantro, aji amarillo, huacatay and cheese that makes it creamy and spicy. Typically served alongisde pollo a la brasa, it pairs well with roasted vegetables, chicken or bread.

1 whole lime (juiced)
2 tablespoons olive oil
1/2 cup good-quality mayonnaise ((such as Hellmann's) )
3 ounces queso fresco or blanco
2 serrano peppers (ends trimmed )
1 bunch cilantro (with the leaves removed and stems discarded*)
4 garlic cloves (peeled )
2 green onions ( ends trimmed and roughly chopped)
2 teaspoons huacatay paste ((optional))
1 tablespoon aji amarillo paste ((optional))
1/4 teaspoon kosher salt

Steps:

  • To a blender, add the lime juice, olive oil, cheese, mayonnaise, serrano peppers, cilantro leaves, garlic cloves, green onions, huacatay paste, aji amarillo and salt. Blend for about 1 to 2 minutes, until very smooth. At first the cilantro leaves won't be totally smooth, but keep the blender running and it will eventually become cohesive and smooth.
  • Give it a taste and adjust the salt according to your liking. Keeps in the fridge for up to a week.

OMG I think Ive got the recipe for the Delicious green sauce that comes as a condiment at the California restaurant Pollo Inka. Can be placed on top of any protien or just on rice. Be careful its addictive.

7 lettuce leaves
2 serrano chiles (start with 2 add for spicier, i use 3)
3 Tbsp mayo
1/2 lime or lemon
1/2 handful of cilantro
1/8 tsp salt
1 Tbsp bread crumbs

Steps:

  • 1. In a blender or food processor mix the lettuce leaves, serrano chilies, mayo, lime, cilantro and salt.
  • 2. Adjust ingredients to taste or amount your gonna make.
  • 3. Use breadcrumbs as a thickener. If sauce is too runny then start with a tablespoon and add as needed. Want to be a consistency a little looser than hummus.
  • 4. Enjoy as a dipping sauce for veggies, over rice, protein, or drink from the bottle!!!
