1 tablespoon canola oil
2 garlic cloves, minced
1/2 cup chili sauce
3 tablespoons brown sugar
2 teaspoons salt-free seasoning blend, divided
3/4 teaspoon cayenne pepper, divided
2 teaspoons ground mustard
2 teaspoons chili powder
8 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add chili sauce, brown sugar, 1 teaspoon seasoning blend and 1/4 teaspoon cayenne. Bring to a boil; cook and stir for 1 minute. Remove from heat., In a small bowl, mix mustard, chili powder and remaining seasoning blend and cayenne; rub over chicken. Lightly coat grill rack with cooking oil., Grill chicken, covered, over medium heat for 4 minutes. Turn; grill 4-6 minutes longer or until a thermometer reads 165°, brushing tops occasionally with chili sauce mixture.

¾ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon paprika
¼ teaspoon garlic powder
⅛ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon dried parsley
4 boneless, skinless chicken breast halves
2 tablespoons butter
1 tablespoon olive oil
2 teaspoons garlic powder
3 tablespoons lime juice

Steps:

  • In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
  • Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes more, stirring frequently to coat evenly with sauce.

1 bunch cilantro
1 head garlic, cloves peeled (yes, the entire head of garlic!)
2 tablespoons coarse black pepper
1 teaspoon curry powder (I prefer hot)
1/2 teaspoon crushed red pepper flakes or 1/2 teaspoon chipotle pepper
1/4 cup peanut oil
1/3 cup soy sauce
1 lime, juice of
12 -20 chicken legs (wings and thighs work also)

Steps:

  • Process marinade ingredients in food processor until it forms a coarse paste.
  • Marinate chicken at least 4 hours, or preferably overnight.
  • Barbeque chicken slowly over low heat until done as you like (about 1 hour for myself). You can baste periodically with remaining marinade if you like. Smoking with mesquite chips adds a variation.

2 tablespoons vegetable oil
¼ cup onion, finely chopped
1 clove garlic, minced
¾ cup ketchup
⅓ cup vinegar
1 tablespoon Worcestershire sauce
2 teaspoons brown sugar
1 teaspoon dry mustard
½ teaspoon salt
¼ teaspoon black pepper
¼ (5 ounce) bottle hot pepper sauce
1 (3 pound) chicken, cut into pieces

Steps:

  • Heat the oil in a skillet over medium heat and cook the onion and garlic until tender. Mix in ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, salt, pepper and hot sauce. Bring to a boil. Reduce heat to low and simmer 10 minutes, stirring occasionally. Remove from heat and set aside.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Place chicken on grill. Brush constantly with the sauce and cook 8 to 15 minutes on each side, depending on size of piece, until juices run clear. Discard any remaining sauce.

2 (4-pound) chickens, cut into 8 pieces, backbone removed
1 bunch scallions, minced
6 garlic cloves, peeled and finely chopped
2 cups orange juice
1/4 cup cider vinegar
2 teaspoons dried oregano
2 teaspoons kosher salt
1 teaspoon crushed red pepper flakes
Serving suggestion: Grilled Summer Vegetables and Corn, recipe follows
2 eggplants, cut into 1/2-inch slices
2 zucchini, cut into 1/2-inch slices
1 red onion, cut into 1/2-inch slices
2 plum tomatoes, cut in 1/2, lengthwise
6 ears corn, shucked
Olive oil
Salt and pepper

Steps:

  • Place the chicken pieces in 1 or 2 large re-sealable plastic bags and add the rest of the ingredients. Seal the bag and shake to mix. Refrigerate at least 1 hour or overnight.
  • Heat grill to medium heat, or until the coals are lightly covered with ash. Oil the grill.
  • Cook the chicken, skin side up, for 20 minutes. Turn the pieces and cook an additional 15 to 20 minutes, or until a meat thermometer inserted reaches 155 degrees and the chicken is fork-tender and the juices run clear when a thigh is pricked with a fork. (It should measure 180 degrees F on an instant read thermometer). Alternately, roast the chicken in a preheated 400 degree F oven for 35 to 40 minutes.
  • Serve 1 bird hot and reserve the other for Days 2 and 3.
  • Brush the vegetables with olive oil and sprinkle with salt and pepper.
  • Place everything on the grill over medium heat and cook, turning frequently, for 10 to 15 minutes, or until fork tender. Serve hot, reserving 1/3 of the vegetables for Day 2 and two ears of corn for Day 3.

1/2 lb chicken breast, chopped
1 tablespoon garlic, chopped
2 teaspoons hot chili powder
1 1/2 tablespoons tomato puree
salt
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornflour
4 tablespoons cooking oil
1 teaspoon vinegar
2 tablespoons red bell peppers or 2 tablespoons green bell peppers
1 tablespoon onion, finely chopped
1 tablespoon spring onion, finely chopped
marinade
1 egg
3/4 teaspoon salt
1 tablespoon cornflour
1 tablespoon cooking oil

Steps:

  • Marinade the chicken with all the marinade ingredients, and set aside for 30 minute.
  • Heat 4 Tbsp oil in a wok and stir fry the chicken for 10 min over a medium heat.
  • Drain and set aside.
  • In the same oil add garlic and red chilli powder.
  • Fry for 3 minutes and add tomato puree, bell pepper, onion and spring onion.
  • Stir fry for 3 minutes on high heat.
  • Add fried chicken.
  • Stir-fry and add salt, sugar and chicken stock.
  • Mix the cornflour in 1/4 cup water and add to chicken slowly, stirring continuously to thicken the sauce.
  • Finish with the vinegar.
  • Serve with fried rice or noodles.
