CHILEAN SEA BASS WITH SPICY FRUIT SALSA



Chilean Sea Bass with Spicy Fruit Salsa image

Number Of Ingredients 26

1 teaspoon chopped jalapeno or other hot pepper
1 small red onion, finely chopped
1 papaya, peeled, seeded and chopped
1 ripe mango, peeled, pitted and diced
1/2 cup fresh pineapple, peeled and chopped
1/2 lemon, juiced
1/2 lime, juiced
1 tablespoon honey
1/2 teaspoon chili powder
1 tablespoon chopped cilantro
1/4 cup olive oil or vegetable oil
Pinch salt and pepper
1/4 cup olive oil
1 tablespoon chili powder
1 tablespoon ground cumin
1/2 tablespoon curry powder
1/4 teaspoon turmeric
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon anise seed
1/2 teaspoon mustard seed, toasted in a dry saute pan for 1 minute
4 Chilean sea bass fillets, or whitefish of your choice
Salt and pepper
1/4 cup flour, for coating
Vegetable or canola oil, for saute

Steps:

  • Wearing rubber gloves, remove jalapeno seeds and membrane and discard. Prepare all the above ingredients, combine and refrigerate.
  • For the Spicy Paste: Combine the above ingredients to form a spicy paste.
  • For the Sea Bass: Preheat oven to 375 degrees. Season fish with salt and pepper and coat with flour. Brush a heavy coating of the spice paste on the skin of the fish. Add 2 tablespoons of oil to a very hot oven-safe skillet and sear the fish skin side down. When the skin is crispy, place the fish in the oven for approximately 10 to 12 minutes until done. Serve with spicy fruit salsa.

SPICY TROPICAL FRUIT SALSA

Other combinations of fruits will also taste great in this colorful salsa. Try adding diced melon, such as cantaloupe, honeydew, or musk. Diced mango is delicious also, or, for a truly tropical and exotic salsa, add sliced star fruit (also known as carambola). 1/2 cup diced fresh papaya
1/2 cup sliced banana
1/2 cup diced pineapple
1/4 cup diced kiwi fruit
1/4 cup green bell peppers or 1/4 cup yellow bell pepper, diced
1/4 cup diced red onion (purple)
1 habanero pepper, deseeded and destemmed, minced
2 tablespoons orange juice
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
2 tablespoons pomegranate arils (juice sacs)
2 tablespoons minced fresh cilantro

Steps:

  • Combine fruits in a large bowl.
  • In a small bowl, mix together the orange and lime juices and oil. Drizzle over the fruits and toss gently to mix well.
  • Allow to sit for 2 hours. Just before serving, add the pomegranate arils and toss well. Garnish with the cilantro.

This is for the contest and I am using ingredients that I would have never thought of using in a salsa. The salsa is not cooked and easy to prepare; therefore, the ingredients have a nice tasty crunch to them.

1 tablespoon brown sugar
1 tablespoon honey
2 teaspoons balsamic vinegar
2 cups rhubarb, coarsely chopped
1 cup frozen tart cherries, drained,coarsely chopped
1 cup zucchini, shredded,drained and squeeze out excess moisture
1 (8 ounce) can crushed pineapple, drained
1 cup red onion, coarsely chopped
2 cloves garlic, minced
1 tablespoon jalapeno pepper, finely chopped
1 tablespoon of fresh mint, finely chopped
1 teaspoon orange zest
1 package pita bread
4 -5 tablespoons butter, room temperature
1/2 cup sugar
1 teaspoon cinnamon
1 pinch cayenne pepper, optional

Steps:

  • In a large bowl combine brown sugar, honey and balsamic vinegar.
  • Add next 9 ingredients and combine well.
  • Transfer to serving dish and garnish with slice of orange and sprig of mint.
  • Serve with Sugar/Cinnamon Chips.
  • Combine sugar, cinnamon and (cayenne, if using) in a small bowl.
  • Split each pita bread into two halves.
  • Score with sharp knife, but don't cut completely through.
  • Spread each half lightly with butter.
  • Sprinkle each half with cinnamon/sugar mixture.
  • Place on cookie sheet and bake at 350 degree oven for 7-10 minutes or until lightly brown.
  • Cool and break into pieces.
  • Serve with Salsa.

1 1/2 tablespoons chopped fresh thyme
1/2 teaspoon hot pepper sauce
1 tablespoon olive oil

1 1 3/4-pound Cornish game hen, split in half along backbone

Steps:

  • Preheat oven to 450°F. Mix first 3 ingredients in medium bowl. Transfer 3 tablespoons salsa mixture to small bowl and stir in oil and allspice. Place hen halves on rack set on baking sheet. Sprinkle with salt and pepper; brush with oil mixture. Roast until juices run clear when thigh is pierced, about 25 minutes. Transfer hen halves to plates. Spoon remaining salsa mixture on top.

  • Combine the above ingredients together to form a spicy paste.
  • Preheat oven to 375 degrees. Season fish with salt and pepper and coat with flour. Brush a heavy coating of the spice mixture on the skin of the fish. Add 2 tablespoons of the oil to a very hot oven-safe skillet and sear the fish skin side down. When the skin is crispy, place the fish in the oven for approximately 10 to 12 minutes until done.   • In a hot, 6-inch iron pan heat 2 teaspoons clarified butter till almost smoking. Layer potato slices in oil to cover pan and cook, weighted, until golden brown. Turn galette over and brown, weighted.
  • To assemble dish: Plate the galette, top with a layer of mesclun greens and then the sea bass. Sprinkle cut chives over top. Serve with spicy fruit salsa.

1 large ripe sweet mango cut into small cubes
2 large slices of fresh sweet pinapple; diced small
1/2 large purple onion diced
1/2 large red pimento sweet pepper diced
1/2 c diced fresh cilantro
1 clove garlic minced fine
2 medium jalapenos seeded and deveined, diced small
1 large serrano chile, seeded and deveined, diced small
1/2 small can goya tamarind juice or 2 tablespoons tamarind paste, can be pourchased in the latin food market.
3 Tbsp lime juice
1 Tbsp honey
1/2 tsp salt & pepper

Steps:

  • 1. Mix all of the above cut fruit, veggies and cilantro together in a big bowl,
  • 2. In a glass pour lime juice, honey, tamarind juice or paste, If using paste dissolve well with a fork in the lime juice, add the salt and pepper and pour over the fuit and veggies. mix well taste to see if you have enough salt & pepper. Serve with taco chips or as an accompaniment to a meat, seafood or poultry dish. Enjoy
