GINA'S SPICY CREAMED SPINACH

Steps:
- Bring a pot of salted water to a boil over high heat. Add the spinach and simmer for 2 minutes. Drain the spinach in a colander. Press down on the spinach with a clean kitchen towel to release all of the liquid. Remove to a cutting board and roughly chop.
- Heat a large saute pan, over medium-high heat and add the butter and olive oil. When the butter has melted, add the shallots and garlic and saute until fragrant and tender. Stir in the red pepper flakes and spinach. Sprinkle with salt and pepper, to taste. Saute briefly, then add the heavy cream, nutmeg and Parmesan. Reduce the spinach mixture until it has thickened, about 2 minutes. Transfer to a serving bowl and serve.
SPICY CREAMED SPINACH
This is no ordinary spinach dish. When friends of ours from Gilbert, Arizona made this as a side dish last Thanksgiving, it was a huge hit. Needless to say there were no leftovers.

Steps:
- 1. Chop and stem spinach, chop onions, mince garlic.
- 2. Melt butter in large skillet over medium heat. Add olive oil, stir in onions and garlic. Cook about 2 minutes or until onions are translucent.
- 3. Add spinach and stir till warmed throughout and is beginning to wilt.
- 4. Add salt, pepper, nutmeg and cream. Bring to a boil then reduce heat and simmer till liquid is reduced by half.
- 5. Add pepper jack cheese, stir till cheese is melted. Serve immediately.
