COPYCAT JOHNNY CARINO'S SPICY SHRIMP AND CHICKEN PASTA

Steps:
- Add the sliced chicken to a saute pan on medium heat and cook through. Set aside when cooked.
- Begin cooking pasta according to package directions.
- When the pasta is close to being finished, add butter to the same saute pan used to cook the chicken and melt on medium heat. Once the butter is melted, add shrimp, chicken, mushrooms, sundried tomatoes, onions, salt and pepper.
- Saute the mixture until shrimp and mushrooms are cooked. Shrimp should be pink.
- When the pasta is finished cooking, drain the excess water but don't rinse it. Set aside.
- In the empty pot used to cook the pasta, add the cream, Romano cheese, and cayenne pepper. Let the cream reduce by half while stirring frequently.
- Add the meat and veggie mixture to the sauce and stir together. Add the pasta and stir all together. Serve and enjoy!
SPICY SHRIMP AND CHICKEN PASTA (LIKE CARINO'S)
This is my FAVORITE dish at Johnny Carino's in my town and this is my rendition of the recipe. My husband says it tastes exactly like theirs. I have played around with how much cayenne pepper to put in this dish because the recipe I found originally just said "to taste". For me, one teaspoon is too mild, but two teaspoons is pretty spicy. I'd put some in and do a taste test before you add more. The original recipe was in Denver's Rocky Mountain News, but I have modified it to our tastes, including leaving out the green onion and increasing the amount of the sauce. Also, the original recipe said it served 4, but we have no problem getting 6-8 servings of this. I serve it with a tossed salad and my Recipe #281657.

- Season and grill the chicken breasts until done. Cool and slice into bite sized pieces.
- Add butter to a large sauté pan on medium heat.
- Once butter is melted, add the shrimp, sliced chicken, mushrooms, sun-dried tomatoes, salt and pepper.
- Saute mixture until shrimp and mushrooms are cooked.

SPICY CHICKEN & PRAWN PASTA

- Boil the pasta in a pot until al dente.
- Whilst the pasta is boiling, heat up a little olive oil in a pan. Chop the onion and fry until slightly browned.
- Add the diced chicken and mix until browned then add the prawns. Crumble in the stock cube and mix well.
- Add the chopped pepper and garlic and stir in the chopped tomatoes. Simmer for a few minutes.
- Add a sprinkling of mixed herbs and 5 spice and a generous amount of cayenne pepper.
- Mix well and simmer for a few minutes. Add water if too thick.
- Once pasta is cooked, drain well and put a portion in each persons bowl. Spoon over the chicken and prawn sauce then serve!
CREAMY CHICKEN AND SHRIMP ALFREDO
You'll love my twist on this creamy Alfredo. It's a little heavy on the hips, but worth every bite. A perfect match with a nice green salad, and you must have garlic bread to sop up this creamy sauce.

- Bring a large pot of lightly salted water to a boil; add 2 tablespoons olive oil. Add trottole and cook at a boil until tender yet firm to the bite, about 8 minutes; drain.
- Heat remaining olive oil in a large skillet and add garlic, basil, red pepper flakes, and black pepper. Add chicken; cook and stir until browned, about 10 minutes.
- Melt butter over medium heat in the large pot used to make the pasta. Add cream cheese and stir until creamy, about 1 minute. Add 2 cups milk and heavy cream, stirring until warm, about 5 minutes. Add Parmigiano-Reggiano cheese and continue stirring. Add more milk to thin sauce, if needed. Add pesto and sun-dried tomatoes.
- Stir cooked chicken and pasta into the sauce. Add shrimp; cook and stir until shrimp turns orange, 6 to 8 minutes more.
