NADIYA HUSSAIN'S GINGER RICE WITH SPICED CHICKPEAS

A spiced winter warmer to banish a cold, Nadiya Hussain's Ginger Rice with Chickpeas, from her series, Nadiya's Family Favourites, is comfort food heaven.

Steps:

  • Put a medium non-stick saucepan on a medium heat and add the rice, water, salt and grated ginger. Allow the mixture to come to the boil, being careful because if you leave it, it can boil over. (If you must walk away, turn the heat down.) Once the rice has boiled for about 10-12 minutes, check to see if it's ready. You can tell by pressing a grain. If it's ready, it should fall apart. Once the rice is cooked, it's time for the most important bit. Stir the rice continuously with a whisk to encourage it to break up and form a wet porridge-like consistency. Keep mixing until the mixture really begins to thicken. This can take 20-30 minutes, so you'll need to be patient. Once the rice has thickened, lower the heat and add the butter. Whisk the butter in until it has melted. Take off the heat, pop a lid on the pan to keep the rice warm, and get on to the spicy chickpeas. Put a large non-stick frying pan on a medium to high heat and add the oil. Once the oil is hot, add the onion, salt, tomato pur.e and chopped tomato, stir, then cook for about 3 minutes, until the onion has just softened. Now add the chilli, turmeric, cumin and curry powder. If the mixture begins to stick, add a splash of water. Keep cooking on a medium to low heat for 5 minutes, to cook the spices. Add the chickpeas and stir so they are covered in the spices. Lower the heat, add the juice of the lemon, then finely slice the rind and add to the chickpeas. Stir, then pop a lid on the pan and leave to cook for about 10 minutes on a really low heat. Remove the lid, take the pan off the heat, and stir in the coriander. Serve the ginger rice in bowls - it's best when it's piping hot, so just warm it through in the pan if necessary. Spoon a load of those spicy chickpeas right in the centre.

1/2 teaspoon dried marjoram

  • Saute the onion and garlic in olive oil in a large skillet over medium-high heat, stirring constantly, until tender.
  • Stir in the cooked rice and the remaining ingredients. Cover the skillet, reduce the heat to low, and simmer for 15 to 20 minutes, stirring occasionally.

1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon cayenne pepper

Steps:

  • Preheat oven to 400°F (200°C).
  • Carefully dry the chickpeas. Removing the skins is optional and they will come off easily. The drier you get them, the crunchier they'll be!
  • In a medium bowl, add dried chickpeas, olive oil, cumin, chili powder, cayenne pepper and salt. Toss well to coat evenly.
  • Spread chickpeas out on a parchment paper-lined baking sheet.
  • Roast for 15-20 minutes.
  • Mix around on baking sheet and roast for additional 15-20 minutes, or until browned.
  • Cool for 5-10 minutes.

1 tablespoon olive oil
1 clove garlic, minced
1 cup uncooked basmati rice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cayenne pepper
1 quart chicken stock
1 ½ pounds ground turkey
2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1 bunch chopped fresh cilantro
1 bunch chopped fresh parsley
¼ cup pine nuts
salt and ground black pepper to taste

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in garlic, and cook 1 minute. Stir in rice, cumin, coriander, turmeric, and cayenne pepper. Cook and stir 5 minutes, then pour in chicken stock. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Place the turkey in a skillet over medium heat, and cook until evenly brown.
  • Gently mix cooked turkey, garbanzo beans, black beans, cilantro, parsley, and pine nuts into the cooked rice. Season with salt and pepper.

RICE WITH CHICK PEAS



Rice with Chick Peas image

1/2 pound dried chick peas, picked over and soaked for 3 hours or overnight
2 quarts water
1 bay leaf
2ounce piece salt pork, rind removed
1 large onion, finely chopped
5 cloves garlic, finely chopped
1 yellow bell pepper, stemmed, seeded, and finely chopped
3 ounces smoked slab bacon, rind removed and cut into 1/4inch dice
1 1/2 cups long grain white rice
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup dry sherry

Steps:

  • Drain the soaked chick peas and, in a large pot, combine them with the water and the bay leaf. Bring up to a boil, reduce the heat and simmer covered for about 2 1/2 hours, or until tender. Drain, reserving the cooking water, and discard the bay leaf. There should be 3 cups of liquid, if necessary, add some water to make up the amount.
  • Heat a large ovenproof casserole over low heat and cook the salt pork, turning it over occasionally, for 4 to 5 minutes. Increase the heat to medium and add the onion. Cook for 4 minutes, stirring occasionally. Add the yellow pepper, garlic, and bacon and cook for about 8 minutes more, until all the vegetables are softened. Tip the pan to the side and spoon off all but about 2 tablespoons of the fat. Add the rice and stir for about 3 minutes, until it is well coated with the fat and just beginning to brown. Add the salt, pepper, sherry, the reserved 3 cups cooking liquid, and the chick peas.
  • Cook partially covered over medium high heat without stirring until most of the liquid has been absorbed and small craters appear in the top of the rice, 20 to 25 minutes. Reduce the heat to low, stir the rice with a fork, and cover tightly. Cook for about 10 minutes more, until the rice is tender. Remove the salt pork and serve.

ONE PAN SPICY RICE

This simple rice dish is a useful backup - it needs practically no preparation and uses storecupboard ingredients

1 tbsp sunflower oil
2 garlic cloves , crushed
2 tbsp medium curry paste (Madras is a good one to use)
250g basmati rice , rinsed
450ml vegetable stock
400g can chickpeas , drained and rinsed
handful of raisins
175g frozen leaf spinach , thawed
handful of cashew nuts
natural yogurt to serve, optional

Steps:

  • Heat the oil in a large nonstick pan that has a lid, then fry the garlic and curry paste over a medium heat for 1 minute, until it smells toasty.
  • Tip the rice into the pan with the stock, chickpeas and raisins and stir with a fork to stop the rice from clumping. Season with salt and pepper, then cover and bring to the boil. Reduce to a medium heat and cook for 12-15 minutes or until all the liquid has been absorbed and the rice is tender.
  • Squeeze the excess water from the spinach with your hands. Tip it into the pan along with 2 tbsp of hot water and fluff up the rice with a fork, making sure the spinach is mixed in well. Toss in the cashews. Serve drizzled with natural yogurt if you like.

This is a recipe that I got from a vegetarian cookbook and made a few modifications to. We have fallen for this dish and now make it a few times a month. My two year old also loves it. We tried it out on some non-vegetarians and they all loved it.

1 (15 ounce) can chickpeas
2 tablespoons butter
2 tablespoons olive oil
1/3 cup parsley
2 tablespoons sun-dried tomatoes packed in oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon pepper
1/3 cup parmesan cheese
1 teaspoon dried thyme
1 bay leaf
1 cup basmati rice (uncooked)
2 cups water

Steps:

  • Cook water, rice, thyme, and bay leaf and set aside.
  • Heat olive oil and half of the butter in a skillet and then add chickpeas.
  • When chickpeas start to lightly brown (about 5 mins) add parsley and the sun-dried tomatoes and cook for an additional 5 minutes.
  • Add oregano, basil, salt, and pepper and cook for an additional 1-2 minutes.
  • Remove from heat and mix rice and chickpeas together until rice is a golden color.
  • Mix in remaining butter (cubed) and Parmesan cheese.

Meatballs are the ultimate comfort food, and these are especially nice, perfumed with cumin, coriander and cinnamon. (Feel free to use ground beef, pork or turkey if ground lamb isn't available.) They may be prepared several hours or up to 2 days in advance - they reheat beautifully. Make the tomato gravy as piquant as you like, adding a good pinch of cayenne if you wish. The optional saffron adds a floral note. If you have the time, cook your chickpeas from scratch (it's best to soak them for at least a few hours or overnight). They'll cook in less than an hour. One pound dried chickpeas will yield about 6 cups cooked.

Steps:

  • Heat oven to 350 degrees. Make the meatballs: In a large bowl, combine ground lamb, raw rice, salt, cumin, coriander, cinnamon, onion and garlic. Knead mixture well.
  • Coat a sheet pan or roasting pan lightly with olive oil. With wet hands, form mixture into 1-ounce meatballs and arrange in one layer on pan. Bake, uncovered, for about 15 minutes, until lightly browned. Remove and let cool slightly.
  • Meanwhile, make the gravy: Place a wide heavy-bottomed pot or Dutch oven over medium heat. Add 2 tablespoons olive oil. When oil is hot, add onion, sprinkle lightly with salt and cook, stirring until softened and just beginning to brown, about 10 minutes.
  • Add saffron with soaking water, cumin, red-pepper flakes and cinnamon stick. Crush tomatoes with your hands, and add to pot, along with all tomato juices. Raise heat to medium-high, add broth and bring to a simmer. Taste and add more salt or red-pepper flakes as needed. Carefully add meatballs and adjust heat to a gentle simmer. Cover and cook for 30 minutes.
  • Warm 2 tablespoons olive oil in a wide skillet over medium-high heat. Add chickpeas and a splash of water and heat through. Season to taste with salt. Sprinkle with chopped parsley or cilantro. Serve each diner 5 or 6 meatballs and plenty of gravy. Add a large spoonful of chickpeas on the side.

1 1/2 teaspoons ground cinnamon

Steps:

  • Heat large skillet and swirl in the oil. Add the chopped onion, garlic, and ginger. Saute until soft and lightly golden, 5 to 6 minutes.
  • In a small bowl, combine the cinnamon, garam masala, cumin, coriander, cloves, cayenne, and salt. Add to the onion mixture; cook and stir in the spices to lightly toast, 1 to 2 minutes. Stir in the tomato paste and cook for another few minutes to combine. The color should be dark red.
  • Add the chickpeas plus the cup of reserved liquid. Stir to combine. Cover and cook over medium heat for 10 minutes, removing the cover in the last few minutes. Remove from the heat and let sit for a minute to allow the beans to soak up the spice flavors. Season with salt to taste.
  • Serve in a shallow bowl garnished with the sliced onion, tomato wedges, and slices of green chiles.

  • Defrost your spinach and rinse the rice.

  • While the rice is cooking heat a wok or large pan and fry the chickpeas in the oil (be careful, chickpeas from a jar tend to explode when fried--never deep fry them!).
  • Add the spices and fry some more.
  • Add the soy sauce and stir, before it all evaporates, to coat the chickpeas.
  • Serve with rice (add some butter to rice).
