1 egg, lightly beaten
1 tablespoon water
½ cup all-purpose flour
½ teaspoon salt
½ teaspoon dried Italian seasoning
¾ cup panko bread crumbs
6 mozzarella cheese sticks, cut in half, crosswise
cooking spray
¾ cup marinara sauce
¼ teaspoon crushed red pepper

Steps:

  • Whisk egg and water together in a shallow dish. Stir flour, salt, and Italian seasoning together in another shallow dish. Place bread crumbs in a third shallow dish.
  • Dip cheese sticks into egg mixture, then coat with flour mixture. Dip again into egg mixture, then into bread crumbs until coated. Place on a baking sheet and freeze until firm, about 1 hour.
  • Preheat an air fryer to 360 degrees F (180 degrees C). Lightly coat the air fryer basket with cooking spray.
  • Place frozen cheese bites in a single layer in the air fryer, working in batches if necessary, being careful not to crowd.
  • Cook in the preheated air fryer until golden brown and cheese just begins to melt, 4 to 6 minutes. Repeat with remaining bites.
  • Meanwhile, stir together marinara sauce and crushed red pepper.
  • Serve mozzarella bites with marinara sauce.

2 pounds rib-eye steaks, cubed into bite-size pieces
2 tablespoons salted butter, melted, plus 2 tablespoons for the sauce
1 tablespoon steak seasoning
2 teaspoons chopped fresh rosemary
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 cup heavy cream
1/4 cup crumbled blue cheese
2 tablespoons prepared horseradish
2 tablespoons chopped chives

Steps:

  • Heat a heavy-bottomed skillet over medium-high heat.
  • Toss together the steak, melted butter and steak seasoning in a bowl. Add to the skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.
  • Lower the heat to medium and add the remaining 2 tablespoons butter to the skillet. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and no longer raw. Add the cream and bring it to the boil. Reduce the heat to low and simmer, then stir in the blue cheese, horseradish, 1 tablespoon of the chives and black pepper to taste. Transfer to a serving bowl.
  • Place the steak bites on a platter with toothpicks, with the sauce on the side. Garnish the plater with the remaining chives before serving.

85g plain flour
50g butter , chopped
50g mature gruyère , grated
25g fresh parmesan (or vegetarian alternative), finely grated
2 eggs , well beaten
1l vegetable oil , for deep frying

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

Steps:

  • Brown sausage and drain excess grease. Add diced tomatoes and cream cheese. Stir until heated through and cream cheese is melted.

1 egg
1/4 cup water
1 tablespoon hot sauce
1/2 cup all-purpose flour
1/4 teaspoon chili powder
Salt and freshly ground black pepper
1 cup canola oil

Steps:

  • Form the leftover macaroni and cheese into 12 small balls.
  • In a pie plate or shallow dish, whisk together the egg, water and the hot sauce. In a second pie plate or shallow dish combine the flour, chili powder, and salt and pepper, to taste.
  • In a deep-sided skillet heat the canola oil over medium heat to 350 degrees F.

Grilled Salami-and-Cheese Bites with Spicy Honey image

The combo of sweet and hot is something that makes my taste buds bounce! These soppressata packets stuffed with creamy robiola cheese are so simple, yet the most satisfying combination of sweet, spicy, fatty and salty - the perfect bite.

1 pound soppressata salami (at least 3 inches in diameter), thinly sliced (see Cook's Note)
Two 100-gram packets robiola cheese, such as Nonno Nanni
1/4 cup honey
1 teaspoon crushed red pepper flakes
Kosher salt

Steps:

  • Preheat a grill pan over high heat.
  • Lay out slices of soppressata on a work surface. Top each slice with 1 teaspoon of robiola cheese. Fold the bottom of each slice over the cheese, then fold the sides over and fold again to cover the cheese completely. Continue until all the slices are filled.
  • Place half of the soppressata pockets seam-side down on the hot grill pan until charred and you can hear and maybe see some cheese sizzling out, about 1 minute. Flip and cook until charred and you can see the packets deflating as the cheese melts, about 30 seconds. Transfer to a serving dish. Repeat with the remaining soppressata pockets.
  • Meanwhile, cook the honey in a small skillet over medium heat until bubbling, 2 to 3 minutes. Add the pepper flakes and cook for 30 seconds. Season with salt to taste and remove from the heat.
  • Drizzle the soppressata pockets with the spicy honey and serve.
