A quick and easy Cajun dip recipe made with roasted red bell pepper, fresh garlic, creamy yogurt and sour cream, and a spicy seasoning blend, perfect for parties when you need big flavor fast.

1 red bell pepper
¾ cup plain yogurt
¼ cup Mexican crema or sour cream
2 cloves garlic (minced)
2 tablespoons chopped green onion
1 tablespoon Cajun seasonings
Bag of your favorite Doritos for serving

Steps:

  • Set your oven to BROIL. Slice the red bell pepper in half down the middle and place them skin sides up on a large baking sheet.
  • Set them into the oven beneath the broiler, about half way down in the oven, not too close to the heating element.
  • Roast about 15 minutes, or untilthe skins blacken and bubble up. Remove, cool enough to handle, and peel away the skins.
  • Add the roasted red pepper, yogurt, crema or sour cream, garlic, green onion and Cajun seasoning to a food processor blender. Process until smooth.
  • Serve in a bowl with Doritos!

3/4 cup plain low-fat yogurt
1/2 cup reduced-fat sour cream
3 medium green onions, chopped (3 tablespoons)
1 1/2 teaspoons Cajun seasoning
2 cloves garlic, finely chopped
1 medium red bell pepper, cut into 20 strips
1/2 lb fresh sugar snap pea pods, strings removed
20 cooked deveined peeled large (21 to 30 count) shrimp, thawed if frozen

Steps:

  • In small bowl, mix dip ingredients with wire whisk until smooth. Cover; refrigerate at least 15 minutes to blend flavors.
  • Serve dip with bell pepper, pea pods and shrimp.

1/2 cup dry-packed sun-dried tomato
1 (8 ounce) package reduced-fat cream cheese
1/2 cup nonfat plain yogurt
1/4 cup chili sauce
1/4 cup chopped green pepper
1/4 cup chopped green onion
1 garlic clove, minced
1/2 teaspoon celery seed
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In small bowl, pour 1 cup boiling water over tomatoes.
  • let stand at room temperature 5-10 minutes.
  • Drain and chop tomatoes.
  • meanwhile, in another small bowl, combine cream cheese, yogurt and chili sauce.
  • mix well.
  • Add tomatoes and all remaining ingredients; mix well.
  • refrigerate till serving time.
  • Just before serving; stir dip.
  • serve with cut up fresh veggies or garlic flavored bagel crisps.
