2 bay leaves
1 teaspoon black peppercorns
1 pound (16/20) shrimp, head-on if possible, thawed if frozen, peeled and deveined with tails on
Lemon wedges, for garnish
1/2 cup ketchup
2 tablespoons prepared horseradish
1 tablespoon lemon juice
1 teaspoon Thai sweet chile sauce
1/2 teaspoon Worcestershire sauce
Dash of hot sauce, such as Tabasco

Steps:

  • For the shrimp: In a large saucepan of water, add the bay leaves and black peppercorns. Bring to a boil. Line a sheet pan with paper towels.
  • For the sauce: In a medium bowl, combine the ketchup, horseradish, lemon juice, chile sauce, Worcestershire sauce and hot sauce.
  • Add the shrimp to the water and cook at a very low simmer, stirring, until the centers are fully cooked and no longer translucent, about 3 minutes. Transfer the shrimp to the lined sheet pan. Chill for an hour before serving.
  • Serve the shrimp with the cocktail sauce and lemon wedges.

4 (12 ounce) bottles beer
1 tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon salt
1 lemon, halved crosswise
1 ½ pounds fresh shrimp, with shells and tails on

Steps:

  • Combine beer, seafood seasoning, and salt in a large saucepan or stockpot over medium-high heat. Squeeze juice from both lemon halves into the beer mixture and add both rinds to the beer. Stir and bring to a boil. Cover the pot and boil for 10 minutes.
  • Add shrimp to boiling liquid, cover again with the lid, and turn off the heat. Transfer shrimp to serving bowls when they are bright pink on the outside and the meat is opaque, about 3 minutes.

1 quart water
1 pound tiger prawns with shell
3 ounces Old Bay (tm) Seasoning
1 (12 ounce) jar cocktail sauce

Steps:

  • In a large pot, bring 1 quart of water to a boil.
  • Place shrimp in a steamer basket and place on top of the pot; cover. Do not submerge shrimp. Remove some water if necessary. Season the shrimp with Old Bay seasoning.
  • Steam shrimp until pink.
  • Eat by removing shells as you go and dipping in cocktail sauce.

Here is another of our favorite ways to prepare shrimp. This is great with a caeser salad, garlic bread and cold beer. Serve it with lots of napkins! We found this keeper in The Florida Cookbook by Jeanne Voltz.

3 lbs shrimp, in the shell
3 (12 ounce) bottles beer (can be flat)
1 teaspoon dried thyme or 1 tablespoon fresh thyme, minced
1 tablespoon dry mustard
2 bay leaves
2 garlic cloves, peeled and slivered
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 tablespoons parsley, minced
3 tablespoons chives, minced
1/2 cup butter
1/4 cup lime juice
hot pepper sauce, to taste

Steps:

  • Wash and drain the shrimp.
  • In a large saute pan or Dutch oven, combine the beer, thyme, dry mustard, bay leaves, garlic, salt, freshly ground black pepper, and 1 Tablespoon each of parsley and chives.
  • Bring to a boil, add the shrimp and cook just until the shellfish turns bright pink, about 1 minute.
  • Remove the bay leaves and serve from the pot or transfer the shrimp to a large bowl.
  • Make a butter dipping sauce by melting butter in a small saucepan.
  • Into melted butter stir lime juice, 2 Tablespoons each of parsley and chives, and hot pepper sauce to taste.
  • Peel and eat shrimp to your heart's content - dipping in the butter sauce or just plain.

Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant. I'm sure I enjoyed the shrimp, but what I really loved was dipping the crackers in the spicy, horseradish-spiked cocktail sauce.

3 quarts cold water
¼ onion, sliced
½ lemon
2 cloves garlic, peeled and bruised
2 sprigs fresh tarragon
1 tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon whole black peppercorns
1 bay leaf
½ cup ketchup
¼ cup chili sauce
¼ cup prepared horseradish
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
3 drops hot sauce, or to taste
1 pinch salt
2 pounds shell-on deveined jumbo shrimp

Steps:

  • Stir water, onion, lemon, garlic, tarragon, seafood seasoning, peppercorns, and bay leaf together in a large pot; bring to a simmer and cook until flavors blend, about 15 minutes.
  • Whisk ketchup, chili sauce, horseradish, lemon juice, Worcestershire sauce, hot sauce, and salt together in a bowl; refrigerate until chilled, at least 15 minutes.
  • Bring poaching liquid to a rapid boil. Cook the shrimp in the boiling liquid until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Transfer shrimp to a bowl of ice water and immerse in ice water until cold; drain. Arrange cold shrimp on a platter and serve with chilled sauce.
