SPICY BEEF STEW WITH BEANS & PEPPERS



Spicy beef stew with beans & peppers image

Number Of Ingredients 12

3 ½ tbsp vegetable oil
1kg stewing beef , cut into chunks
1 onion , sliced
2 garlic cloves , sliced
1 tbsp plain flour
1 tbsp black treacle
1 tsp cumin
400g can chopped tomato
600ml beef stock (from a cube is fine)
2 red peppers , deseeded and sliced
400g can cannellini bean , drained and rinsed
soured cream and coriander, to serve

Steps:

  • Heat 1 tbsp of oil in a large saucepan with a lid. Season meat, then cook about one-third over a high heat for 10 mins until browned. Tip onto a plate and repeat with 2 tbsp of oil and rest of the meat.
  • Add a splash of water and scrape pan to remove bits. Add ½ tbsp oil. Turn heat down, fry onion and garlic until softened. Return meat to the pan, add flour and stir for 1 min. Add treacle, cumin, tomatoes and stock. Bring to boil, reduce heat, cover and simmer for 1 hr 45 mins. Stir occasionally and check that the meat is covered with liquid.
  • Add peppers and beans, and cook for a further 15 mins. The stew can now be cooled and kept in the fridge for 2 days, or frozen for 1 month. Serve in bowls, with sour cream, coriander and cornbread.

1 pinch garlic salt, or to taste
ground black pepper to taste
2 ½ pounds beef stew meat, cut into cubes
1 tablespoon olive oil, or more if needed
3 cups water
1 (1.5 ounce) package dry beef stew seasoning mix
2 large potatoes, cut into cubes
1 small onion, chopped
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 teaspoon hot pepper sauce (such as Frank's RedHot®)
1 cup frozen corn

Steps:

  • Mix flour, garlic salt, and black pepper together in a shallow dish.
  • Gently press beef cubes into the flour mixture to coat evenly.
  • Heat olive oil in a skillet over medium heat; cook and stir beef in batches in hot oil until browned completely, about 5 minutes per batch. Remove browned beef with a slotted spoon to a bowl until all beef is browned.
  • Stir water and beef stew seasoning mix together in a slow cooker until the seasoning is dissolved into the liquid. Add browned beef, potatoes, onion, diced tomatoes with green chile peppers, and hot pepper sauce.
  • Cook on High, 3 1/2 to 4 1/2 hours. Add frozen corn and continue cooking until the corn is hot, about 30 minutes more.

1 lb beef round steak
1/2 cup chopped onion
2 garlic cloves, smashed
1 (16 ounce) can tomatoes, cut up
1 (10 1/2 ounce) can condensed fat-free reduced-sodium beef broth
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon dried basil, crushed
4 large carrots
1 (10 ounce) package frozen chopped broccoli (or fresh)
1 tablespoon cornstarch

Steps:

  • Trim fat from meat.
  • Cut meat into 3/4 inch cubes.
  • Spray a large saucepan with veggie spray.
  • Heat saucepan, add meat, onion and garlic, cook over medium high heat 'til meat is brown and onion is tender.
  • Drain off fat.
  • Stir in undrained tomatoes, broth, chili powder, cumin, basil and 2 cups water.
  • Bring to boil, reduce heat, cover and simmer for 1 1/2 hours or'til meat is tender.
  • Cut carrots into thin match like strips.

Every now and then someone requests Ethiopian recipes. Most of the easily available recipes are the traditional stews, and there are hundreds of individual variations of these recipes with the same name. In the Kitchen Information Forum you can find a short glossary of Ethiopian food terms. The word WAT means a stew, and the basic spice mixture used in almost all stews are BERBERE. The recipes are economical, easy and tasty, and always served with INJERA (flatbread). If you type "Injera" in the search line on Food.com you will find more than a dozen recipes. Make the Berbere spice mix first. Prep time tries to include making this spice mix from scratch, although it is available from specialty and Ethiopian stores.

Steps:

  • To make the Berbere spice mix: mix all the spices and toast in a dry, hot pan, shaking to prevent scorching. Cool the mixture, then grind into a powder. The small coffee bean grinder attachment often supplied with a processor is ideal for this. Save the leftover spice in a small glass bottle with a tight-fitting lid.
  • * Berbere can be either a dry or a wet paste, and can be bought ready-made from Ethiopian or speciality food shops.
  • To make the stew: Add the oil and ghee or butter to a pan over medium heat. (Niter kibbeh, the real thing, is a spice-infused clarified butter which is used as the frying medium for most Ethiopian dishes).
  • Gently fry the onion until very soft and just about caramelised. Add the garlic, berbere spice, tomato paste and sugar, mix well, and cook until thick.
  • Add a little of the stock (or water) to make a paste. Add the remaining liquid and the meat cubes, season with salt, and cook gently for 1 hour, or until the meat is tender and the sauce thickened and reduced.
  • Serve with injera, the Ethiopian flatbread. If correctly made and almost crispy, pieces can be used as eating utensils.

Spicy Beef Stew with Moroccan Spice Rub image

The flavor for this recipe comes mainly from the spice rub I put on the meat at the start. The spices and their aromas just get locked into the beef and release during the stewing so each bite is really well flavored. I used a spice mix commonly used in Middle Eastern and Moroccan cooking called ras el hanout. The sauce is tart from the tomatoes and sweet from the pumpkin, carrots, and parsnips and has a heady aroma from the spices. Ladle into your favorite soup bowl and slurp away. This is hearty enough on its own so I usually don't serve any bread with it.

1 pound beef stew meat, cut into 2-inch pieces
1 tablespoon ras el hanout, or more to taste
2 tablespoons olive oil
1 leek, halved lengthwise and thinly sliced crosswise
1 small onion, cut in half and thinly sliced
2 cloves garlic, minced
1 tomato, diced
1 cup diced pumpkin
2 tablespoons tomato paste, or more to taste
1 cup rose wine
2 cups beef stock
2 sprigs fresh rosemary
1 sprig fresh mint
1 bay leaf

1 parsnip, halved lengthwise and thickly sliced

Steps:

  • Place beef in a large bowl. Add ras el hanout and rub until beef is completely coated. Let sit for 15 minutes.
  • Heat oil in a stew pot over high heat until shimmering. Add meat, making sure it's not overcrowded, and sear to seal in the juices, stirring occasionally, until browned on all sides, about 5 minutes. Transfer meat to a plate.
  • Reduce heat to medium and add leek and onion to the pot. Saute until leeks turn golden and translucent, 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and saute until they begin to soften, 2 to 3 minutes. Add cooked meat back to the pot, along with diced pumpkin and tomato paste. Cook and stir for 2 minutes.

1 stalk lemongrass
3 tablespoons fish sauce (patis)
2 ½ tablespoons grated ginger
2 tablespoons unsweetened applesauce
1 ½ teaspoons curry powder
1 teaspoon Chinese five-spice powder

2 ½ pounds beef brisket, cut into 1 1/2-inch chunks
3 tablespoons ghee (clarified butter)
1 onion, finely chopped
2 (14.5 ounce) cans diced tomatoes, drained and crushed with your hands
kosher salt to taste

1 pound carrots, peeled and chopped into 1-inch pieces
¼ cup chopped fresh cilantro

Steps:

  • Trim ends off lemongrass and cut into 3-inch pieces. Pound gently with a heavy object until bruised.
  • Mix lemongrass stalk, fish sauce, ginger, applesauce, curry powder, five-spice powder, and bay leaf in a large bowl. Add beef; mix until coated. Let marinate in the refrigerator, about 30 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).

  • Mix the wine, beef broth, tomato paste water, paprika, cayenne pepper salt, pepper and allspice together in a large bowl. Stir in the uncooked beef chunks. Cover and let marinate in the refrigerator overnight.
  • Put potatoes, onion, garlic, baby carrots and jalepeno into the crock pot.
  • Pour beef mixture over the vegetables and stir well with a wooden spoon.
  • Set on low heat. Let cook for at least 8 hours. The meat should be tender and falling apart.
  • Stir in frozen peas approximately 30 minutes before you plan on serving the stew.
  • Serve over yellow rice.

2 pounds lean beef cut in 1 ½ inch cubes
2 tablespoons fat
1 teaspoon sugar
4 tablespoons flour
2 teaspoons salt
¼ teaspoon black pepper or red pepper flakes
2 teaspoons Chili Powder (essential for this stew)
1 bay leaf
2 teaspoons "Fuller's Fine Herbs Beaujolais Blend" or oregano
4 cloves (whole cloves the spice)
2 tomatoes chopped or one 15 ounce can diced tomatoes
1 raw red pepper, coarsely chopped
2 cups meat stock
2 cups boiling water
6 small red potatoes cut in half
6 small carrots, sliced 1 inch thick
6 small onions or two whole onions quartered & peeled
3-4 stalks celery, sliced
1 cup of fresh peas (can also use green beans)

Steps:

  • Heat a large, heavy skillet with the oil. Brown the meat over medium high heat turning as needed; sprinkle with sugar and continue to brown. Then dust lightly with flour and continue to brown. Add the tomatoes, red pepper, herbs, bay leaf, cloves, beef stock and boiling water. Cover and simmer over low heat about 1 ½ hours or until meat is tender. Add the vegetables except the peas or beans and combine. Continue to cook 30 minutes longer. Add peas; cook 5 minutes longer. Serve with French bread or homemade buttermilk biscuits.

1 ½ pounds cubed beef stew meat
salt and ground black pepper to taste
20 small baby red potatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
3 large carrots, cut into 1-inch pieces
3 large stalks celery, cut into 1-inch pieces
½ medium onion, roughly chopped
1 (1.5 ounce) package dry beef stew seasoning mix
1 tablespoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
2 bay leaves
1 (16 ounce) carton chicken broth, or as needed

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and stew beef; season with salt and pepper. Saute, stirring occasionally, until all beef is browned on all sides, 5 to 7 minutes. Hit Cancel.
  • Add potatoes, fire-roasted tomatoes, carrots, celery, onion, seasoning mix, beef base, Worcestershire sauce, garlic, and bay leaves. Pour in enough chicken broth to cover all ingredients without going over the 2/3-fill line. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 10 minutes. Then release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

1/4 cup butter
1 tablespoon minced fresh ginger
1 tablespoon each ground paprika and cayenne (see notes)

1/2 teaspoon each ground turmeric, cinnamon, and cardamom
1/4 teaspoon each ground cloves and allspice

2 1/2 pounds boned beef chuck, fat trimmed, cut into 3/4-inch chunks

  • 1. In a food processor, pulse onions until very finely diced (almost puréed). 2. Melt butter in 4- to 5-quart pan over medium-high heat. Add onions and stir until browned, about 10 minutes. 3. KEY WAT (ETHIOPIAN SPICY BEEF STEW)

The word WAT means a stew, and the basic spice mixture used in almost all stews are BERBERE. The recipes are economical, easy and tasty, and always served with INJERA (flatbread). Any flat bread will do. Injera is used in Ethiopia to eat the meal. They pinch the food and then scoop it up and eat.

1 1/2 lb beef, cut into 1 inch cubes
3 Tbsp canola oil
2 Tbsp ghee, niter kibbeh or butter
1 small onion, finely chopped
2 clove garlic, finely chopped
2 tsp berbere seasoning, i posted this
2 Tbsp tomato paste
1/2 tsp sugar
2 c beef stock
2 tsp kosher or sea salt

Steps:

  • 1. Add the oil and ghee or butter to a pan over medium heat. (Niter kibbeh, the real thing, is a spice-infused clarified butter which is used as the frying medium for most Ethiopian dishes).
  • 2. Gently fry the onion until very soft and just about caramelised. Add the garlic, berbere spice, tomato paste and sugar, mix well, and cook until thick.
  • 3. Add a little of the stock (or water) to make a paste. Add the remaining liquid and the meat cubes, season with salt, and cook gently for 1 hour, or until the meat is tender and the sauce thickened and reduced.
  • 4. Serve with injera, the Ethiopian flatbread. If correctly made and almost crispy, pieces can be used as eating utensils.

1 cup dried pinto beans, rinsed and picked over
2 3/4 pounds stew meat, well trimmed and cut into 1 1/2" pieces
1 teaspoon salt and pepper
3 tablespoon flour
6 tablespoon olive oil
2 onion cut into 1/2" pieces
8 garlic cloves, minced
1 jalapeno chili, minced with seeds
3 tablespoons tomato paste
1 1/2 cups zinfandel wine
2 cups beef stock
2 cups chicken stock
28 ounces italian plum tomatoes, drained
1 smoked ham hock
1/2 teaspoon dried red pepper flakes
11 ounces linguica sausage-I use hillshire farms
2 bell pepper, cut into 1" pieces
2 poblano chilies
3 zicchini
1/4 cup minced fresh cilantro
makes 1/4 cups Santa Fe Seasoning
1 tablespoon ground cumin
1/2 teaspoon ground cumin
2 1/2 teaspoons ground coriander
2 1/2 teaspoons chili powder
2 teaspoons dried oregano, crumbled
2 teaspoons dried thyme, crumbled
1/4 teaspoon ground cloves, generous
1/4 teaspoon allspice
1/4 teaspoon cinnamon

Steps:

  • mix together all spices for Santa Fe Seasoning. Makes 1/4 cup and can be prepared 1 month ahead.
  • Place beans in heavy medium saucepan with enough cold water to cover. Bring to a boil. Remove from heat. Cover and let stand 1 hour. Drain beans.
  • Place beef in large bowl. Season with salt and pepper. Sprinkle 2 teaspoons Santa Fe Seasoning over; toss well. Add flour and toss to coat.
  • Heat 4 Tablespoons oil in a heavy 4 quart pan over medium-high heat. Add meat in batches and brown well. Transfer to bowl using slotted spoon. Add remaining 2 T oil. Reduce heat to medium,m. Add onions and all but 2 teaspoons remaining seasoning mix and toss to coat. Add garlic, jalapeño and tomato paste and stir 1 minute. Add wine and bring to boil, scraping up browned bits. Add both stocks, tomatoes, ham hock and red pepper flakes and bring to simmer. Return meat to pan. Reduce heat, cover partially and simmer 30 minutes stirring occasionally. Add beans, cover partially and simmer 1 hour. Uncover, add reserved 2 teaspoons seasoning mix and simmer until meat and beans are tender, stirring occasionally, about 45 minutes.
  • Degrease stew if necessary. Remove ham hock, trim fat and discard. Cut ham meat into 1/2" pieces. Mix into stew. (Stew can be prepared 1 day ahead, cover and refrigerate. Bring to simmer before continuing with recipe>)
  • Cook linguine in heavy large skillet over medium-high heat until cooked through, about 2 minutes per side.

SPICY BEEF STEW (BO KHO)

This is better the next day like most stews. It`s 2-15-2005 and I just made this it`s fall apart tender. The aromas from the star anise and cinnamon are heavenly. I didn`t find it to spicy. The spicyness depends on the curry you use. I also had a 1/2 red pepper and 1/2 celery which I dice and tossed into the pot along with the beer.

6 tablespoons olive oil
2 tablespoons annatto seeds
2 lbs top round beef, cut into large cubes
1 large onion, finely chopped
6 cloves garlic, finely chopped
1 tablespoon salt
2 tablespoons brown sugar
1 tablespoon curry powder
1 cup beer (optional)
1 stalk lemongrass, finely chopped
2 pieces star anise
1 cinnamon stick
1 cup thickly chopped carrot
1 cup mint leaves or 1 cup basil leaves
2 red chilies, sliced
salt
pepper
lime

Steps:

  • Heat half of the oil with annatto seeds and stir quickly until the oil takes on the redish-brown color of the seeds.
  • Set aside, strain and remove the seeds.
  • Marinate the beef cubes with onion, half the garlic, salt, sugar and half of the annatto seed oil mixture for 45 minutes.
  • Heat the remaining annatto seed oil and cook the remaining garlic until soft.
  • Add curry powder, beer and marinade and it`s ingredients.
  • Braise the beef, adding a little water, lemongrass, star anise and cinnamon.
  • Cook at 350 degree in oven for 1 hour then and add carrots.
  • Cook for 1 more hour.
  • Simmer 5 more minutes.
  • Garnish and serve over white rice is how I served it. The juices got absorbed into the rice.
