1/2 cup chopped fresh cilantro leaves, divided
1/4 cup freshly squeezed lime juice, divided
3 tablespoons olive oil, divided
1 tablespoon lime zest
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 pounds chicken wings or drumettes

Steps:

  • In a medium bowl, combine 1/4 cup cilantro, 2 tablespoons lime juice, 2 tablespoons olive oil, lime zest, chili powder, cumin, salt and pepper. In a gallon size Ziploc bag or large bowl, combine chicken and cilantro mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. Preheat grill to medium heat. Brush chicken with remaining 1 tablespoon olive oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12 minutes. Let rest 5 minutes. In a large bowl, combine chicken, remaining 1/4 cup cilantro and remaining 2 tablespoons lime juice. Serve immediately.

Honey, Cilantro and Sriracha Baked Chicken Wings image

You can never go wrong with chicken wings because they are easy to cook, delicious and inexpensive. In this recipe, I make a sweet and spicy sauce that creates the perfect flavor explosion. Plus, these chicken wings are baked so they're easier to throw together.

2 tablespoons rice flour or cornstarch
1 1/2 teaspoons chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 pounds chickens wings, separated into drumettes and flats
2 tablespoons unsalted butter
2 tablespoons honey
2 tablespoons Sriracha or other hot sauce
1 tablespoon light or dark brown sugar
1 1/2 teaspoons fish sauce
2 cloves garlic, minced
2 tablespoons cilantro, finely chopped

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • In a wide shallow bowl, whisk together the rice flour, chili powder, garlic powder, onion powder, salt and pepper.
  • Pat the chicken dry with a paper towel. Coat each piece evenly in the spice mixture and place it on the prepared baking sheet, leaving at least an inch between each piece. Bake the chicken wings until golden brown, 40 to 45 minutes.
  • Meanwhile, combine the butter, honey, Sriracha, brown sugar, fish sauce, garlic and cilantro in a small saucepan. Bring to a simmer and cook, whisking occasionally, until the sugar dissolves, 3 to 4 minutes, then immediately remove from the heat.
  • Transfer the wings to a large bowl. Drizzle the warm butter mixture over the baked chicken wings and gently toss with tongs. Serve and enjoy!

3 limes
1/4 cup honey
3 small garlic cloves, crushed with a garlic press
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon black pepper, coarsely ground
24 medium chicken drumsticks (about 6 pounds)
lime wedge (to garnish)

Steps:

  • Preheat over to 450 degrees. From limes, grate 2 tsp peel and squeeze 1/4 cup juice.
  • In small bowl with fork, mix honey, garlic, coriander, salt, pepper, lime juice, and 1 tsp lime peel.
  • Arrange chicken on two 15 1/2" by 10 1/2" jelly roll pans. Drizzle lime mixture over chicken; toss to coat evenly. Place pans on oven racks. Bake drumsticks 30-35 minutes, rotating pans between upper and lower racks halfway through baking and occasionally brushing chicken with glaze in pan, until chicken is cooked through.
  • Transfer chicken to serving dish. Drizzle with pan juices. Garnish with lime wedges and sprinkle with remaining lime peel.
