SPICED SALT-BAKED SHRIMP



Spiced Salt-Baked Shrimp image

The chef Adam Evans of The Optimist in Atlanta likes to roast big, fresh Southern shrimp with the heads in a deep dish of rock salt studded with spices, an easy method that produces tender, delicately flavored and perfectly seasoned shrimp. Here, headless shrimp take on fragrance from cinnamon and star anise and get heat from jalapeños. The presentation is spectacular for a dinner party. Let the salt cool completely before you toss it out.

3 pounds rock salt
1/4 cup whole green cardamom pods
2 tablespoons black peppercorns
1 cinnamon stick
4 bay leaves
3 star anise
1 lemon, cut into four wedges
10 sprigs of thyme
2 jalapeño peppers, cut into thick slices
1 head of garlic, outer skin removed and smashed into several pieces
2 pounds medium or large shrimp, about 20 to 25 pieces, with shells and tails on
Cocktail sauce, tartar sauce or melted butter, for serving

Steps:

  • Heat oven to 475 degrees. In a bowl, add salt, cardamom, peppercorns, cinnamon, bay leaves, anise, two lemon wedges, the thyme, the jalapeños and the garlic and mix well.
  • In a large shallow baking dish, add half the salt mixture. Place in oven for 10 to 12 minutes.
  • Carefully remove pan from oven and set shrimp in a single layer on salt and then cover with remaining, cool salt mixture.
  • Return to oven. Bake for 8 to 10 minutes more, or until shrimp are just cooked through.
  • Serve shrimp in the salt, or remove to a platter. Garnish with remaining lemon. Serve with cocktail or tartar sauce or melted butter.

6 (5 to 7-ounce) quails
1 tablespoon sesame seeds
2 teaspoons ground cumin
2 teaspoons sea salt, plus more as needed
2 tablespoons extra-virgin olive oil
Freshly cracked black pepper
Lemon wedges

Steps:

  • Using a sharp knife, pierce each quail through the breastbone, and flatten out the bird with the palm of your hand. Score down both sides of the spine and remove the backbone.
  • Add the sesame seeds, cumin and 2 teaspoons sea salt to a small frying pan over medium heat. Toast the spiced salt mixture, stirring frequently, until the sesame seeds are fragrant, about 1 to 2 minutes.
  • Preheat a barbecue grill plate to high heat.
  • Brush each quail evenly with the olive oil and season with salt and pepper, to taste. Grill the quail, skin side down, until the outside is crisp and the interior is cooked through, about 5 minutes per side. Sprinkle each quail with a dash of the spiced salt and a squeeze of lemon juice.

1 acorn squash
1 butternut squash
2 cups ketchup chips
1 teaspoon salt
¼ cup maple syrup
¼ teaspoon chili flakes
2 tablespoons fresh chives
vegetable oil
1 cup cake flour
1 teaspoon salt
1 teaspoon baking powder
1 cup beer, chilled
1 egg

Steps:

  • Slice the acorn squash in half horizontally, then scoop out all of the seeds. Slice into ⅛-inch pieces and set aside. For the butternut squash, peel away the outer skin well and slice into similar sized slices.
  • For the ketchup chip salt, transfer the chips to a resealable plastic bag then crush them into fine pieces (use your hands, a rolling pin, or a kitchen mallet). Place the chips in a bowl, then mix in the salt. In a separate bowl, mix the maple syrup and chili flakes. Set both the chip salt and spiced maple aside.
  • In a large pot or Dutch oven bring your oil up to 350⁰F. While the oil heats, make your beer batter. In a large mixing bowl, add the cake flour, salt, and baking powder. Then pour in the cold beer, followed by the egg. Whisk well to incorporate.
  • When the oil has reached its temperature, begin coating the slices of squash in the batter, making sure to shake off any excess, before carefully placing in the oil. Deep-fry the squash for 2 to 3 minutes, being mindful not to overcrowd the pot (this will drop the temperature), then transfer to a paper towel lined sheet tray to absorb any extra oil. Season immediately with a liberal sprinkling of the ketchup chip salt. Continue frying in batches until all of the squash is cooked.
  • To serve, place the fried squash in a paper-towel lined serving basket. Sprinkle on some extra chip salt if desired, and garnish with finely sliced chives. Serve with the spiced maple syrup for dipping and enjoy!

1 tablespoon coriander seeds
1 tablespoon black peppercorns
2 teaspoons paprika
2 teaspoons red pepper flakes
1 teaspoon dill seeds
1 clove garlic, minced
4 boneless New York strip steaks (12 to 14 ounces each)
Extra-virgin olive oil, for brushing
1 pound small tomatoes

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with foil. Spread 2 tablespoons salt, the coriander seeds, peppercorns, paprika, red pepper flakes, dill seeds and minced garlic in an even layer on the baking sheet and roast until the garlic is dry, about 30 minutes; let cool. Transfer to a spice grinder and pulse several times. (The spiced salt can be made up to 1 week ahead; store in an airtight container.)
  • Remove the steaks from the refrigerator about 1 hour before grilling to bring to room temperature; sprinkle each side with 1/2 teaspoon of the prepared spiced salt, then cover with plastic wrap and set aside.
  • Preheat a grill to high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half of the burners. Wipe the salt off the steaks and pat dry; brush lightly with olive oil. Grill over direct heat until marked on the bottom, about 2 minutes, then rotate 90 degrees F and cook 2 more minutes. Flip the steaks and repeat on the other side, then transfer to the cooler side of the grill (indirect heat); cook 5 more minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 10 minutes.
  • Meanwhile, grill the tomatoes over direct heat, turning, until marked, about 5 minutes. Serve with the steaks and the remaining spiced salt.

15 small dried bay leaves
8 ounces coarse sea salt
1 nutmeg
1/4 clove
1/2 ounce white peppercorns
30 whole allspice
1/4 ounce dried marjoram
1/4 ounce dried thyme

Steps:

  • Break up the bay leaves into pieces and grind them in an electric grinder. Pour them on a sheet of white kitchen paper with the sea salt crystals and mix well.
  • Cut the nutmeg into chips with a sharp knife, mix with the cloves, peppercorns and allspice an grind to the same consistency as the salt and the bay leaves.
  • Now mix in the marjoram and thyme and grind all ingredients together to the consistency of fine sand.
  • Store in dark glass bottles and seal tightly. The salt will keep indefinitely in this way.
  • Use one teaspoon of spiced salt for 1 pound dry ingredients or 1 quart of liquid.

2 tablespoons ground Indonesian black peppercorns

1 cup self-rising flour

1 1/2 pounds red snapper, boneless fillets, cut into 2-inch pieces
Peanut oil, for frying
1/2 pound Chinese long beans, cut into 2 inch lengths
Garlic Fried Noodles, recipe follows
Basil sprigs, for garnish
12 cloves garlic, sliced
2 cups garlic chives or scallions
1/2 cup sambal tomat
3 eggs, beaten
1 pound fresh egg noodles, blanched
2 Thai bird chiles, minced
1/2 cup tomatoes, cut into 1/4-inch dice
1 pound water spinach or baby spinach, cleaned
1/2 cup opal basil, 1/8 inch ribbon, plus a few sprigs, for garnish
Salt and black pepper
Lime wedges, for garnish

Steps:

  • Heat a saute pan to very hot and add the salt. Reduce the heat and saute for 3 to 5 minutes. Turn heat off and add the peppercorns. Mix and let stand.
  • To make the batter, slowly add cold water to the flour and baking powder to achieve a batter with the consistency of runny pancake batter. Add the snapper to the batter and coat well.
  • In a wok on high heat, fill with 2 to 3-inches of oil and heat. Add the snapper and deep fry for about 5 minutes, or until fully cooked. Set aside on paper towels. Season with the Indonesian spiced salt. In the same hot oil, quickly flash fry the long beans until brown and crispy.
  • On a large oval platter, place a large mound of the noodles in the center and top with the snapper and long beans. Garnish with basil sprigs.
  • In the same wok the snapper and long beans were cooked in, drain the oil leaving 2 tablespoons. On high heat, stir-fry the garlic until lightly brown, about 2 minutes. Add the chives and sambal tomat. Add the eggs and stir quickly for 20 to 30 seconds. Add the noodles, chiles, tomatoes, water spinach, and basil and cook until the spinach wilts. Season with salt and pepper and check for flavor. Serve with lime wedges and opal basil.
