I got this outstanding recipe from the custodian at our church, who fixes these moist, fruity muffins and shares them with friends. He gave me one to try a couple years ago, and I was hooked. The tasty combination of pears and spices is irresistible. -Linda Jachimstal, Manitowoc, Wisconsin

Yield 2 dozen mini muffins or 16 regular muffins.

Number Of Ingredients 15

2 cups all-purpose flour
1/2 cup packed brown sugar
2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 large egg, room temperature
1 cup plain yogurt
1/2 cup vegetable oil
3 tablespoons molasses
1-1/2 cups finely chopped peeled pears (about 2 medium)
1/2 cup raisins
1/3 cup chopped walnuts

Steps:

  • In a large bowl, combine the first eight ingredients. In another bowl, beat the egg, yogurt, oil and molasses until smooth. Stir into dry ingredients just until moistened. Fold in pears, raisins and walnuts. , Fill greased or paper-lined miniature muffin cups two-thirds full. Bake at 400° for 10-12 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

1 cup all-purpose flour
1/3 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts, coarsely chopped
2/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon fresh ginger, grated
2 tablespoons enova brand oil
2 teaspoons vanilla extract
8 ounces plain fat-free yogurt
1 eggs or 1/4 cup liquid egg substitute
1 1/2 cups pears, peeled and finely diced
cooking spray
3 tablespoons turbinado sugar

Steps:

  • Preheat oven to 400.
  • Lightly spoon flours into dry measuring cups; level with a knife.
  • Combine flours, baking powder, baking soda, and salt in a medium bowl; stir well with a whisk.
  • Stir in chopped walnuts.
  • Make a well in center of mixture.
  • Combine brown sugar, cinnamon, ginger, oil, vanilla extract, yogurt and egg in a small bowl; add to the flour mixture, stirring just until moist.
  • Fold in diced pear.
  • Spoon batter into 15 muffin cups coated with cooking spray; sprinkle batter with turbinado sugar.
  • Bake at 400 for 20 minutes or until muffins spring back when touched lightly in center.
  • Remove from pans immediately.
  • Place on a wire rack.
  • Serve either warm or eat room temperature.

I love to bake with fruit, it provides a great way to incorporate some whole grains into your baking. These tasty breakfast bites have nice chunks of pears, and spicy notes to send you off on your day with a smile!

Number Of Ingredients 17

3 c unbleached all purpose flour
1 c whole wheat flour
1 1/2 tsp baking powder
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1 c sugar
1/2 c light brown sugar
2/3 c vegetable oil
2 c buttermilk
2 lrg eggs
2 tsp vanilla extract
1 tsp almond extract
3 lrg ripe pears, peeled and cubed, about 1/2 inch
raw sugar/turbinado sugar for sprinkling

Steps:

  • 1. Preheat oven to 350, and spray muffin cups, or you can line them.
  • 2. In a large mixing bowl combine all dry ingredients and give it a good whisk.
  • 3. In another bowl, whisk together the buttermilk, oil, eggs, vanilla, and almond extracts. Pour the wet ingredients over the dry ingredients and mix just until combined. Gently fold in pears. The less stirring the better, muffins are horrible if they're over mixed.
  • 4. I use a 1/4 measuring cup to fill my muffin cups with, and I end up with 2 dozen. Sprinkle about 1/4 tsp of raw sugar on the tops of the muffins. Bake for 25 minutes, until the tops are golden brown and spring back when you touch them.
  • 5. Once the muffins are cooled they can be stored in an airtight container for up to 2-3 days, if they last!
