The best recipe for perfect Oatmeal Raisin Cookies! These easy cookies are soft and chewy in the middle with buttery, crisp edges, filled with tender oats, sweet raisins, and white chocolate chips.

Steps:
- In stand mixer cream the butter and sugar together about 2 minutes until fluffy.
- Add eggs and vanilla and beat until combined.
- In separate bowl whisk flour, baking soda, sea salt, and cinnamon together.
- Turn mixer to low and slowly add flour mixture into butter mixture until combined.
- Slowly add in oats and mix until evenly incorporated.
- Finally add in raisins and white chips and stir until mixed in.
- Let dough chill for at least 2 hours (overnight is best).
- When ready to bake preheat oven to 350°. Line baking sheets with parchment paper.
- Using a medium cookie scoop, portion out the dough and place 2 inches apart on baking sheet.
- Bake for 9-11 minutes until golden around edges, but still soft in center. Do not over-bake!!
- Let cool on baking sheet for 3 minutes and transfer to cooling rack.

- 1. Begin by combing the raisins and water in a saucepan and bring to a boil. Reduce the heat and simmer on low for 15 minutes then remove and allow to cool completely. Once cool, pre-heat your oven to 375 degrees.
- 2. Combine the raisin mixture with the butter, sugar, eggs, oatmeal, flour and chocolate chips and salt. Mix well with a wooden spoon and/or your hands. Add the remaining ingredients until well blended and drop by tablespoons onto parchment or non stick pan, sprinkle some sea salt on cookie tops if desired. Bake for 10 - 12 minutes. Let the cookies rest on baking sheet just long enough to not fall apart 1 - 2 minutes. Remove to wire rack or brown paper bag to cool.
- 3. *Note: to use 1 1/2 eggs, use one whole egg, then crack another, beat it lightly then use 1/2 (I used a kitchen scale)

If you prefer a crispier texture, bake the cookies at 350 degrees for 16 to 20 minutes.

I tried to combine recipes to come up with a cookie that tastes like Tate's Bake Shop cookies. The published Tate's recipe on YouTube does not taste like the cookies you buy in the store in the green bag. This is the closest I've come to simulating the oatmeal raisin flavor. This is not a thick cakey cookie but a thin, crisp, lighter version.

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Mix 1 cup plus 1 tablespoon flour, baking soda, baking powder, and salt in a bowl.
- Place cold butter in a microwave-safe bowl and heat until soft, but not melted, 20 to 30 seconds. Add brown sugar and white sugar; mix with a metal whisk or spoon for 45 seconds. - Mix together flour, cinnamon, ground nutmeg, baking soda and salt. Set aside.
- Layer ingredients in order given in a 1 quart canning jar. Try and find one with a wide mouth as it will much easier to pack. Getting all the ingredients to fit will require some pressing and tapping. Please be sure to firmly pack down each layer in place before adding the flour mixture.

- 4. Shape into balls the size of walnuts. Place on a parchment-lined cookie sheet 2 inches apart.
- Bake at 350 degrees F for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking racks to finish cooling.
- Makes 3 dozen cookies.
