SPICED HONEY FRUIT SALAD WITH PECANS



Spiced Honey Fruit Salad with Pecans image

Nonstick cooking spray, for the parchment
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon cayenne
1/4 teaspoon ground ginger
1 large egg white
1 cup pecans
1 habanero pepper
1/4 cup honey
1/4 cup orange juice
1/8 teaspoon ground cinnamon
2 cups cubed cantaloupe
1 1/2 cups grapes
3 kiwis, peeled and cut into 1-inch pieces
1 apple, cut into 1-inch pieces

Steps:

  • For the spicy roasted pecans: Preheat the oven to 300 degrees F. Line a baking sheet with parchment and coat with cooking spray.
  • In a small bowl, combine the sugar, cinnamon, salt, cayenne, ginger and egg white. Whisk until foamy. Fold in the pecans until fully incorporated.
  • Transfer the pecans to the prepared baking sheet in an even layer. Bake until fragrant, about 20 minutes. Let cool.
  • For the fruit salad: Cut a slit into the habanero. Combine the honey and orange juice in a small saucepot and add the habanero and cinnamon. Heat until just simmering, about 40 seconds. Let stand for 10 minutes, then remove the habanero.
  • To serve: Toss the cantaloupe, grapes, kiwis and apples with the honey syrup, then coarsely crumble the pecans on top.

1-1/2 cups unblanched almonds
1/2 cup sugar, divided
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon canola oil
2 tablespoons honey

Steps:

  • Arrange almonds in a single layer in an ungreased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 10-15 minutes or until golden brown, stirring once., In a small bowl, combine 1/4 cup sugar, salt and cayenne; set aside. In a large skillet, heat oil over medium heat. Add roasted almonds and honey; cook and stir for 2 minutes. Sprinkle with remaining sugar; cook 1 minute longer or until sugar is dissolved. Remove from the heat; add reserved sugar mixture and toss to coat., Immediately spread onto waxed paper; cool completely. Break into pieces. Store in an airtight container.

PEAR CROSTATA WITH HONEY, BLUE CHEESE, AND ALMONDS



Pear Crostata with Honey, Blue Cheese, and Almonds image

4 pears, halved, cored, but not peeled
3 to 4 tablespoons butter
3 tablespoons honey
4 ounces good-quality blue cheese, crumbled
1/2 cup slivered almonds
1 recipe Basic Pie Pastry, chilled 30 minutes, recipe follows
1 egg, beaten with a drizzle of cold water
2 tablespoons sugar
2 cups all-purpose flour, plus more for rolling
3 tablespoons sugar
1/4 teaspoon salt
1 lemon, zested and finely grated
3/4 cup (1 1/2 sticks) cold, unsalted butter, cut into small chunks
1 egg yolk
2 tablespoons ice water, plus more if needed

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the pears, cut sides up, on a baking sheet and dot with butter. Put the baking sheet in the oven and bake 25 to 30 minutes, or until the pears are just tender. Let cool.
  • Increase the oven heat to 450 degrees F.
  • Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out to a 14-inch round, about 1/4-inch thick. It doesn't have to be perfect. Transfer the dough to the back of a lightly floured baking sheet. Slice the pears and arrange them on the dough round by overlapping the slices in a spiral fashion, leaving a 2-inch border all around. Drizzle with the honey, scatter blue cheese over the top, and sprinkle with the almonds.
  • Brush the border with the egg wash. Bring the edge of crust over onto the filling, leaving the fruit exposed in center. Gently fold and pinch the dough to seal any cracks. Brush the crust with the remaining egg wash and sprinkle with the sugar. Put the baking sheet in the oven and bake for 30 minutes or until the crust is golden brown and the fruit is tender. Slide a knife under the crostata to loosen it from the pan. Then cut into wedges and serve warm or at room temperature.
  • Combine the flour, sugar, salt, and lemon zest in a large mixing bowl. Add the butter and mix with a pastry blender or your fingers until the mixture resembles coarse crumbs. Add the egg yolk and ice water and work that in with your hands. (Or do the whole thing in a food processor, pulsing a couple of times to combine the dry ingredients, then pulsing in the butter, and then the egg.) Check the consistency of the dough by squeezing a small amount together between thumb and forefingers: You want there to be just enough moisture to bind the dough so that it holds together without being too wet or sticky. If it's still crumbly, add a little more ice water, 1 teaspoon at a time. When you get it to the right consistency, shape the dough into a disk and wrap it in plastic. Put it in the refrigerator and chill for at least 30 minutes.

Grilled Stone Fruit with Farmer's Cheese and Spiced Honey Almonds image

Nonstick cooking spray
2 cups skin-on almonds
1/4 cup clover honey
2 tablespoons sugar
1/2 teaspoon ground allspice
Pinch freshly grated nutmeg
Fine sea salt
4 to 6 ripe yet firm stone fruits, such as peaches, nectarines and plums, halved and pitted
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 cup farmer's cheese

Steps:

  • For the spiced honey almonds: Preheat the oven to 325 degrees F. Lightly spray a baking sheet with nonstick spray.
  • Spread the almonds on the prepared baking sheet, then transfer to the oven and toast lightly, 8 minutes.
  • Combine the honey, sugar, allspice, nutmeg and a pinch of salt in a small saucepan over medium heat. Bring to a simmer and cook until the sugar melts.
  • Put the toasted almonds in a small bowl and toss with half of the honey mixture until evenly coated; reserve the remaining spiced syrup. Using a heat-proof spatula (the mixture will be hot), spread the coated almonds in an even layer on the baking sheet. Set aside until hardened, 15 minutes to 1 hour--the almonds will remain slightly sticky. Once hardened, coarsely chop or use whole.
  • For the grilled stone fruit: Heat a grill pan over medium-high heat until very hot. Brush the cut sides of the fruit with a bit of oil and sprinkle with salt and pepper. Grill the fruit, cut-side down, to mark and caramelize slightly, about 2 minutes. Brush the tops with a bit more oil, sprinkle lightly with salt and pepper and then flip and grill on the reverse side just to soften slightly, 1 to 2 minutes more.
  • Transfer the grilled fruit to a platter, cut-side up. Dollop the farmer's cheese around the fruit, drizzle some of the reserved spiced syrup over everything, and scatter the almonds on top. Serve immediately.

RATATOUILLE WITH FETA, GREEN OLIVES, AND ALMONDS



Ratatouille with Feta, Green Olives, and Almonds image

1 cup whole almonds
6 tablespoons extra-virgin olive oil, plus more as needed
1 teaspoon red chili flakes
3 cloves garlic, chopped
Sea salt and freshly ground black pepper
1 pound feta cheese, crumbled
1 cup pitted green olives
1 bunch fresh basil, leaves hand-torn
1 medium onion, chopped
5 medium Japanese eggplant, chopped
3 medium zucchini, chopped
3 tomatoes, seeded and chopped
1 tablespoon capers, drained
1 (28-ounce) can whole peeled tomatoes, drained and hand crushed
1 tablespoon balsamic vinegar

Steps:

  • Put the almonds into a large skillet over medium heat. Gently toast the nuts, being careful not to let them burn, for about 3 minutes. Add 3 tablespoons olive oil, 1/2 teaspoon red chili flakes, 1 chopped garlic clove, and salt and pepper to taste. Cook for another 3 minutes and transfer to a plate to cool. Crush the almonds roughly and put them into a bowl along with the feta cheese, olives, and 1/3 of the basil leaves. Mix well to combine all the ingredients.
  • Put 3 tablespoons olive oil and the remaining 1/2 teaspoon chili flakes into the skillet over medium heat. Add the onions, remaining garlic, and 1/3 of the basil leaves and cook until the onions start to soften, about 5 minutes. Put in the eggplant and cook until it is soft, about 10 minutes, adding more olive oil if necessary. Add the zucchini, fresh tomatoes, and capers; season with salt and pepper. Continue cooking until these vegetables are soft but still whole. Add the canned tomatoes, vinegar, and remaining basil leaves. Continue to cook for another 15 minutes; remove from the heat and set aside to cool.
  • To serve, put the ratatouille into a bowl or platter and top with the feta, olive, and almond mixture.

HONEY AND ALMOND SEMIFREDDO



Honey and Almond Semifreddo image

An Italian semifreddo is a frozen mousse, lighter than ice cream and made without churning. You can vary it according to season, incorporating flavors from raspberry to pear to chestnut. We like to make it with chopped toasted almonds and Marshall's Farm wildflower honey, collected from hives in one of our vineyards. The result tastes like frozen nougat. Serve with a thin, crisp cookie.

Number Of Ingredients 6

3 large eggs, separated
1/4 cup dry sherry
3 tablespoons honey
2 tablespoons sugar
1 cup heavy cream
3/4 cup marcona almonds (see Notes, page 41), coarsely chopped

Steps:

  • Combine the egg yolks, sherry, honey, and 1 tablespoon of the sugar in the top of a double boiler or in a large stainless steel bowl. Set over the bottom of the double boiler filled with a few inches of boiling water, making sure the bottom of the bowl does not touch the boiling water. With a whisk or handheld electric beaters, whisk the mixture over medium-high heat until it is pale, thick, and frothy, about 5 minutes; the mixture should form a ribbon when you lift the whisk. Remove from the heat and chill in an ice bath.
  • In a large bowl, whisk the heavy cream to soft peaks.
  • In another bowl, whisk the egg whites to soft peaks. Add the remaining 1 tablespoon sugar gradually and whisk to stiff peaks.
  • Gently fold the whipped cream into the cooled egg yolk mixture, then fold in the beaten egg whites and 1/2 cup of the almonds. Divide the mixture among eight 8-ounce coffee cups. Tap the cups on a work surface to settle the mixture, then smooth the tops with the back of a spoon. Sprinkle with the remaining chopped almonds. Freeze until firm, about 2 hours. Take out of the freezer 5 minutes before serving to soften slightly.

2 tablespoons olive oil
6 cups whole, blanched almonds
1/3 cup honey
2 teaspoons smoked paprika
2 teaspoons cinnamon
2 teaspoons cumin
2 teaspoons cayenne
2 tablespoons salt
4 tablespoons sesame seeds

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. Heat a large sauté pan on high, and add olive oil. Add almonds to pan, toast for 1 minute stirring often, and reduce heat to low. Continue to stir until the almonds are light golden brown, 6-7 minutes. Add honey and spices, salt and sesame seeds and stir to coat evenly.
  • 3. Spread nuts out evenly on to a large sheet tray and place in the oven until honey is dry, 10-15 minutes. Allow nuts to cool before serving.
