This is sweet and spicy and crunchy. Found on David Lebovitz site. Glazing the nuts with spices and adding a touch of sweetness, makes this the perfect nibble before dinner with an aperitif. I melt the butter in a large bowl, so I can do all the mixing in that bowl, making one less thing for me to wash as well. Note that the salt is added after the nuts are stirred, so it doesn't dissolve. And be sure to use coarse salt, which has an appealing, crunchy texture and more delicate flavor than ordinary table salt.

2 cups mixed raw nuts, any combination of cashews, whole almonds, peanuts, pecan halves, and hazelnuts (untoasted)
1 tablespoon unsalted butter, melted
3 tablespoons dark brown sugar (or cassonade sugar)
1/2 teaspoon ground cinnamon
3/4 teaspoon cayenne pepper (or piment d'Espelette)
1 1/2 tablespoons maple syrup
1 1/2 teaspoons coarse salt or 1 1/2 teaspoons kosher salt
2 cups small pretzels

Steps:

  • 1. Spread the nuts on a baking sheet and roast in a 350F (180C) oven for 10 minutes, stirring once for even toasting.
  • 2. In a medium bowl, mix together the melted butter, brown sugar, cinnamon, cayenne, and maple syrup.
  • Add the salt, warm nuts, pretzels, and stir until the nuts and pretzels are completely coated.
  • 3. Spread the mixture back on the baking sheet and return to the oven for 12 minutes, stirring twice during cooking. Remove from oven and cool completely, separating the nuts and pretzels as they cool.
  • Once cool, this mixture can be stored in an airtight container for up to a week.

Toss mixed nuts and mini pretzels with a spice blend of paprika, dry mustard and cinnamon.

1 1/2 teaspoons paprika
1 1/2 teaspoons minced fresh thyme
3/4 teaspoon ground mustard
1/4 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for oiling the baking sheet
1 large egg white
1 cup unsalted raw cashews
1 cup unsalted raw peanuts
1 cup unsalted raw pecans
1 cup unsalted raw walnuts
1 1/2 cups mini pretzels

Steps:

  • For the cocktail spice blend: Mix together the sugar, paprika, thyme, mustard, cinnamon, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a small bowl and set aside.
  • For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
  • Put the egg white in a large bowl and whisk until frothy. Add the cashews, peanuts, pecans, walnuts and pretzels and toss to coat in the egg white. Add the spice blend and toss again to coat.
  • Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.

Pretzels with a bite! This snack is shaken, not baked. Lemon pepper is the secret ingredient, and gives the spice marinade mixture a wonderful zest.

1 teaspoon lemon pepper
1 ½ teaspoons garlic salt
1 (1 ounce) package dry Ranch-style dressing mix
¾ cup vegetable oil
1 ½ (15 ounce) packages mini pretzels

Steps:

  • In a small bowl, mix together cayenne pepper, lemon pepper, garlic salt, ranch-style dressing mix and vegetable oil.
  • Place pretzels in a large, sealable plastic bag. Pour in mixture from bowl. Shake well. Allow pretzels to marinate in the mixture approximately 2 hours before serving. Shake occasionally to maintain coating.
