This is a lovely cake, not too sweet but moist and chocolatey. The combination of cinnamon and chocolate is particularly popular in Mexican cooking, but it makes a very interesting cake as well.

2 1/2 cups flour, unbleached, sifted
1/2 cup cocoa powder
2 teaspoons baking soda
1 teaspoon cinnamon, ground
1 teaspoon salt
1/2 cup vegetable oil
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups applesauce
1 cup buttermilk

Steps:

  • Preheat the oven to 350°F Line 2 nine-inch round cake pans with parchment paper, and grease the sides of the pans.
  • Sift together flour, cocoa, baking soda, cinnamon and salt; set aside.
  • Beat together the oil and sugar in a mixing bowl.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the vanilla and the applesauce.
  • Add the dry ingredients alternately with the buttermilk to creamed mixture, beating well after each addition.
  • Divide the batter evenly between the two pans.
  • Bake in the preheated 350°F oven for 45 to 50 minutes or until cake tests done.
  • Cool 10 minutes in pan on rack.
  • Remove from the pans; cool on rack. Ice with frosting as desired.

2 1/2 cup(s) flour, sifted
2 large egg white
1 teaspoon(s) vanilla extract
1/4 cup(s) butter, softened
1/2 cup(s) powdered sugar, well sifted
2 ounce(s) chocolate, unsweetened
- FROSTING INGREDIENTS
1/3 cup(s) water, boiling
1 cup(s) buttermilk
1 cup(s) applesauce
1 teaspoon(s) vanilla extract
2 large eggs
2 cup(s) sugar
3/4 cup(s) vegetable shortening
1 teaspoon(s) salt
1 teaspoon(s) cinnamon, ground
2 teaspoon(s) baking soda
1/2 cup(s) cocoa
1 cup(s) powdered sugar, well sifted

Steps:

  • Sift together flour, baking soda, cinnamon and salt; set aside.
  • Cream together the shortening and sugar in a mixing bowl until light and fluffy, using an electric mixer at medium speed; add eggs, one at a time, beating well after each addition.
  • Blend in vanilla and applesauce.
  • Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition.
  • Beat in boiling water - (Batter should be thick.)
  • Pour batter into greased and waxed paper-lined 13 x 9 x 2-inch baking pan; bake in preheated 350 oven for 1 hour or until cake tests done.
  • Cool 10 minutes in pan on rack.
  • Remove from pan; cool on rack.
  • When cake is cooled, spread with Chocolate Fluff Frosting and cut in squares.
  • CHOCOLATE FLUFF FROSTING: Melt chocolate over hot water; cool to room temperature.
  • Blend together confectioners' sugar, butter, melted chocolate and vanilla in a bowl and beat until smooth.
  • In another bowl, beat egg whites until soft peaks form, using an electric mixer at high speed.
  • Gradually beat in 1 cup sifted confectioners' sugar, 2 tablespoons at a time, until egg white mixture is glossy and stiff.
  • Fold in chocolate mixture into the beaten egg whites.
