2 cups fresh or frozen cranberries
1/2 cup maple syrup
1/2 cup honey
1 tablespoon grated orange zest
1 teaspoon apple pie spice
1/4 cup amaretto
Toasted sliced almonds, optional

Steps:

  • In a large saucepan, combine the cranberries, syrup, honey, orange zest and pie spice. Cook over medium heat until the berries pop, about 15 minutes. Stir in amaretto; cook 5 minutes. Cover and store in the refrigerator. If desired, top with almonds before serving.

I love Amaretto or other liqueurs for dessert. This could go either way, before or after dinner. I usually don't like the taste of most hard liquors, but the spiced rum with the amaretto was incredibly delicious! The addition of club soda makes it a nice before dinner drink, and, alternatively, the cream makes it a luscious dessert drink. (And I admit to using fat free half and half and it was great.) Thanks to Boomette's Disacolada for the inspiration!

2 ounces spiced rum (I liked Captain Morgan's Tattoo the best-dark, rich and spicy)
2 ounces Amaretto
2 ounces club soda or 2 ounces cream

Steps:

  • Mix amaretto and rum well.
  • Pour over ice.
  • Add either soda or cream and stir gently.
  • Enjoy.

2 egg whites
1 cup pulverized almonds
3/4 cup sugar
1 teaspoon almond extract
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/4 teaspoon cloves

Steps:

  • Preheat the oven to 300 degrees.
  • Line a cookie sheet with baking parchment.
  • In a medium-size bowl, beat the egg whites until they form stiff peaks. Gently fold in the almonds, sugar, almond extract and spices, if using, until blended.
  • Drop the dough by teaspoonfuls onto the prepared cookie sheet. Bake for 15 to 20 minutes, or until lightly golden. Let cool and remove from parchment.

1 package (12 ounces) fresh or frozen cranberries
1-3/4 cups sugar
1/2 cup water
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until the berries pop and mixture is thickened, about 30 minutes. Cool. Transfer to a serving bowl; cover and refrigerate until chilled.
