2 teaspoons lemon juice
2 teaspoons Worcestershire sauce
1-1/2 teaspoons pepper
1-1/4 teaspoons ground cumin
1-1/4 teaspoons curry powder
1 garlic clove, minced
1/2 teaspoon sea salt
1/2 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
4 lamb rib chops
1 tablespoon olive oil

Steps:

  • Mix first 9 ingredients; spread over chops. Refrigerate, covered, overnight., Preheat oven to 450°. In an ovenproof skillet, heat oil over medium-high heat; brown chops, about 2 minutes per side. Transfer to oven; roast until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 3-4 minutes.

GRILLED TANDOORI LAMB CHOPS AND GREEN BEANS



Grilled Tandoori Lamb Chops and Green Beans image

2 tablespoons vegetable oil, plus more for the grill
2 tablespoons jarred tandoori marinade
1/4 cup plus 1 tablespoon plain 2% Greek yogurt
4 lamb blade chops (6 to 7 ounces each; 1/2 inch thick)
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh cilantro, plus more for topping
3 cloves garlic (1 clove finely grated, 2 sliced)
1 teaspoon fresh lemon juice
1 pound green beans, trimmed and halved
1 1/2 cups cherry tomatoes
1 1/2 teaspoons cumin seeds, roughly chopped

Steps:

  • Preheat a grill to medium high and lightly oil the grates. Mix the tandoori marinade and 1 tablespoon yogurt in a small bowl. Season the lamb chops with salt and pepper. Rub all over with the yogurt mixture. Let sit at room temperature, 10 minutes.
  • Meanwhile, mix the remaining 1/4 cup yogurt with 1 tablespoon water, the cilantro, grated garlic, lemon juice, 2 pinches of salt and a grind of pepper in a small bowl.
  • Toss the green beans, tomatoes, vegetable oil, sliced garlic, cumin seeds, 1 teaspoon salt and a few grinds of pepper in a large bowl. Spread out the vegetables on a large sheet of heavy-duty foil. Bring the short ends of the foil together and fold to seal; fold in the sides to form a packet.
  • Place the packet on the grill and cook until the vegetables are lightly charred and the tomatoes start to burst, about 10 minutes. Grill the lamb chops 2 to 3 minutes per side for medium doneness. Divide the lamb and vegetables among plates. Top with cilantro and serve with the yogurt sauce.

I had ripped this out of a magazine. At the top of the page it says Fit To Eat. This uses ingredients I have on hand and and it serves 2, which is 1 chop a person. I like more in my serving unless I'm on a diet! Recipe suggests a side of cauliflower roasted with ginger and mint.

1 teaspoon dried thyme
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon paprika
1/2 teaspoon coarse salt
freshly ground pepper
2 lamb chops, rib chops about 5 1/2 oz. each
2 teaspoons extra virgin olive oil
1 ounce arugula, about 2 cups

Steps:

  • Stir together the thyme, cumin, coriander, paprika, and salt in a small bowl; season with pepper.
  • Put lamb on a plate and rub each side with the spice mixture; let stand from 10 minutes to an hour.
  • Heat 1 teaspoon of the oil in a medium heavy skillet over medium-high heat until very hot.
  • Add chops and reduce heat to medium.
  • Cook chops, flipping halfway through, until deeply browned, about 10 minutes for medium-rare.
  • Transfer each chop to a serving plate.
  • Divide arugula between plates and drizzle with the remaining teaspoons of oil.

1/4 teaspoon allspice
1 teaspoon curry powder
1 teaspoon oregano
1 cup tomato sauce
3 tablespoons cider vinegar
3 garlic cloves, smashed and chopped

One of the top-selling dishes at London's Tamarind restaurant, Alfred Prasad creates an Indian-inspired lamb dish, served with fresh mint

8 double-boned lamb best end chops - you will need to ask your butcher for these
juice of 1 lime
3 tbsp malt vinegar
1 tsp chilli powder
125ml mustard oil or vegetable oil, plus extra for frying
85g gram flour (chickpea flour)
4 star anise toasted in a hot pan
3 green chillies
8 garlic cloves
1 small papaya , peeled, seeded and chopped
Fresh mint sauce (see link below)
Tamarind's winter salad (see link below)

Steps:

  • Marinate the chops in the lime juice, vinegar, chilli powder and a pinch of salt while you make the rest of the marinade.
  • Heat 100ml of the oil in a small saucepan and add the gram flour, stirring continuously for a minute or two until the flour forms a smooth sandy paste and you begin to smell a nutty aroma. Transfer the paste to a bowl and leave to cool.
  • Crush the star anise using a pestle and mortar, then tip into a food processor with the chillies, garlic, papaya and the remaining oil and blend to a smooth paste. Mix both pastes over the marinated meat and refrigerate for a minimum of 4 hours.
  • To cook the chops, preheat the oven to fan 180C/conventional 200C/gas 6. Lift the chops out of the marinade and wipe off any excess so the chops are just lightly coated. Heat 1 tbsp oil in a large frying pan and fry the chops in batches for a couple of minutes on each side until browned. Transfer to a roasting tray and roast for 10-20 minutes depending on how pink you like your lamb. Serve the chops with mint sauce and winter salad.
