6 chicken quarters
2 tsp kosher salt ((or to taste))
1 tsp Black pepper ((or to taste))
2 tsp granulated garlic ((or garlic powder))
2 tsp granulated onion ((or onion powder))
1 Tbsp Ancho chile powder
1/2 TSP cayenne pepper ((optional, adjust the amount to taste))
1/2 Tbsp vegetable oil ((for rubbing))
1/2 cup cooking oil ((for frying))

Steps:

  • Preheat oven to 400F.
  • Dry the chicken quarters with paper towels and rub with oil. Evenly sprinkle the seasonings on both sides of each quarter and gently pat to make the seasonings stick.
  • Heat 1/2 cup of cooking oil in a large skillet over medium-high heat. In two batches, sear the chicken quarters, about 2 minutes per side or until the skin is deep golden brown. The time will depend on how hot your skillet is. Tip: the hot oil will splatter so be careful not to get burned. Use a splatter guard if you have one.
  • Transfer the chicken onto the baking sheet, fitted with a cooling rack. Pour about 1 Tbsp of the cooking oil from the skillet over each chicken quarter. Tip: line the baking sheet with aluminum foil for much easier cleaning after cooking. Tip: you must use a cooling rack, or else the bottom of the chicken will come out soggy and greasy.
  • Bake at 400F for about 35-45 minutes, or until the chicken skin is crispy and deep golden brown. Different ovens bake differently so the exact time may vary. In my oven, I need 45 minutes.Tip: chicken quarters will be fully cooked and reach 165F internal temperature at 400F in about 25 minutes, but you want to cook them longer for two reasons. One is that chicken legs and thighs just taste much better when cooked to about 185F - 190F. That's when they become super tender. The second reason is that the skin won't be as crispy after just 25 minutes.
  • Remove the chicken from the oven, let rest for 3 minutes and serve with your favorite side dish.

4 chicken leg quarters ((skin-on with bone))
1 tablespoon paprika ((smoked))
1 tablespoon salt ((I use kosher))
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 tablespoon olive oil
½ teaspoon chili powder
½ teaspoons black pepper
8 red potatoes ((small))
2 carrots (large(diced))

Steps:

  • To make the wet rub combine all the spices in a small bowl and add the oil. *Save some of the rub for the vegetables.
  • Pat dry the chicken and then proceed to rub the mixture on the chicken. I use my hands but you can use gloves if it is more comfortable for you. With my fingers, I go inside the skin to season the whole chicken leg quarter.
  • Once your meat is coated with the wet rub, place them in a baking sheet and bake them in the oven for about 40 minutes to an hour at a 400-degree Fahrenheit.
  • Cut all the vegetables and place them in a baking pan. Using the rest of the seasoning add that to the vegetables. Place them in the oven after the chicken has cooked for about 20 to 25 minutes because these vegetables will not take long to cook. You can definitely cook the chicken and the vegetables together if you'd like. I just like my vegetables to be firm.

2 (3 pound) whole chickens, quartered
1 tablespoon brown sugar
1 tablespoon sea salt
1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder

½ teaspoon celery seed

Steps:

  • Trim any overhanging skin from the chicken pieces. Whisk brown sugar, sea salt, 1 1/2 teaspoons garlic powder, 1 1/2 teaspoons onion powder, 1 1/2 teaspoons paprika, oregano, dry mustard, celery seed, and cayenne pepper together in a bowl. Rub spice mixture over all chicken pieces and under the skin of breast pieces; cover with plastic wrap and refrigerate for about 1 hour.
  • Whisk maple syrup, yellow mustard, brown mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, and black pepper together in a bowl.

1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cayenne
Zest of 1 lemon, the lemon quartered
One 3-pound chicken, giblets removed
6 cloves garlic, crushed
3 fresh bay leaves
2 medium onions, sliced into 3 rings each
2 tablespoons unsalted butter, melted and cooled

Steps:

  • Combine the salt, cumin, paprika, garlic powder, black pepper, cayenne and lemon zest in a bowl. Wash the chicken and pat very dry. Rub the spice mixture all over the chicken. Set the chicken on a plate and refrigerate, uncovered, for at least 1 hour and up to 8 hours (to dry out the skin and promote crisp skin).
  • When you are ready to cook, preheat the oven to 425 degrees F.
  • Stuff the chicken with the lemon quarters, garlic and bay leaves. Arrange the onion slices to make a bed for the chicken in a large cast-iron skillet. Set the chicken on the onions and tuck the wings tips under the chicken's body. Brush the chicken all over with the melted butter.
  • Roast the chicken, basting once halfway through with the pan juices, until the skin is crisp and golden and an instant-read thermometer inserted in the thigh (do not touch bone) reads 165 degrees F, about 45 minutes. Let rest at least 10 minutes before carving.

3 to 4 pounds chicken leg quarters, thighs or skin-on bone-in breasts
Sunny's 1-2-3 Spice Rub, recipe follows
1/3 cup fresh lime, lemon or orange juice
2 to 3 tablespoons honey
1 teaspoon red chili flakes, optional
3 tablespoons ground cumin
2 tablespoons hot Hungarian paprika
1 tablespoon ground black pepper
1 tablespoon chili powder
2 teaspoons kosher salt

Steps:

  • For the chicken: Pat the chicken dry. With your hands, coat the chicken entirely with Sunny's 1-2-3 Spice Rub. Place in a plastic bag, press out the air, seal and refrigerate for at least 6 and up to 24 hours.
  • Remove the chicken from the bag, place in one layer on a baking sheet or tray and refrigerate, uncovered, for at least 2 hours and up to 6 hours.
  • Rest the chicken at room temperature for 2 hours. This is an important step, so you begin cooking the chicken when it is at room temperature. This allows the chicken to cook evenly throughout.
  • Preheat a grill or oven to 350 degrees F.
  • Place the chicken over the indirect heat of the grill and close the lid. If using the oven, put the chicken on a baking sheet lined with parchment or nonstick aluminum foil and place on the center oven rack. Cook for 30 minutes.
  • For the glaze: In a small bowl, whisk together the juice, honey and chili flakes if using.
  • Open the grill or remove the chicken from the oven and brush each piece liberally with the glaze. Quickly close the grill lid or return the chicken to the oven and cook until done and the chicken juices run clear, about 15 more minutes. Allow the chicken to rest, tented with aluminum foil, until the internal temperature registers 165 degrees F.
  • In a bowl, mix together the cumin, paprika, pepper, chili powder and salt. Store in an airtight container in a cool, dark place.

5 cups water
⅓ cup white sugar
⅓ cup kosher salt
½ cup white vinegar
5 pounds chicken leg quarters
7 tablespoons dark brown sugar
4 tablespoons smoked paprika
3 tablespoons chipotle chile powder
1 ½ tablespoons kosher salt
1 tablespoon coarsely ground black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon ground cumin
½ teaspoon ground nutmeg

Steps:

  • Mix water, sugar, salt, and vinegar for brine in a food-grade, nonreactive container.
  • Rinse chicken and pat dry. Place it in the brine, cover, and let sit for 2 hours.
  • Mix brown sugar, paprika, chile powder, salt, pepper, garlic powder, onion powder, cayenne, cumin, and nutmeg for dry rub together in a small bowl.
  • Preheat the oven to 300 degrees F (150 degrees C). Line a baking dish with foil.
  • Remove chicken from the brine and pat dry. Place it on a tray and generously sprinkle dry rub all over each piece, rubbing it into the skin and meat. (You will have some dry rub remaining.)
  • Place chicken, skin-side down, in the prepared baking dish,. Cover with foil, making sure not to wrap it too tightly.
  • Bake in the preheated oven for 1 hour. Remove from the oven. Increase the temperature to 450 degrees F (230 degrees C).
  • Remove the foil cover and turn chicken over. Sprinkle more dry rub onto the skin and return to the oven.
  • Bake until skin is crispy, chicken is no longer pink in the center, and the juices run clear, about 20 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
