1 pound lean ground beef
Homemade Taco Seasoning
2 Tablespoons tomato paste
1/2 cup water
6-8 taco shells
Shredded Cheese
Lettuce
Tomatoes
Olives
Avocado (diced)

Steps:

  • In a medium sized skillet over medium high heat add the ground beef and cook and crumble until brown. Add ingredients for homemade taco seasoning, tomato paste and water. Stir until combined. Let it simmer until it starts to thicken, about 5 minutes.
  • Divide evenly into taco shells and top with desired toppings

1 red onion , thinly sliced
½ tsp sugar
100ml cider vinegar
400g can black beans or kidney beans, drained
3 tbsp chilli sauce
leftover Bolognese (see Bolognese recipe below, right)
8 corn tortillas
1 little gem lettuce , shredded
1 avocado , stoned, peeled and cut into chunks
150g pot soured cream

Steps:

  • Quickly pickle the onion: put it in a bowl and sprinkle with the sugar and 1⁄2 tsp salt. Leave for 10 mins, then stir in the cider vinegar and leave to pickle for another 10 mins.
  • Meanwhile, stir the beans and chilli sauce into the Bolognese and heat for 10-15 mins until piping hot. Add a little water if the mixture seems too thick.
  • Heat the corn tortillas following pack instructions. Top with spoonfuls of the Bolognese, some pickled onions, lettuce, avocado and a dollop of soured cream.

1 tablespoon olive oil
1/2 yellow onion, diced
2 pounds ground beef
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper
20 fajita-sized flour tortillas
18 hard taco shells
1 pound Cheddar-Jack cheese, grated
15 Roma tomatoes, diced
1 head green leaf lettuce, shredded

Steps:

  • Preheat the oven to 325 degrees F.
  • For the beef: In a skillet over medium-high heat, add the olive oil and onions. Cook until starting to soften, then add the ground beef. Cook the meat until it's totally browned, then drain the fat. Add the chili powder, cumin, paprika, salt, black pepper and crushed red pepper and stir to combine. Add 1/2 cup hot water and stir. Reduce the heat to low and simmer for 15 minutes.
  • For the fixins: Meanwhile, wrap the flour tortillas in foil and warm in the oven for 20 to 25 minutes. Right before serving, crisp the taco shells in the oven according to package instructions.
  • Serve with the grated cheese, diced tomatoes and shredded lettuce.

3 cups Taco Filling, thawed
12 corn tortillas (6-inch)
2 cups shredded iceberg lettuce
1/2 cup thinly sliced radishes
1/2 cup shredded Monterey Jack cheese
1/3 chopped fresh cilantro
1/2 cup prepared salsa
1/4 cup reduced-fat sour cream
Diced jalapeno (optional)

Steps:

  • Heat Taco Filling in a saucepan over low heat (or in the microwave). Warm tortillas in a dry skillet over medium heat (or directly over a gas burner), about 30 seconds per side.
  • To assemble, spoon taco filling onto tortillas, and top with lettuce, radishes, cheese, cilantro, and salsa. Fold to enclose.
  • Serve sour cream on the side. Garnish with diced jalapeno, if desired.
