1 teaspoon olive oil
1 medium onion, chopped
1 cup sliced fresh mushrooms
1 cup cubed fully cooked ham
1/8 teaspoon pepper
1/2 cup reduced-sodium chicken broth
1/4 cup water
3/4 cup uncooked instant rice
2 green onions, sliced
1/4 cup shredded Parmesan cheese

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

This is an adopted recipe. I have yet to make it, but I don't really seen any drastic changes that I would make. If anyone decides to give it a try, let me know if you come up with any changes that you think would benefit this recipe.

Number Of Ingredients 13

1 tablespoon olive oil
8 ounces medium shrimp, shelled and deveined
1/2 teaspoon dried oregano
1 sweet red pepper, finely chopped
1 large onion, finely chopped
2 cloves garlic, finely chopped
1 cup uncooked texmati rice
1 (14 1/2 ounce) can fat free reduced-sodium chicken broth
1 (14 1/2 ounce) can no-salt-added stewed tomatoes
1/2 teaspoon salt
1/8 teaspoon red pepper flakes
1 cup cubed ham, leftover if u have some
2 tablespoons chopped cilantro

Steps:

  • Heat 1 tsp oil in a large skillet.
  • Add shrimp and ¼ teaspoon oregano; sauté until is just cooked about 1-2 minutes.
  • Remove shrimp.
  • Heat remaining 2 teaspoons oil in same skillet.
  • Add sweet red pepper, onion and garlic.
  • Sauté for 3 minutes until just tender.
  • Stir in rice, the remaining ¼ teaspoon oregano and broth.
  • Cover and simmer for 15 minutes.
  • Stir in tomatoes with juice, salt, pepper flakes and ham.
  • Cover and simmer, stirring occasionally for 5 minutes until rice is tender and liquid is absorbed.
  • Return shrimp to skillet; heat through, about 1 minute.
  • Sprinkle with cilantro.

This is a quick and simple dish that is great for a week night when time is short. It's also good as a side dish for Mexican food. My family always expects this for dinner shortly after we have ham. lol.

2 Tbsp butter
1/2 c green pepper, chopped
2 c ham, cubed
1 15-oz can(s) mexican style stewed tomatoes
1 c tomato juice
1/2 c frozen peas
1/4 c water
1 c instant rice

Steps:

  • 1. In a large saucepan melt butter over medium heat. Saute green pepper until crisp tender.
  • 2. Stir in ham, undrained stewed tomatoes, tomato juice, peas, and water. Bring to a boil.
  • 3. Remove from heat and stir in instant rice. Cover and let stand about 5 minutes or until rice is tender.

1 can (15 ounces) tomato sauce
3/4 cup hot water
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon sugar

Steps:

  • In a large skillet, brown the beef, onion, green pepper and rice. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until the rice is tender.
