SPANISH RICE PRONTO
My Mom used to make this, and I found her recipe - it's from a 1968 Minute Rice calendar as September's feature. I've made a few changes though - using a little olive oil instead of 1/4 cup of fat like the original recipe, and adding 1 can of tomatoes and 1 small can of tomato sauce, sometimes I use black olives instead of green ones or both. This is a quick and hearty dinner, excellent with a salad.

Steps:
- Heat oil in frypan and saute onion and green pepper till just soft, then add ground beef and break up as cooking so it is well crumbled.
- Cook meat very well& drain fat if any.
- Add tomato sauce and hot water, salt and pepper- bring to a boil.
- Once boiling add in Minute Rice, stir, reduce heat and simmer uncovered for 5 minutes.
- Garnish with sliced olives.

- Saute onion, green pepper, and Minute Rice (right from box) in the oil. Add remaining ingredients; mix well. Bring to a boil. Then reduce heat and simmer, uncovered, 5 to 10 minutes or until rice is done. Makes 4 to 6 servings. Here are some ways to mix it up a bit: Cheese Spanish Rice: Stir 1/2 cup grated Cheddar cheese into prepared rice; place in serving dish and top with additional 1/2 cup grated cheese. Beef Spanish Rice: Prepare as above, sauteing 1/2 to 1 pound ground beef with the rice. Mushroom Spanish Rice: Prepare as above, sauteing 1/4 pound sliced fresh mushrooms with the rice.

- In a large skillet, melt the butter or margarine.
- Saute the onion, green pepper and hot dogs over medium high heat until the vegetables are tender.
- Add the rice and saute for 1-2 minutes.

I combined a recipe of my Mom's and one from St. Mary's school cafeteria given to me by Mrs. Miller when I was in the 5th grade. She was one of the cook's. A great lady.

- 1. 1 large can of diced tomatoes 1 large can tomato sauce Salt & pepper to taste
- 2. 1 1/2 lbs. ground beef browned and drain off fat. Set aside. Cook 8 strips of bacon fried, broken in small pieces and reserve drippings.Set aside bacon...for later.
- 3. In bacon drippings saute onion, green & multi colored peppers. Add cooked rice, cooked ground beef, diced tomatoes ..and tomato sauce & salt & pepper..mix well ...simmer for about 20 minutes.
THE BEST AUTHENTIC SPANISH RICE
If you like the kind of spanish rice served in Mexican restaurants, you will LOVE this recipe. Browning the rice gives it that fluffy and nutty taste that makes it so good. The flavor is not meant to be overpowering, so it goes very good with spicy entrees. This recipe was given to me by a friend who makes the best authentic Mexican dishes ever. Enjoy!

Steps:
- Pour rice into a deep pot and stir in enough oil so that every grain is coated.
- Cook rice on medium and constantly stir, using a spatula, until it becomes a light toasted color (20-25 min), be careful not to burn.
- Add onion and green pepper, cook until they become soft, add more oil if needed.
- Stir in tomato, cook for 2-3 minute.
- Tilt pot, remove any excess oil w/ spoon.
- Sprinkle bouillon and garlic salt over rice (DO NOT STIR).
- Pour water over rice (DO NOT STIR), then cover.
- Bring to a boil, then lower heat and cook for 25-30 min, or until most liquid evaporated (DO NOT LIFT LID DURING THIS TIME).
- Pick out large pieces of veggies w/ a fork and discard, (this step may be omitted if you chopped your veggies, I have picky eaters).
- *This rice actually tastes better when cooled, and then heated in the microwave, as any remaining liquid is evaporated.
