GRANDMA MCDOWELLS SPAM CASSEROLE

My husbands grandmother use to make this casserole it was so easy and tasted great, also inexpensive to make.

Number Of Ingredients 8

2 c macaroni, elbow or shell, uncooked
1 can(s) cream of mushroom soup
1/4 lb processed cheese, cubed ( like velveeta )
1/2 c milk
1 medium chopped onion
1 medium chopped green bell pepper
1/4 tsp pepper
1 can(s) spam , cubed.

Steps:

  • 1. Cook macaroni as directed on package.
  • 2. Combine soup, milk, green pepper, onion and pepper.
  • 3. Place over low heat.
  • 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
  • 5. Pour mixture into a 1 1/2 quart casserole dish.
  • 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.

¼ cup butter
9 large onions, sliced
1 (7 ounce) bag sour cream-and-onion-flavored potato chips, crushed
1 cube beef bouillon
½ cup water
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt butter in a large skillet over medium-high heat. Saute onions until tender. Transfer to prepared dish and top with crushed potato chips.
  • Dissolve bouillon in water and mix with mushroom soup; pour over chips and onions. Top with cheese.
  • Bake in preheated oven for 25 to 30 minutes.

4 cups water
1 cup quick-cooking grits
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) container sour cream
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring the water to a boil in a large saucepan over high heat. Slowly pour the grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Stir the grits constantly as they cook. Set aside.
  • Heat a skillet over medium-high heat, and sprinkle in the grated luncheon meat. Cook, turning occasionally, until the luncheon meat has browned. Pour off any excess grease, and stir half of the luncheon meat into the grits along with the tomatoes, sour cream, and half of the Cheddar cheese. Pour the grits into the prepared baking dish, and sprinkle with the remaining luncheon meat and Cheddar cheese.
  • Bake in the preheated oven until the casserole is hot and the cheese has melted and is bubbly, about 30 minutes.

This is originally from a 1995 Gourmet magazine. We like it as a side dish with anything grilled ( it's wonderful with steaks!) or roasted. It's a different sort of side dish and is always well received.

8 bunches scallions, cut crosswise into 1 inch pieces,including some tops,about 16 cups (green onions)
2 cloves garlic, minced
3 tablespoons unsalted butter
1/4 cup heavy cream
1/2 cup freshly grated parmesan cheese, divided
1 tablespoon olive oil
2 cups breadcrumbs
salt and pepper

Steps:

  • Preheat oven to 350 degrees and butter a shallow 1 1/2 quart baking dish.
  • In a skillet, cook scallions and garlic in butter over moderate heat until scallions soften, about 20 minutes.
  • Stir in cream and 1/4 cup Parmesan cheese; transfer to baking dish.
  • In a skillet, heat oil over moderately high heat until hot, but not smoking.
  • Saute bread crumbs, stirring until golden brown, about three minutes.
  • Transfer breadcrumbs to a bowl and cool.
  • Add remaining Parmesan cheese and season to taste with salt and pepper.
  • Top casserole with breadcrumb mixture.
  • Bake, uncovered, in the middle of oven until hot, 15-20 minutes.

Steps:

  • Preheat oven to 350°F. and butter a 1 1/2-quart shallow baking dish.
  • In a kettle cook scallions and garlic in butter over moderate heat until scallions are softened, about 20 minutes. Stir in cream and 1/4 cup Parmesan and transfer to baking dish.
  • In a skillet heat oil over moderately high heat until hot but not smoking and sauté bread crumbs, stirring, until golden brown, about 3 minutes. Transfer bread crumbs to a bowl and cool. Add remaining 1/4 cup Parmesan and season with salt and pepper. Top casserole with bread crumb mixture. Casserole may be prepared up to this point 1 day ahead and chilled, covered. Bring casserole to room temperature before proceeding. Bake casserole, uncovered, in middle of oven until hot, 15 to 20 minutes.

A great simple casserole to make and it makes a ton!!! My husband doesn't like Spam but LOVES this!!! My grandmother used to make this for us on Friday nights after she got off of work. Its been a favorite ever since. You can substitute shredded cheese for Velvetta.

1 (16 ounce) package wide egg noodles
1 (8 ounce) can cream of mushroom soup
1 (8 ounce) can cream of chicken soup
8 ounces Velveeta cheese

Steps:

  • Boil noodles according to directions.
  • Chop Spam into small cubes.
  • Chop Velvetta into small cubes.
  • Mix cream of mushroom and cream of chicken with Spam.
  • Mix all of the ingredients in an 11x13 dish and bake at 275° for 10 minutes.

1 tablespoon vegetable oil

½ tablespoon sesame oil
1 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, heat vegetable oil in a medium saucepan over medium heat. Add luncheon meat, green onion and garlic and saute until light brown. Stir in cooked spaghetti , then stir in soy sauce, water, sesame oil and pepper. Mix all together, heat through and serve.

1/2 lb pasta (elbows, spirals, bowties, etc.)
1 tablespoon butter
1 cup celery, chopped
1 cup onion, chopped
1 (12 ounce) can Spam, cubed
1 (10 ounce) can cream of celery soup
1 (15 ounce) can diced tomatoes, undrained
1/2 teaspoon thyme
1/2 teaspoon onion powder
1/4 teaspoon dried celery flakes
1/2 teaspoon salt
1 (8 ounce) can tomato sauce

Steps:

  • Cook pasta 2 minutes under package directions. Drain.
  • Meanwhile, in a large frying pan, melt butter. Sauté celery, onion and Spam until vegetables are just getting soft.
  • Add soup, tomatoes and seasonings. Cook until well blended and heated through.
  • Place pasta in a large casserole; add spam mixture and tomato sauce; tossing well to mix (can be frozen at this point).
  • Cover tightly and cook in a 325° oven for 45 - 60 minutes.
