1 package (1 pound) spaghetti, broken into 4-inch pieces
1 bottle (16 ounces) zesty Italian salad dressing
1 large cucumber, diced
1 large tomato, seeded and diced
1-1/2 cups fresh broccoli florets
2 tablespoons shredded Parmesan cheese
2 teaspoons Salad Supreme Seasoning

Steps:

  • Cook spaghetti according to package directions. Drain and rinse in cold water. Place spaghetti in a large serving bowl. Add the remaining ingredients; toss to coat. Cover and refrigerate for at least 45 minutes.

This an easy, delicious recipe from the July 2006 issue of Southern Living submitted by Kathy Moss. When DH is not around I include the mushrooms, when he is home, I don't. Southern Living used Kraft Zesty Italian Dressing.

4 boneless skinless chicken breasts
2 bunches green onions, chopped
8 ounces fresh mushrooms, sliced
1 pint grape tomatoes, cut in half
1 cup Italian dressing
8 ounces spaghetti
1/2 cup parmesan cheese, frshly grated

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 13 x 9 pan with cooking spray.
  • Place chicken in pan in a single layer.
  • Top evenly with green onions, mushrooms and tomatoes.
  • Pour dressing evenly over chicken and vegetables.
  • Cover pan and bake for 45 minutes.
  • Remove pan from oven and let stand 10 minutes.
  • Shred chicken with 2 forks.
  • Cook pasta al dente and drain well.
  • Combine shredded chicken mixture and spaghetti, toss well.
  • Top with parmesan cheese.

4 bacon strips, diced
1/2 pound ground beef
2 celery ribs, chopped
1 large onion, chopped
1 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
Dash pepper
4 ounces spaghetti or angel hair pasta, cooked and drained

Steps:

  • In a large skillet, cook bacon until crisp. Remove with a slotted spoon and set aside. In the drippings, cook the beef, celery, onion, mushrooms and green pepper over medium heat until meat is no longer pink; drain. , Stir in the soup, Worcestershire sauce, salt, pepper and bacon; Stir in pasta. Cover and simmer for 20 minutes or until heated through.

8oz. Clarrified Butter
Room temp. butter
TT Parsley
TT Garlic Salt
8oz. Flour
1 quart Chicken Stock
1 quart Heavy Cream
8oz. Mushroom trimmings
1 Package of Spaghetti
TT Salt and White Pepper

Steps:

  • *Chicken Strips/Pieces: 1) You cut the chicken in either srtips or in 1" pieces. 2) Season the chicken with parsley and garlic salt, then saute the chicken over medium heat with room temp butter. *Chicken Veloute Sauce: 1)Use the Clarified butter and flour to make a Blonde Roux. 2) Add the chicken stock to the roux. 3) White pepper and salt to taste *Supreme Sauce: 1) Add the Veloute Sauce 2) Add the Mushrooms trimmings, to the sauce, and let simmer for about a 1/2 an hour. Reduce by one-fourth. 3) Whisk in heavy cream, and return to a simmer. 4) Now add the chicken pieces to the sauce and serve on top of noodles.

This is a different type of spaghetti that I got from Vegetarian Times Complete Cookbook. It's a nice change from tomato-based recipes and we enjoy it because it is! A few hot pepper flakes give it a little zing. Use salt to your own taste and enjoy!

1 lb frozen chopped spinach or 1 lb broccoli
1/2 cup skim milk
1 garlic clove, crushed

  • Prepare the pasta according to package directions.

I was looking for a veggie-based side that was not based on potatoes, rice or noodles. This is a mild, tasty side dish that would pair well with chicken or fish. I got it from my Taste of Home 2006 cookbook.

1 large spaghetti squash (3-4 pounds)
1/4 lb bacon, diced (about 5 strips)
1/2 cup white onion, diced
3 tablespoons butter
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup mozzarella cheese, shredded

Steps:

  • Cut squash in half length-wise; discard seeds.
  • Place one squash half, cut-side-down, on a microwaveable plate.
  • Cover and microwave on high 8 minutes or until easily pierced with a fork, turning once.
  • Repeat with second squash half.
  • When cool enough to handle, scoop out squash , separating strands with a fork; set aside.
  • In a skillet, cook bacon and onion until bacon is crisp.
  • Using a slotted spoon, remove to paper towels and drain, reserving drippings.
  • Add butter, brown sugar, salt and pepper to drippings.
  • Stir in squash and bacon; heat through.
  • Remove from heat and stir in cheese until just blended.
  • Serve immediately.

8 OUNCES WHOLE-WHEAT SPAGHETTI
1/2 TEASPOON GARLIC POWDER
1/2 TEASPOON ITALIAN SEASONING
1 14 1/2-OZ CAN ITALIAN-SEASONED DICED TOMATOES
1 LARGE GREEN BELL PEPPER, DICED
1 CUP MUSHROOMS, DICED
1 3.8-OZ CAN SLICED BLACK OLIVES, DRAINED
1 10 3/4-OZ CAN CREAM OF MUSHROOM SOUP
1/2 TEASPOON SALT
1 1/2 CUPS ITALIAN CHEESE BLEND, OR PIZZA BLEND CHEESE, SHREDDED AND DIVIDED
15 SLICES PEPPERONI

Steps:

  • Cook the spaghetti according to package directions. Drain, transfer to a large bowl and set aside.
  • Preheat the oven to 350 degrees F.
  • Meanwhile, in a large skillet over medium heat, cook the pork, breaking it up with a spoon or spatula, until no longer pink, 5 to 6 minutes.
  • Stir in the garlic and Italian seasoning. Add the tomatoes (with their juices), bell pepper, mushrooms, and olives and cook, stirring occasionally, until the bell pepper is tender, about 5 minutes.
  • Remove from the heat and stir in the soup, salt and 1 cup of cheese.
  • Add the mixture to the bowl with the spaghetti, stirring until well combined.
  • Transfer to a 2-quart casserole dish, cover and bake for 20 minutes.
  • Uncover the casserole and top with the pepperoni and 1/2 cup of cheese.
  • Return to the oven and bake uncovered until the pepperoni is hot and the cheese is melted, about 5 minutes.
