CAPRESE SPAGHETTI SQUASH RECIPE BY TASTY

Here's what you need: spaghetti squash, olive oil, salt, pepper, oil, garlic, yellow onion, cherry tomato, salt, pepper, mini mozzarella ball, fresh basil

Number Of Ingredients 12

1 spaghetti squash
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon oil
3 cloves garlic, minced
½ yellow onion, diced
1 cup cherry tomato, halved
½ teaspoon salt
½ teaspoon pepper
8 oz mini mozzarella ball
fresh basil, to garnish

Steps:

  • Preheat oven to 400ºF (200ºC).
  • With a sharp knife, slice the squash in half. If the squash is too tough, puncture in several places forming a dotted line around the squash. Microwave for 3-5 minutes to soften. Allow to cool before cutting in half.
  • Scoop out the seeds, brush with oil, and sprinkle with salt, and pepper. Bake for 40-45 minutes, or until a fork can easily pierce the skin.
  • In a pan over medium heat, add the oil, garlic, and onions, and sautè until onions are translucent.
  • Add the cherry tomatoes, salt, and pepper and simmer until they are cooked and begin to become softened.
  • Remove squash from the oven, with a fork pull at the edges to produce that stringy "spaghetti" quality. Add the squash to the tomato mixture and mix in the pan.
  • Add mixture back to the hollowed out spaghetti squash halves. Top with mini mozzarella balls ans basil.
  • Bake an additional 5-10 minutes, or until cheese melts.
  • Serve in the squash, and top with basil.

Once baked and scraped into noodle-like strands, spaghetti squash becomes a frequent pasta understudy, tossed with pesto, tomato sauce or roasted vegetables. But it's a versatile ingredient, as its mild flavor and gentle crunch also make it a good base for stews or even curries. For a basic roasted spaghetti squash recipe, follow Step 1, scrape the insides into strands, and be on your way. For a complete side dish, proceed with the rest of the recipe and top with herby breadcrumbs and Parmesan. You can also add mozzarella, which will melt into delicious little pools among the squash strands.

1 large (3- to 4-pound) spaghetti squash, halved lengthwise and seeded
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 cup freshly grated Parmesan
1/2 cup panko
1 garlic clove, grated
1 teaspoon fresh thyme leaves
8 ounces mozzarella, cut into 1/2-inch cubes (optional)

Steps:

  • Heat the oven to 450 degrees. Brush the cut side of each squash half with 1 tablespoon olive oil, then season with salt and pepper. Place squash, cut-sides down, on a parchment-lined baking sheet and roast until the squash is tender when poked with a fork, 35 to 40 minutes.
  • Meanwhile, in a small bowl, stir together the Parmesan, panko, garlic, thyme and the remaining 1 tablespoon olive oil. Season with salt and pepper.
  • Flip the squash and use a fork to scrape the squash into spaghetti strands. Stir in half the mozzarella, if using, then sprinkle the squash with the remaining mozzarella and the panko mixture. Roast until the top is golden brown and mozzarella has melted, 20 to 25 minutes.

- oil for roasting
1 teaspoon(s) season salt for each half
1/4 stick(s) butter, cut in pieces
1 tablespoon(s) ground oregano
1 tablespoon(s) italian seasoning
- white pepper to taste
1 pound(s) shredded mozzarella

Steps:

  • Take squash and cut in half. Remove seeds.
  • Rub squash with oil and sprinkle on season salt.
  • Place in oven at 400F until tender.
  • Allow to cool until able to be handled, with shred inside with a fork. Place all innards in the greased, square casserole dish.
  • Add the butter and the seasoning. (I took a picture at this point and the finished picture did not save. I wasn't aware of this until it was eaten.)
  • The sprinkle on cheese very thickly. Place in oven at 350F on the cheese is bubbling and achieving a golden brown.

3 tablespoons olive oil, divided, or as needed
1 (2 pound) spaghetti squash, halved and seeded
¼ teaspoon kosher salt, or to taste
⅛ teaspoon freshly ground black pepper, or to taste
4 cloves garlic, unpeeled
1 teaspoon onion powder
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon dried parsley
1 cup chopped fresh spinach
6 tablespoons shredded mozzarella cheese, divided
6 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Drizzle olive oil over the cut side of the spaghetti squash. Season with salt and black pepper. Place cut-side down on a baking sheet. Place unpeeled garlic on a piece of aluminum foil. Drizzle with olive oil. Wrap aluminum foil around garlic, and place onto baking sheet next to the squash.
  • Bake in the preheated oven until squash is tender and easily pierced with a fork, 40 to 45 minutes. Allow squash and garlic to rest until cool enough to handle. Leave the oven on.
  • Peel garlic and squeeze cloves into a large bowl. Smash with a fork until smooth. Add 1 tablespoon olive oil, onion powder, basil, oregano, and parsley. Mix into a paste.
  • Use a fork to scrape out spaghetti squash strands into the bowl, reserving the shells. Toss spaghetti squash strands with the garlic paste until thoroughly coated. Mix in spinach, 1/4 cup mozzarella cheese, and 1/4 cup Parmesan cheese; toss to combine. Season with salt and pepper.
  • Fill each reserved spaghetti squash shell evenly with the filling. Sprinkle remaining mozzarella and Parmesan over the top. Return the filled shells to the baking sheet.
  • Bake until cheeses melt, 7 to 10 minutes. Turn on broiler and broil until cheeses begin to brown and bubble, 3 to 5 minutes. Serve immediately.

1 spaghetti squash, cooked by your favorite method and separated into strands (See How to Cook Spaghetti Squash)
1 large yellow onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons olive oil
1 (28 ounce) can crushed tomatoes
3 -5 cloves garlic, minced
1 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon crushed red pepper flakes (optional)
1 cup grated mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 375°F Mix the cheese together, set aside.
  • Heat olive oil in a skillet and add the onion, pepper and garlic.
  • Sauté over medium heat for about 5 minutes.
  • Add crushed tomatoes, basil, and crushed red pepper (if using).
  • Simmer uncovered for about 15 minutes.
  • Mix squash well with the cooked vegetables and put half in the bottom of a large (13 x 9 inch) baking dish.
  • Top with half the cheese mixture, followed by the other half of the squash mixture, then the rest of the cheese.
  • Bake for 30 minutes or until cheese is bubbly and slightly browned.
  • Let cool 10-15 minutes before serving.

This is my favorite thing to make spaghetti squash! It's like alfredo or macaroni and cheese but with a veggie instead of pasta. In other words it's seriously delicious comfort food!

6 - 6.5 lbs spaghetti squash ((3 medium or 2 large), halved, scoop out seeds and membranes*)
1 Tbsp olive oil
2 Tbsp butter
1 1/2 Tbsp minced garlic ((about 4 cloves))
1 Tbsp all-purpose flour
1 cup parmesan cheese ((imported))
1 1/4 cups mozzarella cheese, (divided)
1 1/4 cups half and half, (then a little more if needed)
Salt (and freshly ground black pepper, to taste)
1 Tbsp minced parsley, (for garnish (optional))

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
  • Scoop seeds and stringy center portion of from squash and discard or reserve seeds for another use.
  • Place squash cut side up on baking sheet. Brush flesh with olive oil. Sprinkle with salt and pepper. Turn upside down.
  • Bake in preheated oven until tender, about 40 minutes.
  • Let cool slightly or use and oven mitt to hold squash, and shred spaghetti squash with a fork while leaving about 1/4-inch border. Set strings aside and return unfilled boats to baking sheet.
  • In a large saute pan melt butter over medium heat. Add garlic and flour and saute 1 minute.
  • While whisking vigorously slowly pour in half and half. Let cook, stirring constantly, until just thickened.
  • Reduce heat to low, add parmesan and stir until melted. If mixture seems too thick add in a splash or two of half and half. Season mixture with salt and pepper to taste.
  • Remove from heat. Add shredded spaghetti squash and 3/4 cup mozzarella cheese and toss to evenly coat (taste again for salt).
  • Divide mixture evenly among squash halves. Sprinkle with remaining 1/2 cup mozzarella cheese*.
  • Return to oven and bake until cheese has melted, about 10 minutes.
  • Sprinkle with parsley and serve warm.

1 medium spaghetti squash
cooking spray
1 tablespoon olive oil
½ pound bulk Italian sausage
1 medium zucchini, chopped
1 medium red bell pepper, chopped
½ medium onion, chopped
1 clove garlic, minced
salt and ground black pepper to taste
1 (28 ounce) jar pasta sauce
½ cup shredded Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Pierce squash a few times with a very sharp knife. Place squash in a microwave-safe bowl and microwave on high power until squash is tender and a knife can easily poke through the skin, 10 to 13 minutes. Let squash rest, undisturbed, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch casserole dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in sausage, zucchini, bell pepper, onion, and garlic. Saute, stirring occasionally, until veggies are tender and sausage is crumbly and brown, 5 to 7 minutes.
  • Cut open squash and remove and discard all seeds. Scrape out the flesh with a fork and add to the sausage and veggie mixture. Season with salt and pepper and cook over medium heat for 5 minutes. Stir in pasta sauce and transfer to the prepared casserole dish. Top with shredded Parmesan and mozzarella cheeses.
  • Bake in the preheated oven until heated through and cheeses are melted, about 15 minutes.

I have made this many times with whatever is on hand. However, when I can, I try to use mostly root vegetables in yellow and orange colors.

1 large spaghetti squash, halved and seeded
1 acorn squash, halved and seeded
1 large sweet potato
3 cups baby carrots
1 onion, diced
¼ cup honey
1 teaspoon ground cinnamon
1 pinch salt
1 pinch ground black pepper
⅓ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Coat a large baking sheet with cooking spray.
  • Place spaghetti squash and acorn squash, cut sides down, on baking sheet. Place sweet potato on baking sheet.
  • Bake until squash and sweet potato are tender when pierced by a fork, about 45 minutes.
  • Turn oven down to 350 degrees (170 degrees C). Coat a 9x13 baking dish with cooking spray.
  • Scrape strands from the spaghetti squash and place into prepared pan in an even layer.
  • Cut sweet potato into bite-size chunks; place into a large bowl. Scoop bite-size chunks of flesh from the acorn squash; add to bowl. Stir baby carrots, diced onion, honey, cinnamon, salt, and black pepper into squash mixture and mix well. Transfer squash mixture to the baking pan and spread evenly over spaghetti squash. Sprinkle Cheddar cheese over the top.
  • Bake at 350 degrees until cheese is bubbly and brown, about 45 minutes.
