SPAGHETTI DELIGHT

This is my son's favorite dinner that he requests with all of his friends over on his birthday. It's really good and simple!

1 lb ground beef or italian sausage*
2 can(s) 8 oz. tomato sauce, italian seasoned
1 large onion
1 tsp salt
garlic salt, to taste
1/2 pkg pkg. 8 oz. cream cheese
1 c sour cream
1/2 c grated cheddar cheese
8 oz pkg. cooked spaghetti

Steps:

  • 1. Brown meat and onion. Drain grease.
  • 2. Add salt, pepper, and garlic salt.
  • 3. Add tomato sauce (or spaghetti sauce can be used). Simmer for 15 minutes.
  • 4. Cook spaghetti according to directions and drain.
  • 5. Blend cream cheese and sour cream together.
  • 6. Grease 9 x 13 baking dish. Layer ingredients: spaghetti first, then meat sauce, cream cheese mixture, and finally sprinkle with grated cheese on top.
  • 7. Bake at 350* for 20 minutes. Leftovers are great also!

Being a farm wife, I'm always looking for recipes that can go out to the field. I got this one a number of years ago from my friend who is also a farm wife. It's rich, creamy and filling.

10 ounces egg noodles
1 ½ pounds ground beef
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 teaspoon salt
1 tablespoon white sugar
1 ½ cups sour cream
3 ounces cream cheese
½ onion, chopped
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet over medium heat, brown the ground beef. Add the tomatoes with juice, salt and sugar and simmer for 15 minutes.
  • In a separate medium bowl, combine the sour cream, cream cheese and onion and mix well. In a 9x13 inch baking dish, place half of the egg noodles, then all of the meat mixture, then the cream mixture. Top with the remaining noodles and sprinkle with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes.

One dish, kid lovin' ground beef, pasta, tomato casserole. This dish is tasty, easy to prepare with a minimum of effort, inexpensive and my 39 year son still requests it for dinner. He's getting married and I'm giving his fiance' a copy of the recipe. Maybe 25 years ago I was home from surgery and my bible study group brought dinners and this was one of them. It was #1 and I got the recipe. It's been a family favorite since.

1 lb lean ground beef
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup (do not dilute)
1 (15 ounce) can corn, drained
1 (15 ounce) can diced tomatoes, drained, save juice to add later to casserole as it simmers
8 ounces pasta, such as macaroni, flat noodles, tube, sea shell, etc
3 tablespoons dried onion
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon cracked black pepper
1/4 teaspoon oregano
1/8 teaspoon chili powder
1/2 teaspoon cumin

Steps:

  • Brown ground beef in a large frying pan and drain well. Place back in pan, then all the ingredients, except the noodles. Mix well, cover and simmer.
  • While preparing the above, cook the noodles al dente, drain well and add to the meat mixture. Save the noodle water as you will need to add liquid to the casserole as it cooks down, but use the saved diced tomato juice first. I add garlic powder to the noodle water, while cooking, to flavor the water.
  • Add noodles.
  • Cook on low-to-simmer for about 15-20 minutes. Check often and stir. Add tomato juice/noodle liquid, as needed. It can get too thick.

DELUXE SPAGHETTI PIE

Defintely not for those watching their calories, but oh so good! This lends itself to tweaking to meet personal preferences, but this is our favorite combo. Serve this up with a nice Italian salad, garlic bread and maybe a glass of your favorite red wine... :) Hope you all enjoy this as well.

1/2 lb bacon, diced
1 medium onion, chopped
1 lb ground beef
2 (8 ounce) cans tomato sauce
1 (15 ounce) can diced tomatoes, undrained
1/2 teaspoon salt
1 1/2 teaspoons italian seasoning (recommended Italian Blend Spice Mix)
4 garlic cloves, minced
8 ounces fresh mushrooms, sliced
2 ounces sliced black olives (optional)
1 lb spaghetti
1/2 lb mozzarella cheese, shredded
1/4 lb cheddar cheese, shredded

Steps:

  • Saute bacon in skillet. Add onion and ground beef. Cook until meat is brown and onion is soft.
  • Stir in tomato sauce, diced tomatoes, salt, Italian seasonings, garlic, mushrooms, and black olives (if using). Cover and simmer 15 minutes.
  • Meanwhile, cook spaghetti in a large pot of boiling, salted water until tender but still firm to the bite.
  • Preheat oven to 375 degrees. Grease a 3-quart casserole.
  • Drain pasta, and add to sauce. Toss to combine.
  • Spoon half of spaghetti mixture into prepared pan. Combine mozzarella and cheddar cheese. Sprinkle half over spaghetti mixture. Top with remaining spaghetti, then remaining cheese.
  • Bake 20-25 minutes or until heated through and bubbly.
