APRIL FOOL'S SPAGHETTI AND MEATBALLS CAKE

1 (18.25-oz.) pkg. golden vanilla cake mix with pudding
1 1/4 cups water
1/3 cup oil
3 eggs
1 (16-oz.) can vanilla frosting (not whipped)
1/2 cup strawberry ice cream topping
2 or 3 (2.25-oz.) small (1-inch) chewy chocolate candies, unwrapped
2 tablespoons grated vanilla candy coating or almond bark (from 1-oz. cube)

Steps:

  • Heat oven to 350°F. Grease and flour 2 1/2-quart ovenproof glass or metal bowl. Prepare cake mix batter as directed on package, using water, oil and eggs. Pour batter into greased and floured bowl.
  • Bake at 350°F. for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool in bowl on wire rack for 30 minutes. Run thin knife around edge of cake; invert cake onto serving plate. Cool 1 hour or until completely cooled.
  • Frost cooled cake with thin layer of frosting. Spoon remaining frosting into resealable plastic bag; seal bag. Cut small hole in bottom corner of bag. Squeeze bag to pipe frosting onto cake to resemble spaghetti. Stir strawberry topping to soften; spoon topping onto top of cake to resemble spaghetti sauce, allowing some to drip down sides.
  • Unwrap candies; microwave on HIGH for 10 to 15 seconds to soften. Break each candy into thirds; roll into "meatballs" and arrange on cake. Sprinkle grated candy coating over top of cake to resemble cheese.

1 18.25-ounce box chocolate cake mix (plus required ingredients)
2 16-ounce tubs vanilla frosting
2 to 4 drops yellow food coloring 1/2 teaspoon cocoa powder
1 16-ounce bag frozen strawberries, thawed
White chocolate, for grating

Steps:

  • Make two 8-inch-round chocolate cakes as the cake mix label directs; cool completely. Crumble 1 cake into a bowl. Squeeze a handful of crumbs into a 2-inch ball; roll between your hands until smooth. Repeat to make 2 more cake balls. Sprinkle some of the remaining cake crumbs on a clean surface. One at a time, roll the cake balls in the crumbs, pressing lightly to coat. If necessary, moisten the cake balls with water to help the crumbs stick. Assemble the cake: Put the remaining whole cake on a serving plate or cake board. Spread about 1 1/2 cups vanilla frosting on the cake with an offset spatula; run the spatula around the sides to make it smooth. Arrange the cake balls on the cake. Mix the remaining frosting, the yellow food coloring and cocoa in a bowl; transfer to a pastry bag with a small round tip. Pipe the yellow frosting around the cake balls in a figure-eight motion to look like spaghetti. Make the strawberry sauce: Puree the strawberries in a food processor until slightly smooth with a few chunks. Spoon 1/2 cup strawberry puree around the meatballs to look like sauce. Grate white chocolate on top of the cake to look like parmesan cheese. Serve the cake with the remaining strawberry puree on the side.

CAKE BATTER:
3 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 c unsalted butter,softened
1 2/3 c granulated sugar
3 large eggs
3 large over-ripe bananas,mashed
1 1/2 c buttermilk
1 1/2 c chopped walnuts
MEATBALLS:
4 oz cream cheese, softened
1/2 tsp vanilla extract
1 pinch salt
2 c sifted powdered sugar
1 c semi-sweet chocolate chips,melted and cooled
1 c finely chopped walnuts
FROSTING:
1 1/2 c unsalted butter, softened
2 box 1 pound each powdered sugar
1 Tbsp vanilla extract
1 Tbsp milk
8 drops yellow food coloring
1/4 tsp unsweetened cocoa powder

Steps:

  • 1. Preheat oven to 350^. Cake: Spray a 13x9-inch baking pan.Line bottom of pan with parchment paper and spray paper.
  • 2. In a medium bowl, whisk flour, baking powder, baking soda and salt. In a large bowl, beat butter and sugar on high until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in banana, then buttermilk. On low gradually beat in flour mixture just until incorporated; stir in walnuts. Spread in pan . Bake for 50 minutes, until toothpick inserted into center test clean. Cool cake in pan 30 minutes on rack; invert onto rack; let cool, peel off paper. Invert onto oval serving platter. with flat surface. Cover, and chill for 3 hours or up to 1 day.
  • 3. Meatballs: In medium bowl, beat cream cheese until creamy and smooth;beat in vanilla and salt. On low, gradually beat in sugar, then chocolate. Stir in nuts. Roll into balls. Cover and chill over night if desired.
  • 4. Frosting: In a large bowl, beat butter until creamy. On low, gradually beat in sugar. Beat in vanilla and milk. Add food coloring. a teeny bit at a time and cocoa powder, to tint the frosting until the color resembles cooked spaghetti, Be careful because if you add to much, you can't go back. At's always better to add just a tiny bit at a time.
  • 5. Assemble: Using a serrated knife, trim the cake to fit a platter; cut off the edges and corners. Remove cake pieces, brush crumbs off platter.
  • 6. Spread 2 cups of the frosting in an even thin coat over cake. Fill a pastry bag with some of the remaining frosting. Use a #5 plain piping tip . Beginning at bottom edge of cake, pipe "spaghetti" strands around sides, looping and overlapping all over the bottom area working upward. Using up frosting and refilling bag as needed, continue pipping so strands are densely piped around sides, extend those nearest top slightly higher than top edge of cake, creating a well.
  • 7. Tomato and Parmesan: 2 jars strawberry preserves-equal to 20 ounces together White chocolate --- In small saucepan, heat preserves over very very low heat, stirring until just barely warm and pourable. Transfer 1/2 cup :"sauce" to pie pan. Put meatballs in sauce in dish, roll to coat.
  • 8. Spoon remaining sauce into well on top of cake. Spread to fill well, letting drips of sauce come over top edge of spaghetti. Put meatballs on sauce on top of cake and shave white chocolate "parmesan" over top.

3/4 cup dry bread crumbs
1/2 cup milk
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
1 medium onion, finely chopped (1/2 cup)
1 egg
1 tablespoon olive or vegetable oil
1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped
1 can (28 ounces) whole tomatoes, undrained
1 can (6 ounces) tomato paste
1/4 cup chopped fresh parsley
1/4 cup water
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon dried basil leaves
1/4 teaspoon pepper
1 package (16 ounces) spaghetti
Grated Parmesan cheese

Steps:

  • Heat oven to 350°. Mix all ingredients. Shape mixture into 1 1/2-inch balls. Place in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Bake uncovered 15 to 20 minutes or until beef is no longer pink in center and juice is clear.
  • Meanwhile, heat oil in Dutch oven over medium-high heat. Cook onion and garlic in oil, stirring occasionally, until onion is tender.
  • Stir in remaining Sauce ingredients except spaghetti and cheese, breaking up tomatoes. Heat to boiling; reduce heat to low. Cover and simmer 30 minutes, stirring occasionally.
  • Add meatballs to sauce. Cover and simmer 15 minutes. Cook and drain spaghetti as directed on package. Place spaghetti on large platter. Top with meatballs and sauce. Sprinkle with cheese.

1 pound lean ground beef
1 cup fresh bread crumbs
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
¼ teaspoon ground black pepper
⅛ teaspoon garlic powder
1 egg, beaten
¾ cup chopped onion
5 cloves garlic, minced
¼ cup olive oil
2 (28 ounce) cans whole peeled tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
¾ teaspoon dried basil
½ teaspoon ground black pepper

Steps:

  • In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
  • In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

1-1/2 cups dry bread crumbs, divided
3 large eggs, lightly beaten
1-1/2 cups cooked spaghetti (3 ounces uncooked), coarsely chopped
2 garlic cloves, minced
2 teaspoons dried basil
3/4 teaspoon salt
1 teaspoon dried oregano
1 teaspoon pepper
2 pounds ground beef
SAUCE:
2 jars (24 ounces each) meatless pasta sauce
1 small onion, finely chopped
2 garlic cloves, minced
2 teaspoons dried basil
1 teaspoon dried oregano
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 375°. Place 1 cup bread crumbs in a shallow bowl. In a large bowl, combine eggs, chopped spaghetti, garlic, seasonings and remaining bread crumbs. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Roll meatballs in bread crumbs; place in a greased 13x9-in. baking dish. Bake 15-20 minutes or until cooked through., In a large saucepan, combine pasta sauce, onion, garlic and seasonings; bring to a boil over medium heat, stirring occasionally. Pour over meatballs; sprinkle with cheese. Bake 15-20 minutes longer or until cheese is lightly browned.
