1 pound spaghetti
1 cup butter
¾ pound Mizithra cheese

Steps:

  • Cook pasta in large pot of salted, boiling water until al dente. Drain.
  • When pasta is almost done, start slowly melting butter over medium heat until golden. Skim butter solids off top. Toss pasta with butter. Sprinkle with cheese to taste.

A simple 15 minute must try meal that combines browned butter and mazithra cheese! Tastes exactly like the Old Spaghetti Factory!

8 ounce spaghetti noodles
1/2 cup butter
1/2 cup mizithra cheese (grated)
chopped parsley for garnish (optional)

Steps:

  • Cook the spaghetti according to package directions until al dente.
  • While the noodles are cooking, brown the butter in a saucepan over medium heat. The butter will turn a yellow, start to froth and then become brown.
  • Drain the pasta but do not rinse. Pour the brown butter over the pasta. Sprinkle with mazithra cheese and toss to coat. Serve with a salad and garlic bread and garnish with parsley if desired.

1 c butter
1 c grated mizithra cheese (a greek hard cheese)
1/2 to 1 box (16 oz.) spaghetti or angel hair pasta

Steps:

  • 1. Cut the butter into tablespoon-sized pieces and place in a medium saucepan over medium heat. Bring the butter to a slow boil--about 5 minutes.
  • 2. When the butter starts to boil, stir constantly to prevent residue from sticking to bottom of pan. As the butter cooks it will start to foam and rise. Continue stirring (about 5 more minutes). Otherwise the foam could overflow and catch fire.
  • 3. When the butter stops foaming and rising, cook until amber in color (about 1 to 2 minutes). It will have a pleasant caramel aroma.
  • 4. Turn off the heat and remove pan from burner. Let the sediment settle to the bottom of the pan for a few minutes. Pour the brown butter through a strainer into a small bowl. Do not disturb the residue at the bottom of the pan.
  • 5. The brown butter can be stored in the refrigerator and reheated in the microwave as needed.
  • 6. Boil the pasta according to package directions and divide into four servings. Spread 1/4 cup of mizithra over each pasta serving. Top with 1/4 cup of hot brown butter. Enjoy!
  • 7. NOTE: Some people, myself included, actually like the residue from the bottom of the pan to spoon a bit over the pasta. But be careful: this makes it extra salty. If mizithra is unavailable, a blend of ricotta salata and romano may be substituted.

This is a wonderful dish that tastes gourmet and is very filling and rich. I figured out this recipe after eating it at a restaurant. It was surprisingly easy to make! Though, I admit, it is not exactly a heart-smart meal.

1 1/2 cups unsalted butter
1 lb spaghetti
1/2 lb mizithra cheese (can be found at most delis)

Steps:

  • Directions for browned butter: Melt butter in a small pot while spaghetti is cooking.
  • Cook 3-5 minutes until butter foams and rises. You will see a golden brown color when it is done.
  • Remove from heat immediately and put aside.
  • Grate mizythra cheese and put aside.
  • Drain spaghetti once it is done.
  • Serve spaghetti on plates or in bowls.
  • Add about 1/4 cup of melted browned butter to each serving of spaghetti.
  • Sprinkle with generous serving of mizythra. (warning: mizythra is very rich cheese).
  • Some people like to add a small amount of marinara or meat sauce. Others (such as myself) enjoy it plain.
  • Enjoy!

Spaghetti Factory Broccoli, Browned Butter & Mizithra Cheese image

This was something my kids (4 and 2) just loved so much at the restaurant that they gobbled up the whole dish. I did get to try a few bites and figured it was easy enough to try at home. It is very simple and if you can't find Myzithra cheese (it's a Greek goat or sheep cheese) I guess you could sub with Parmesan. The amounts are approximate, please adjust to your taste or amount of broccoli being used! For the butter you can always throw in another chunk to melt if it doesn't look like it's enough for your broccoli. Same with the cheese. If you use unsalted butter you can throw in a tiny pinch of salt. Please use real butter for best results!

2 cups steamed broccoli
3 tablespoons butter
4 tablespoons mizithra cheese, finely shredded

Steps:

  • To brown the butter:.
  • Cut up into small chunks and melt in a heavy saucepan. Stir the butter or swirl the pan so that the butter doesn't burn. Remove from heat when butter turns light brown and gives off a nutty aroma.
  • Drizzle over steamed broccoli.
  • Top with Myzithra cheese and enjoy!
