2 tablespoons olive oil
3 large onions, sliced
3 cloves garlic, chopped
1 red bell pepper, chopped
2 pounds lean ground beef
1 cup beef broth
2 (14 ounce) cans peeled and diced tomatoes with juice
1 cup red wine
1 (6 ounce) can tomato paste
1 stalk celery, chopped
2 bay leaves
1 tablespoon Italian seasoning

Steps:

  • Heat olive oil in a large skillet over medium heat. Saute onions and garlic until onions are tender. Stir in red bell pepper and saute 2 minutes.
  • Place ground beef in the skillet and cook over medium high heat until evenly brown. Stir in beef broth, diced tomatoes, wine and tomato paste. Bring to a boil and add celery, bay leaves and Italian seasoning.
  • Reduce heat and simmer for 1 hour, or until sauce thickens.

I was surprised to find Spag Bol as a typical Australian dish. It took me a while to figure out that it was actually Spaghetti Bolognaise. Italians arrived with James Cook in 1770, so their presence is firmly established, as is this version of Italian cuisine!

1 Tbsp olive oil
1 onion, chopped fine
1 carrot, chopped fine
1 stalk(s) celery, chopped fine
2 clove garlic, crushed
1 small zucchini, chopped
1 lb ground beef
4 oz mushrooms, sliced
28 oz chopped, canned tomatoes (can use 2x15 oz cans)
1 1/2 c beef stock
1 1/2 Tbsp fresh basil, chopped coarsely
1 lb spaghetti, cooked
grated parmesan for serving
basil leaves for garnish

Steps:

  • 1. Heat the oil in a large saucepan or stockpot over medium heat. Cook the onion, carrot, celery for 5 mins or until vegetables have softened. Add garlic, zucchini and mushrooms and cook for 2 mins. Add the meat and cook, using a wooden spoon to break up any lumps, for 5 mins or until browned.
  • 2. Add the tomato, stock and oregano. Season with salt and pepper. Bring to the boil. Reduce the heat to low and simmer, uncovered, for 1 hour or until the mixture has thickened slightly.
  • 3. Divide the spaghetti among bowls. Top with the bolognaise sauce. Garnish with the parmesan and basil to serve.

VEGAN SPAG BOL (SPAGHETTI BOLOGNAISE)

This is a yummy, easy to make and healthy meal. You could add extra ingredients, experiment with different seasonings.. make an extra big pot and freeze some for another day! I 'invented' this today, and it is so good I had to post the recipe before I forget it!

1 small-medium onion, chopped
2 garlic cloves, crushed
1 cup chopped mushroom
1/2 cup diced sweet potato
1/2 cup diced courgette
1 medium carrot, grated
400 g chopped tomatoes with juice
2 tablespoons tomato paste
1 stock, cube (optional)
1/2-3/4 cup red lentil
1/4 cup water
salt
pepper
1 teaspoon mixed herbs
1/2 teaspoon dried basil

Steps:

  • Saute the onion and garlic in a little oil. Don't brown. Add the diced sweet potato, mushroom and courgette and stir fry gently for a few minutes.
  • Add everything else, and simmer gently until everything cooked.
  • season to taste. A small amount of sugar (up to a teaspoon) gives many savory dishes a lift.
  • Serve on cooked pasta (can be gluten free) And top with vegan cheese if desired.

Whip up a superhealthy vegetable spag bol for an easy meal

1 onion
1 carrot
1 stick of celery
1 red pepper
2 tbsp olive oil
100g red lentils
400g can tomatoes
600ml vegetable stock
2 tsp dried oregano
½ tsp ground cinnamon
350g spaghetti
freshly grated vegetarian parmesan-style cheese, to serve

Steps:

  • Roughly chop, then whizz the veggies in a food processor until finely chopped.
  • Heat the oil in a large saucepan and fry the veggies for about 8 minutes until soft. Stir in the lentils, tomatoes, stock, oregano and cinnamon. Bring to the boil, reduce the heat, cover and simmer for 20 minutes. Season then simmer for a further 5 minutes.
  • Cook the spaghetti according to packet instructions. Serve with the sauce and grated cheese.

  • cook tomatoes uncoverd for aprox 30 min
  • cook spagetti.

My Husband is a junk food fiend but he pesters me for Spag Bol at least once a week, it's a good way to hide whatever vegetables I've got lying about.

Steps:

  • Over a moderate heat, soften onions and celery, add garlic and bacon and fry until cooked.
  • Add mince, this can either be done in batches or else all at the same time, depending on the size of your pan. Let cook through for a few mins, drain the fat if needed carefully, there can be quite a lot depending on what kind of mince you are using.
  • Stir in tomato puree, let cook for a minute and then add the tinned tomatoes. I use 2 tins and some water if you like a thinner sauce. Season lightly and let simmer for 10 minutes.
  • Add the herbs and sugar, these can be added according to taste. Let simmer for another 10 mins and adjust seasoning. Add mushrooms near the end of cooking, giving them a chance to soften but still keep their shape.
  • Serve with spaghetti straight away.

Simple spaghetti bolognaise with a kick. You can adjust the spices according to taste. I sometimes leave the garam masala out altogether. This is a firm favourite in our house and usually what I cook when stuck!!!

Steps:

  • Heat a small amount of olive oil in a casserole dish and add the onion, garlic and chilli(es). Cook, stirring, until soft.
  • Next add the spices and cook, stirring, for one minute.
  • Add the minced beef and stir until brown. Then stir in the tomato paste and beef stock. Stir well and season with pepper.
  • Finally add the carrots and celery, bring to the boil and then simmer for 40 minutes
  • Serve with spaghetti or fusilli (or similar) and freshly grated parmesan if liked.
