CHEESY GREEN BEAN CASSEROLE

1 can (10 3/4 oz) condensed cream of mushroom soup
1 cup shredded American-cheddar cheese blend (4 oz)
1 teaspoon soy sauce
1 bag (12 oz) Green Giant Valley Fresh Steamers frozen cut green beans, thawed, drained
1 small red bell pepper, chopped (1/2 cup)
1 1/2 cups cheddar French-fried onions (from 6-oz can)

Steps:

  • Heat oven to 350 degrees F. In 1 1/2-quart casserole, stir together soup, cheese blend and soy sauce. Stir in green beans, bell pepper and 1 cup of the onions.
  • Cover; bake about 30 minutes or until beans are tender and mixture is heated through. Stir; top with remaining 1/2 cup onions.
  • Bake uncovered about 5 minutes longer or until onions are brown and crisp.
  • High Altitude (3500-6500 ft): In step 2, cover and bake about 35 minutes.

Tasty soybeans are so easy to make with ingredients that can easily be kept on hand. It's a hearty vegetarian feast!

1 cup dried soybeans (8 oz), sorted, rinsed
2 cups water
1 teaspoon olive, canola or soybean oil
1 large onion, chopped (1 cup)
1 large green bell pepper, chopped (1 cup)
1 clove garlic, finely chopped
1 3/4 cups chicken broth
1/4 teaspoon dried oregano leaves
1/8 teaspoon ground red pepper (cayenne)
2 dried bay leaves
3/4 cup uncooked regular long-grain white rice
1 can (14.5 oz) diced tomatoes, undrained

Steps:

  • In 4-quart saucepan or Dutch oven, heat soybeans and enough water just to cover beans to boiling. Boil uncovered 2 minutes; remove from heat. Cover; let stand 1 hour. Drain.
  • Stir in 2 cups water. Heat to boiling; reduce heat to medium-low. Cover; cook 2 hours to 2 hours 30 minutes or until soybeans are tender (do not boil or beans will fall apart). Drain.
  • Spray 12-inch skillet with cooking spray. Add oil; heat over medium-high heat. Add onion, bell pepper and garlic; cook 2 to 3 minutes, stirring occasionally, until vegetables are crisp-tender. Stir in broth, oregano, red pepper and bay leaves. Heat to boiling. Stir in rice; reduce heat. Cover; simmer 15 to 20 minutes or until liquid is absorbed.
  • Stir in soybeans and tomatoes. Cook, stirring occasionally, until thoroughly heated and liquid is absorbed. Remove bay leaves.

Full vegetarian meal with salad and fresh baguette. Very easy to make and the most time is taken soaking and cooking the beans. NOTE salt and oil is used during soaking of beans but drained off, so did not include in ingredients.

2 cups dried soybeans (sorted and cooked)
1 large onion (chopped)
1 cup celery (chopped, no leaves)
20 ounces spaghetti sauce
1/4 cup ketchup (to taste)
1/3 cup Worcestershire sauce (to taste)
2 garlic cloves
1/2 cup brown sugar

Steps:

  • To prepare the beans.
  • Inspect beans and discard any bad ones - wash thoroughly.
  • Drain and place in large bowl.
  • For every cup of dry beans add 3 cups of cold water and 1 tsp salt. Stir to dissolve salt.
  • Soak overnight or at least 10 hours.
  • Drain beans and place in a heavy saucepan or slow cooker on high.
  • Add enough HOT fresh water to cover.
  • Add 1 tsp salt and 2 Tbsp cooking oil.
  • Cover, bring to a boil.
  • Reduce heat and simmer on top of stove until tender (3 - 4 hours).
  • Add more boiling water during cooking if necessary.
  • When tender drain off liquid and place beans in large oven proof covered casserole.
  • Put all remaining ingredients in casserole and stir to combine.
  • Cover and bake for 1 hour at 350°F.

I made this up one day while reading several cookbooks, taking some of this and some of that and a bit of trial and error. I was trying to come up with a way to get my family to eat soybeans without thinking of it as another one of my "weird health food" dishes. My family loves it.

2 cups soybeans
1 medium onion
5 slices cooked and crumbled bacon
8 ounces feta cheese
1 1/2 cups cottage cheese
1 egg
1 bag frozen spinach

Steps:

  • Soak soybeans overnight in at least six cups of water.
  • Cook soybeans in new water until tender.
  • Thaw spinach in a bowl in the microwave.
  • Saute onion (You could add one green pepper if you like.) Mix soybeans, crumbled bacon bits, onions and spinach together and spread in a large casserole dish.
  • In a separate bowl, mix crumbled feta cheese, cottage cheese, and one egg.
  • Spread cheese mixture over soybeans.
  • Bake in 350 degree F oven 45 minutes until topping is brown and casserole is heated through.
  • Variations: Use fresh spinach or broccoli or frozen broccoli.
  • Note: You may need two eggs for binding the cheese to soybeans if feta is particularly dry.
  • Sometimes I dust the top with a bit of paprika for color not for taste.
  • You can use more or less bacon.
  • It is just a teaser to get them to try it.
  • I've made it without the bacon for a vegetarian friend of mine and she loved it.

2 tablespoons oil
1/2 cup chopped onion
1 cup chopped celery
1/4 cup chopped green pepper
1/4 lb lean ground beef
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon seasoning salt
2 1/2 cups cooked soybeans (may use canned)
1 1/4 cups tomato sauce or 1 1/4 cups stewed tomatoes
1 cup beef broth
2 cups cooked rice
1/2 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • In large heavy skillet, heat oil.
  • Saute onion, celery, green pepper and ground beef.
  • When meat is no longer pink, stir in all remaining ingredients except cheese.
  • Simmer for a few minutes.
  • Transfer to a lightly greased casserole dish.
  • Bake 45 minutes.
  • Sprinkle grated cheese on top and bake a little longer, until cheese is melted.
