SOY SAUCE-MARINATED GRILLED FLANK STEAK AND SCALLIONS



Soy Sauce-Marinated Grilled Flank Steak and Scallions image

We're flipping the script and marinating after grilling. In this case, it's meaty flank steak in a spicy-sweet soy sauce-brown sugar-Sriracha mixture.

3 Tbsp. extra-virgin olive oil, divided, plus more for grill
1 1/2 lb. flank steak
Kosher salt, freshly ground pepper
1 bunch scallions, trimmed
1/4 cup mirin (sweet Japanese rice wine)
1/4 cup soy sauce
2 Tbsp. light brown sugar
1 Tbsp. distilled white vinegar
1 Tbsp. Sriracha
2 tsp. toasted sesame oil
Toasted sesame seeds (for serving)

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat steak dry and place on a rimmed baking sheet. Lightly score both sides of steak with the tip of a paring knife, making shallow parallel cuts (no deeper than an 1/8") about 1" apart and running across the grain of the meat (this will prevent the steak from curling as it cooks). Season generously all over with salt and pepper; let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toss scallions on another baking sheet with 2 Tbsp. olive oil to coat; season with salt and pepper.
  • Whisk mirin, soy sauce, brown sugar, vinegar, Sriracha, and sesame oil in a medium bowl until sugar is dissolved; set marinade aside.
  • Pat steak dry again (the salt will have drawn out more moisture) and rub with remaining 1 Tbsp. olive oil. Grill scallions, turning often, until tender and charred in spots, about 1 minute. Return to baking sheet. Grill steak, turning every 2 minutes or so, until medium-rare, 6-8 minutes. Transfer to a cutting board and let rest 10-15 minutes.
  • Thinly slice steak crosswise and arrange on a rimmed platter; drizzle all of the juices that have collected on the cutting board over. Arrange grilled scallions on top of the steak, then pour reserved marinade over. Let sit at least 15 minutes and up to 1 hour before serving. To serve, sprinkle with sesame seeds as desired.

1 lb steak (I use sirloin)
mushroom (2-4 Portobello caps or any mushroom you prefer)
1/2 sweet onion
2 tablespoons soy sauce (I use Pearl River Bridge Superior Light Soy Sauce)
2 tablespoons port wine
1 garlic clove (crushed)
1/2 tablespoon flour (to coat the mushrooms)
2 tablespoons olive oil

Steps:

  • Marinate the steak in the soy sauce, port wine, and garlic for at least one hour.
  • Coat the mushrooms with flour.
  • When ready to cook, pour olive oil into a pan and pan fry the steak, save remaining sauce from marinade. When steak is cooked to your preference, take it out of pan and place on plate. Pour the remaining marinade into the pan and cook the mushrooms and sliced onions for a couple of minutes. Pour the mushroom/onion/sauce mixture over the steaks, serve with rice/potatoes/veggies, or whatever you prefer.
  • Voila!

1/4 cup green onion, chopped (1 large green onion)
1/4 cup peanut oil or 1/4 cup toasted sesame oil
1/4 cup tamari or 1/4 cup soy sauce
1/4 cup marsala wine
3 tablespoons honey
2 tablespoons garlic, minced
1 tablespoon gingerroot, grated
1/2 teaspoon Chinese five spice powder
1/4 cup orange juice concentrate
2 tablespoons lemon juice

  • Mix all marinade ingredients together and set aside until ready to use.
  • Score meat by making shallow crisscross cuts on the surface on both sides of the meat, then place meat in plastic ziploc bag or non-reactive dish (glass or plastic).
  • Add marinade and marinate meat for an hour or more, turning to coat from time to time (extra marinade may be used to baste meat while it's cooking).

You can use an indoor grill pan or grill this flank steak outside. From Cooking Light April 2012. Suggested sides are Garlic Asparagus and Garlic Mashed Potatoes. The sauce is what makes this recipe!

1 lb flank steak, trimmed
3/8 tsp kosher salt
1/4 tsp black pepper, freshly ground
cooking spray
2 tsp canola oil
3 tsp fresh garlic, minced
4 Tbsp low sodium soy sauce
2 tsp dijon mustard
3/4 tsp sugar
3 Tbsp heavy whipping cream
3 Tbsp fresh cilantro, chopped and divided

Steps:

  • 1. Heat a grill pan over high heat. (Or get your outdoor grill heated up to high/medium-high.) Sprinkle steak evenly with salt and pepper. Lightly coat the steak with cooking spray. Add steak to pan; grill for 5 minutes on each side or until desired degree of doneness. Let stand 3 minutes.
  • 2. Heat a small skillet over medium-high heat. Add oil to pan; swirl to coat. Add garlic; cook for 30 seconds or until fragrant. Add soy sauce, mustard, and sugar; cook 1 minute or until bubbly. Remove pan from heat. Stir in cream and 1 1/2 tablespoon cilantro.
  • 3. Cut steak diagonally across grain into thin slices. Sprinkle with remaining 1 1/2 tablespoon cilantro. Serve sauce with steak.

At least 30 years ago I found this recipe in a Beef pamplet from some Beef Council. The pamplet is so faded that it no longer says where I got it from. Fortunately I had copied the recipe onto a 3 x 5 card. This is unlike any of the Flank Steak recipes posted here...but it is simply delicious! Preparation time includes marinating time of 24 hours.

2 lbs flank steaks or 2 lbs any other steak (1/3 to 1/2 lb per person)
1 (12 ounce) bottle soy sauce
2 cups white wine, any kind
1 cup chopped fresh parsley
2 tablespoons dried onion flakes
1 teaspoon fresh minced garlic or 1 teaspoon garlic powder
1/4 cup vegetable oil

Steps:

  • NOTE** If you are grilling over a gas grill or on a indoors grilling machine, add 1 Tablespoon liquid smoke to marinade.
  • Mix the soy sauce, parsley, onion, garlic, and wine together is a marinating dish.
  • Score steak diagonally making diamond-shaped cuts on both sides of the meat without cutting all the way.
  • Place meat in the mixed marinate making sure that it is well covered with the marinade sauce.
  • Cover and refrigerate meat at least 24 hours.
  • Throw used marinade away-- DO NOT REUSE.
  • Grill meat until done to your choice.
  • Slice cooked meat thinly on the diagnal across the narrow width and serve.

Back in the mid '80s I worked a semester as a cook for 38 college girls at a sorority at Syracuse University. A great gig if there ever was one. The Japanese housemother, Mrs. M., opened my mind to the freshness of ginger and other Asian flavors. You can find five-spice powder and hot chili sauce in the Asian section of your supermarket.

1 1/2 tablespoons five-spice powder
1 1/2 tablespoons Creole Seasoning (page 167)
2 tablespoons soy sauce
2 tablespoons olive oil
4 strip steaks (10 to 12 ounces each)
1 tablespoon peanut oil
1 tablespoon chopped fresh ginger
1 tablespoon chopped garlic
Pinch each of kosher salt and black pepper
3/4 cup Mutha Sauce (page 165)
1/4 cup soy sauce
1/4 cup water
1 teaspoon Sriracha Hot Chili Sauce (optional)
1/4 teaspoon sesame oil
Juice of 1/8 lemon
1/2 cup sliced scallion

Steps:

  • Mix up the five-spice powder, Creole Seasoning, and soy sauce in a bowl. Add the oil to make a paste and rub it over the steaks. For best results, do this in the morning.
  • Throw the sauce together when you get home. Set a saucepan on the stove and turn the heat to medium. Heat up the peanut oil and cook the ginger and garlic with a pinch of salt and pepper for 2 minutes. Add the remaining ingredients, saving 2 tablespoons of the scallions for garnish, and stir to blend. Keep warm.
  • Fire up the grill. Scrape off the seasoning paste where it's heavy on the steaks, leaving a light, even coating. Cook the steaks to the desired temperature (see page 34). Ladle the sauce over the steaks, and toss on those scallions you saved, to give the whole dish a little color.
