2 medium potatoes, peeled and cubed
1/2 pound lean ground beef (90% lean)
1/2 cup canned diced tomatoes
1/3 cup medium salsa
2 tablespoons canned chopped green chilies
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 cup shredded cheddar cheese, divided
1 cup frozen corn
2 tablespoons butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, salsa, green chilies and 1/4 teaspoon salt and pepper; heat through. Stir in 1/2 cup cheese. Transfer to a greased 4-cup baking dish; sprinkle with corn., Drain potatoes and place in a large bowl. Mash potatoes with butter and remaining salt and pepper. Spread over top; sprinkle with remaining cheese., Bake at 350° for 20-25 minutes or until bubbly.

1-1/4 pounds lean ground turkey
1 small onion, chopped
2 garlic cloves, minced
1/2 teaspoon salt, divided
1 can (14-3/4 ounces) cream-style corn
1 can (4 ounces) chopped green chiles
1 to 2 tablespoons chipotle hot pepper sauce, optional
2-2/3 cups water
2 tablespoons butter
2 tablespoons half-and-half cream
1/2 teaspoon pepper
2 cups mashed potato flakes

Steps:

  • Preheat oven to 425°. In a large skillet, cook turkey, onion, garlic and 1/4 teaspoon salt over medium heat 8-10 minutes or until turkey is no longer pink and onion is tender, breaking up turkey into crumbles. Stir in corn, green chiles and, if desired, pepper sauce. Transfer to a greased 8-in. square baking dish. , Meanwhile, in a saucepan, bring water, butter, cream, pepper and remaining salt to a boil. Remove from heat. Stir in potato flakes. Spoon over turkey mixture, spreading to cover. Bake until bubbly and potatoes are light brown, 25-30 minutes., Freeze Option: Thaw unbaked casserole in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake at 425° as directed until a thermometer inserted in center reads 165°.

2 tablespoons olive oil
1 medium onion, diced
1 small green bell pepper, diced
1 tablespoon minced garlic
1 tablespoon chopped green jalapeño
1 pound ground beef
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Salt and pepper, to taste
2 cups tomatoes, chopped
1/2 cup cooked corn
1/2 cup black beans, rinsed
1/4 cup chopped cilantro
1 1/2 pounds sweet potatoes, peeled and cut in chunks
2 tablespoons butter
1/2 cup milk

Steps:

  • 1. Heat oil in a large pot over medium heat. Add onion and bell pepper; cook, stirring, for 10 minutes. Add garlic and jalapeño; cook for 2 minutes. Raise heat to medium-high; add beef and brown for 5 minutes.
  • 2. Add tomato paste and spices; cook, stirring, for 2 minutes. Add tomatoes; simmer until liquid reduces, 15 minutes. Add corn, beans, and 4 tablespoons cilantro. Spoon into a 9x9-inch baking dish.
  • 3. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes. Drain; mash with butter and milk. Spread mash over the meat mixture. Bake in a 400°F oven until brown, 30 minutes. Garnish with more cilantro.

I was never big on the traditional shepards pie. Very bland and hated mixed veggies. So I created my own. It is more southwestern.

MEAT MIXTURE
1 lb hamburger
1 small onion, diced
1-2 clove garlic, minced
1-3 tsp taco seasoning
CHOICE OF CENTERS
1 can(s) corn
1 can(s) cream of mushroom soup
OR
1 can(s) creamed corn
1 can(s) crean of mushroom soup
POTATO MIXTURE
2 c mashed potatoes (prepared as mash potatoes)
garlic powder, and chili powder
parmesan cheese
VARIATION OMIT CHILI PWDER AND ADD ONLY TACO SEASONING

Steps:

  • 1. Cook potatoes and make up as mash potatoes adding 1/2 tsp garlic powder and 1/2 tsp chili powder to the mashed potatoes.
  • 2. Brown hamburger in a frying pan and drain off extra grease. Add onions, garlic and chili powder and saute until onions are transparent. Take off the stove.
  • 3. In a 8x8 baking dish put the hamburger mixture. Over that pour the creamed corn (or the corn and cream of mushroom soup) and top with mash potatoes and add parmesan cheese over top. Cook for 35-30 minutes on 350 degrees. Note: I butter the inside of a piece of foil and put over top of dish before baking. That way the potatoes are not hard and the parnesan cheese doesn't stick to the foil.

One of my favorite ingredients - chipotle peppers - put the heat in this warm, comforting casserole. The original recipe called for just 2 chipotles, but we usually add more for extra heat.

1 1/2 lbs lean ground beef
1/2 cup chopped onion
2 cups water
3 tablespoons butter
1/2 teaspoon salt
3/4 cup milk
2 cups mashed potato flakes
1 (4 1/2 ounce) can chopped green chilies
1 cup shredded Mexican blend cheese
1 (10 ounce) can enchilada sauce
2 canned chipotle peppers, drained, seeded and chopped
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1 (11 ounce) can mexicorn
1/8 teaspoon paprika
1/3 cup sliced green onion
1 tomatoes, cut into wedges (optional)

Steps:

  • Heat oven to 400.
  • In large skillet, brown ground beef with onion over medium-high heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently.
  • Meanwhile, in medium saucepan, combine water, margarine and salt.
  • Bring to a boil.
  • Remover from heat.
  • Stir in milk and potato flakes.
  • Cover; let stand 5 minutes.
  • Stir in greel chiles and 1/2 cup of the cheese.
  • Drain beef mixture. Add enchilada sauce, chipotle chiles, cumin and oregano, mixing well.
  • Bring to a boil; remove from heat.
  • Spread beef mixture in ungreased shallow 2 quart casserole. Top with corn. Spread potatoes evenly over corn and top with remaining cheese.
  • Bake at 400 for 13 to 17 minutes or until cheese is melted and filling is bubbly. Sprinkle with paprika and green onions.
  • Top with tomato wedges; let stand 5 minutes before serving.

2 cups frozen corn
1/2 tsp. garlic powder
3/4 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Prepare potatoes as directed on package.
  • Meanwhile, brown meat in large nonstick skillet; drain. Return meat to skillet. Add taco seasoning mix; cook and stir 1 min. Add gravy and corn; mix well. Cook 3 to 4 min. or until heated through, stirring occasionally. Spread onto bottom of 11x8-inch baking dish sprayed with cooking spray.

2 tablespoons olive oil
1 medium onion, diced
1 small green bell pepper, diced
1 tablespoon minced garlic
1 tablespoon chopped green jalapeno pepper
1 lb 90% lean ground beef
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
salt
black pepper
2 cups chopped tomatoes
1/2 cup cooked corn
1/2 cup black beans, rinsed
1/4 cup chopped fresh cilantro
1 1/2 lbs sweet potatoes, peeled and cut into chunks
2 tablespoons butter
1/2 cup milk
fresh cilantro, to garnish

Steps:

  • Preheat oven to 400°F.
  • In a large frying pan, heat oil (medium heat). Add onion and bell pepper and saute for 10 minutes. Add garlic and jalapeno, cook for 2 minutes. Increase the heat to medium-high and add the ground beef, cook for about 5 minutes.
  • Add tomato paste, chili powder, cumin, cinnamon, salt, and pepper. Cook for 2 minutes.
  • Stir in chopped tomatoes and simmer 15 minutes to reduce liquid.
  • Mix in corn, beans and cilantro.
  • Spoon mixture into a 9 x 9 ovenproof baking dish.
  • Put sweet potatoes in a pot and cover with water. Bring to a boil, turn heat down to simmer and cook 30 minutes. Drain, then mash with butter and milk.
  • Spread mashed potatoes over meat mixture.
  • Bake 30 minutes.
  • Garnish with cilantro.

This rich and meaty classic shepherd's pie is made with a mixture of lamb and sirloin and topped with a creamy, cheesy mashed potato topping--it's sure to delight everyone at the table.

3 pounds Yukon Gold potatoes
1 tablespoon kosher salt
¼ cup milk
3 tablespoons salted butter, divided
1 cup shredded white Cheddar cheese
¼ cup sour cream
1 large egg yolk
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
1 tablespoon olive oil
1 cup diced onion
1 cup diced carrot
1 pound ground lamb
1 pound ground beef sirloin
3 tablespoons all-purpose flour
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1 cup beef stock
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen green peas
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
  • Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Heat olive oil and remaining 1 tablespoon butter in a large skillet over medium-high heat. Add onion and carrot and cook, stirring constantly, until onion begins to turn translucent, about 5 minutes.
  • Add lamb and beef and cook, crumbling with a spoon and stirring often until browned, about 5 minutes. Sprinkle meat mixture with flour, remaining salt and pepper, rosemary, and thyme. Cook, stirring constantly, for 2 minutes.
  • Add beef stock, tomato paste, and Worcestershire; cook, scraping any flavorful bits from the bottom of the skillet. Bring mixture to a simmer. Cook until thickened and vegetables are tender, about 8 minutes. Stir in peas. Transfer mixture to the prepared casserole dish and top with the prepared mashed potatoes.
  • Bake in the preheated oven until golden and bubbly around the edges, 25 to 30 minutes. Sprinkle with parsley and serve.
