2 pounds beef stew meat
1 jar (16 ounces) picante sauce
2 medium potatoes, peeled and cubed
4 medium carrots, sliced
1 large onion, chopped
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon ground cumin
1 tablespoon cornstarch
1/4 cup cold water

Steps:

  • In a large nonstick skillet coated with cooking spray, brown beef on all sides; drain. Transfer to a 3-qt. slow cooker. Stir in the picante sauce, potatoes, carrots, onion, chili powder, salt and cumin. , Cover and cook on low for 8-9 hours or until meat and vegetables are tender. , In a small bowl, combine cornstarch and water until smooth; stir into stew. Cover and cook on high for 15 minutes or until thickened.

2 tablespoons olive oil
1 pound extra-lean ground beef
1 cup coarsely chopped onion
1 cup thinly sliced celery
2 cloves garlic (finely minced)
1 tablespoon minced jalapeno peppers, or diced mild chile peppers
1 can (14.5-ounces) diced tomatoes (undrained)
1 teaspoon chili powder
1/2 teaspoon salt
Dash pepper
1/2 teaspoon ground cumin
4 medium potatoes (peeled, thinly sliced, about 1 1/2 to 2 pounds)
1 can (about 12- to 15-ounces) corn with peppers (drained)
2 cups (8 ounces) shredded sharp cheddar cheese

Steps:

  • Gather the ingredients. Heat the oven to 350 F.
  • Grease a 9 x 13 x 2-inch baking pan (2 1/2- to 3-quart size).
  • Heat the olive oil in a large skillet over medium heat.
  • When the oil is hot and shimmering, add the ground beef, onion, and celery.
  • Cook until the beef is browned and vegetables are tender, stirring frequently.
  • Add the garlic and jalapeño peppers; cook about 1 minute longer, stirring frequently.
  • Stir in the tomatoes, chili powder, salt, pepper, and cumin. Bring to a simmer.
  • In the prepared baking dish, arrange half of the sliced potatoes, then top with half of the corn, half of the ground beef mixture, and half of the cheese.
  • Repeat the layers, ending with the remaining cheese.
  • Cover the baking dish tightly with foil and bake for about 1 hour and 15 minutes, or until potatoes are tender.
  • Serve hot and enjoy.

4 medium Yukon Gold potatoes
2 teaspoons cider vinegar
1 teaspoon Worcestershire sauce
1 beef top round steak (1 inch thick and about 1-1/2 pounds)
1 tablespoon brown sugar
1 tablespoon chili powder
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon salt, divided
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper

Steps:

  • Pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high 4-5 minutes or until almost tender, turning once. Cool slightly., Meanwhile, mix vinegar and Worcestershire sauce; brush over steak. Mix brown sugar, chili powder, cumin, garlic powder, 1/2 teaspoon salt and cayenne until blended; sprinkle over both sides of steak., Cut potatoes into 1/2-in. slices. Sprinkle with pepper and remaining salt. Grill potatoes and steak, covered, over medium heat 12-17 minutes or until potatoes are tender and a thermometer inserted in beef reads 145° for medium-rare, turning occasionally., Cut steak into thin slices. 1 pound boneless beef chuck roast, cut into 1-inch cubes
1 pinch salt and ground black pepper to taste
1 pinch paprika, or more to taste
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 tablespoon salted butter
1 large onion, cut into chunks
5 cloves garlic, cut into small pieces
2 seeds whole cardamom seeds
1 large bay leaf
1 large tomato, cut into chunks
1 cup beef stock
1 cup sunflower oil
2 large potatoes, cut into 1-inch cubes

Steps:

  • Place beef in a bowl and season with salt, pepper, and paprika. Mix in flour to dredge the beef.
  • Heat olive oil and butter in a large pot over medium-low heat. Add onion and cook, stirring occasionally, until onion has softened and turned translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add cardamom, bay leaf, and beef. Increase heat to medium and cook until meat turns from red to pinkish-brown, 2 to 3 minutes.
  • Add tomatoes to the pot; stir and cook until soft, about 2 minutes. Add beef stock and cook until beef is no longer pink in the middle, 10 to 15 minutes.
  • Heat sunflower oil in a deep saucepan over medium heat. Lower potatoes carefully into the hot oil and fry until tender on the inside, 5 to 10 minutes. Transfer to a plate lined with paper towels to drain. Add potatoes to the beef-tomato mixture and cook for 2 more minutes before serving.

I'm a midwestern meat and potatoes kind of girl, and always liked beef stew, but it was always just "ok". (Actually really...

Number Of Ingredients 20

2 1/2-3 lb chuck, arm or blade roast, trim all fat, cut into large bite-sized pieces (i usually use chuck, though i've also used these other cuts and they work just fine, too)
2 Tbsp flour
1 Tbsp paprika
1 tsp chili powder
1 tsp garlic powder
2 tsp salt
4 Tbsp butter flavored crisco
2 onions, diced large
28 oz can stewed tomatoes with the juice, i use del monte original
1 Tbsp chili powder
1 large bay leaf, or 2 smaller ones
10 3/4 oz can beef broth
1/4 tsp cayenne powder, can add more but be careful! start with this amount ;)
1 Tbsp butter
1 tsp sugar
4 carrots peeled and sliced thickly, or about 16-20 baby carrots cut into thirds or fourths if larger
4-5 medium-sized red or yukon gold potatoes unpeeled and diced large bite-sized
11 oz can corn, drained, i ususally use white shoepeg (del monte is best)
1-2 Tbsp cornstarch, *optional to thicken to preference
1-2 Tbsp cold water, *optional to thicken to preference

Steps:

  • 1. In large ziplock baggie or large mixing bowl, combine flour, paprika, chili powder, garlic powder and salt. Add meat and shake/toss til all is coated. In large heavy-bottomed pot that has a lid, brown meat over med-high heat in the 4 tbsp Crisco. Add next 8 ingredients, cover and simmer for about 45 minutes, stirring only occasionally, til meat is tender. Add carrots and potatoes, recover and simmer another 25-30 minutes or til tender. Add corn, heat through. Remove bay leaf, or, leave it in there and whoever happens to get it has to do the dishes! ;). *Can add or sub peas and/or green beans if desired. You can also add 1 rib of celery, sliced, at the same time you add the potatoes and carrots if desired. **If you like it on the thick side like we do, just mix 1-2 tablespoons cornstarch with equal amount of cold water (I use 2 TbL. each), stir into pot while simmering to thicken even more. Simmer, stirring, for several minutes. Do this at the very end. Stir gently so you don't wreck the green beans if added. Some like it thin, though. So just make to your own preference.
  • 2. Serve with warm crusty french bread for sopping. Enjoy!! :D

1 teaspoon ground cumin
1/2 teaspoon salt
3 medium carrots, cut into 1-inch pieces
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups frozen cut green beans
1-1/2 cups frozen corn
1 can (4 ounces) chopped green chilies
Hot pepper sauce, optional
Hot cooked rice, optional

Steps:

  • In a 4-qt. Dutch oven, brown meat in oil over medium heat; drain. Add the next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour. Add carrots; return to a boil. , Reduce heat and simmer for 20 minutes. Add the tomatoes, beans, corn and chilies; return to a boil. Reduce heat; cover and simmer for 15-20 minutes or until beef and vegetables are tender. Season with hot pepper sauce if desired. Serve over rice if desired.

I used vegetables from the farmers market and just started creating this delicious and spicy stew! It's very easy to put together and very tasty! If you like fresh garlic you can add 2 cloves to meat while browning. For a less-spicy option, remove jalapeno seeds.

6 fresh jalapeno peppers, sliced into rings
