These kicked-up hash browns are de-lish! There's a slight bite, but it's not too hot. Super creamy and flavorful, they'd make a great side dish or a tasty addition to a potluck dinner.

1 large bag of frozen hash browns, country style, and thawed
1 medium chopped onion
1 medium chopped green bell pepper
1 regular size can of rotel tomatoes and chilies....hot
1 Tbsp celery seeds
1 Tbsp garlic salt
1/2 tsp cumin
1/2 tsp paprika, sweet mild
1 jar(s) hormel real bacon bits...do not use dried imitation bits
3 c finely shredded cheese (i use monterey/cheddar mix)
1 can(s) cream of celery soup
1 24 ounce container of sour cream
1 c finely shredded cheese as above

Steps:

  • 1. After the hash browns are thawed, mix all ingredients in a large bowl except the soup and sour cream, and the 1 cup of shredded cheese. Toss together well.
  • 2. In a small mixing bowl, whisk together the cream of celery soup and sour cream. Add this mixture to the potato mixture and thoroughly mix together.
  • 3. Spray a 9x13 casserole dish with oil and preheat the oven to 375 degrees. Pour the potato mixture into the casserole dish and spread out evenly. Place in preheated oven and bake for 1 hour.
  • 4. After an hour pull the casserole out of the oven and sprinkle the last cup of cheese over the top. Turn the oven off and put the dish back in the oven and let it stay about 10 minutes for the cheese to melt.
  • 5. This dish is spicy but not really hot. If you are adventurous and want more heat, add 1/2 cup of finely chopped jalapeno pepper;leave the seeds in for even more heat!!!

What a deliciously cheesy hash brown casserole. A potato lovers dream! They're creamy and tart with a bit of sweetness from the oven. A crunchy Corn Flake top puts it over the top. So simple to make, it would be a great breakfast or dinner side dish.

1 bag(s) frozen hash brown potatoes (2 lbs)
2 c shredded cheddar cheese
1/2 c melted butter
1 1/2 tsp salt
1 small onion (chopped)
1 can(s) cream of chicken or cream of mushroom soup, 10.75 oz.
1 c sour cream
2 c crushed Corn Flakes
1/4 c melted butter

Steps:

  • 1. As mentioned above, thaw hash browns (or use refrigerator style hash browns).
  • 2. In a large bowl, mix together hash browns, cheddar cheese, 1/2 cup melted butter, salt, onion, soup, and sour cream. Stir until evenly mixed.
  • 3. Spray a 9 x 11 or 9 x 13-inch pan or casserole dish with Pam or lightly grease the dish. This helps with clean up.
  • 4. Pour mixture from the bowl into the pan and spread evenly with a spoon. Do not pack down tightly.
  • 5. In a small bowl, mix together Corn Flakes and 1/4 cup melted butter. Mix together and spread on top of casserole.
  • 6. Bake at 350 degrees F for 45 minutes without a lid. The top should be lightly browned when done.

2 (1 lb) packages of oreida frozen hash browns with onions and peppers (If you can't find it, just get 2 packs of frozen hash browns)
2 (10 ounce) cans Campbell southwest-style pepper jack soup
1 (8 ounce) package cheddar cheese or 1 (8 ounce) package Mexican blend cheese

Steps:

  • Mix until soup, cheese, and potatoes are well blended.
  • Top with more shredded cheese.
  • Heat in 375 degree oven until all cheese is melted and potatoes are heated through.

12 ounces Mexican or Taco cheese
2 packages Ore-Ida Southwestern Hash Browns
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 can cream of chicken soup
1 stick of margarine, melted
Topping:
1 stick of margarine, melted
2-3 cups corn flakes

Steps:

  • Preheat the oven to 350°F. Mix together in a large bowl all of the filling ingredients until completely mixed. Spread into a 9"x13" casserole dish. Mix the topping ingredients together and spread over the top of the casserole. Bake at 350°F for 45 to 50 minutes.
