SOUTHWEST TURKEY BURGERS

8 slices turkey bacon or turkey bacon with black pepper or applewood smoked bacon
1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
Vegetable oil or olive oil, for drizzling
1/2 pound deli sliced pepper jack cheese
4 crusty kaiser rolls, split
1 cup sweet red pepper relish, found on condiment aisle - pepper jelly may be substituted
Red leaf lettuce
Spicy O-nuts, recipe follows

Steps:

  • Chop your garlic and veggies.
  • Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
  • While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
  • Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.

Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

2 pounds ground turkey
2 large eggs, beaten
¼ cup diced yellow onion
¼ cup plain dry bread crumbs
4 tablespoons garlic-infused olive oil, divided
3 tablespoons seeded and diced fresh jalapeno peppers
2 tablespoons Worcestershire sauce
2 teaspoons prepared yellow mustard
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
8 each whole wheat hamburger buns, toasted
½ cup guacamole
½ cup salsa

Steps:

  • Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
  • Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
  • Serve patties on toasted buns with guacamole and salsa.

1/2 cup seasoned bread crumbs
1/2 cup frozen corn, thawed
1 can (4 ounces) chopped green chiles
1 tablespoon reduced-sodium taco seasoning
1 pound lean ground turkey
4 teaspoons canola oil, divided
6 whole wheat hamburger buns, split
6 wedges The Laughing Cow queso fresco chipotle cheese, halved
Lettuce leaves, optional

Steps:

  • Preheat broiler. Mix first 4 ingredients. Add turkey; mix lightly but thoroughly. Shape into six 1/2-in.-thick patties., In a large cast-iron or other heavy skillet heat 2 teaspoons oil over medium heat. Cook burgers in batches, adding more oil as needed, until a thermometer reads 165°, 4-6 minutes per side. Keep warm., Meanwhile, place buns on a baking sheet, cut side up. Broil 3-4 in. from heat until toasted, about 30 seconds. Spread tops with cheese. Serve burgers in buns with lettuce, if desired.Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to a large freezer container; return to freezer. To use, cook frozen patties in a nonstick skillet in 2 tsp. oil over medium-low heat until a thermometer reads 165°, 6-8 minutes per side.

Spicy Southwest Turkey Burgers With Garlic Aioli image

This is a very zesty, garlicky, and spicy turkey burger that even my husband who normally does not like turkey burgers, well he raves about them. I like to put these on toasted buns and top the burger with pepper jack cheese. To kick up the spiciness to the next level add 1/2 teaspoon cayenne. If you can find it, I highly recommend using smoked salt. It adds an awesome smoky flavor to these, I always use it.

1 1/4 lbs lean ground turkey
3 garlic cloves, very finely chopped
1/2 red onion, finely chopped
1/2 teaspoon dried thyme leaves
1/2 small roasted red pepper, about 4-5 strips, diced
1 teaspoon dried chipotle powder
1 teaspoon ground cumin
1 -2 teaspoon cayenne hot sauce, several drops (recommended Tabasco)
1 teaspoon salt (to taste)
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1 teaspoon Worcestershire sauce
1/2 cup low-fat mayonnaise
2 garlic cloves, finely minced
1/2 teaspoon lemon juice
1/2 teaspoon Tabasco sauce or 1/2 teaspoon other pepper sauce
salt and pepper, to taste
1/2 teaspoon spicy mustard (optional)

Steps:

  • Chop your garlic and veggies.
  • Sauté garlic and onion in olive oil on low heat for 7-10 minutes until soft and very light golden brown.
  • Then combine turkey meat, garlic, onion, oil that you cooked garlic and onion in (very important), thyme, chipotle powder (or you could use one chipotle in adobo diced), roasted pepper, Worcestershire sauce, cumin, hot pepper sauce, or salt and pepper. Be careful not to overmix!
  • Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with a little olive oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like. slather buns with Garlic Aioli.
  • If you want to decrease the heat use plain old chili powder instead of chipotle and cut it back to 1/2 teaspoon.
  • For Garlic Aioli.
  • Mince garlic very fine, I like to sprinkle mine with salt and mash it but totally optional. Mix all ingredients together in small bowl, this will taste even better if it sits a while and will keep in the fridge for almost a week.
  • Pile cooked cheeseburgers into buns. Serve and enjoy!

10 ounces ground turkey
1/2 cup plus 2 tablespoons chopped green onions
6 tablespoons chopped fresh cilantro
2 teaspoons minced canned chipotle chilies
2 teaspoons ground cumin
2 9- to 10-inch flour tortillas
4 tablespoons purchased guacamole
Purchased fresh salsa

Steps:

  • Gently mix turkey, 1/2 cup green onions, 4 tablespoons cilantro, chipotle chilies, and cumin in medium bowl. Form into two 7-inch-long by 21/2-inch-wide patties. (Can be made 8 hours ahead. Cover and chill.)
  • Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Wrap tortillas in foil; grill until heated through. Unwrap tortillas; transfer to 2 plates. Spread 2 tablespoons guacamole down center of each tortilla. Place burgers atop guacamole. Sprinkle with 2 tablespoons green onions and 2 tablespoons cilantro. Fold each tortilla to partially enclose burger. Serve with salsa.

1/2 cup finely crushed tortilla chips (crushed in resealable plastic bag with mallet)
6 tablespoons chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 cup purchased chunky salsa
1/3 cup fresh corn kernels

Steps:

  • Oil grill rack. Prepare barbecue (medium-high heat). Combine turkey, crushed chips, 4 tablespoons cilantro, chili powder, salt, cumin, and pepper in large bowl. Using fork, mix together. Form 6 patties, each about 3 1/2 inches in diameter.
  • Mix together salsa, corn, and remaining 2 tablespoons cilantro in small bowl. Set aside. Grill burgers until cooked through, about 5 minutes per side. Divide among plates. Spoon salsa over burgers and serve.

  • Heat gas or charcoal grill. In large bowl, mix turkey, ranch dressing and taco seasoning mix. Shape mixture into 4 patties, about 4 inches wide and 3/4 inch thick.
  • Place patties on grill over medium heat. Cover grill; cook 13 to 15 minutes, carefully turning once, until meat thermometer inserted in center of patties reads at least 165°F. 1 1/3 lbs ground turkey breast
2 garlic cloves, finely chopped
1 large shallots or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh cilantro (I usually add a bit more as I'm a cilantro lover)
1/2 small bell pepper, any color, seeded and finely chopped
1 serrano peppers or 1 jalapeno pepper, seeded and finely chopped
2 teaspoons ground cumin
1 -2 teaspoon hot sauce
2 teaspoons McCormick's Montreal Brand steak seasoning
olive oil, for drizzling
4 cheese slices
4 kaiser rolls

Steps:

  • Chop your garlic and veggies. I throw all mine in my food processor and it makes easy work of this step.
  • Combine all ingredients through grill seasoning.
  • Divide mixture into 4 equal patties. Drizzle patties with olive oil to coat. Cook on grill or in skillet over med-high heat until done. (I've found that the veggies make this so moist that they're hard to overcook, although you'll still want to keep an eye on them).
  • Place sliced cheese over the patties the last two minutes of cooking.
  • OPTIONAL (but worth it): Slather with Black Bean Spread/Dip with Lime and Cilantro (recipe posted after this one). Enjoy the rest of the dip with tortilla chips with your burger.

I love using ground turkey instead of ground beef, but I hate how dry turkey burgers are unless they are "beefed" up. This recipe has evolved in my attempts to make turkey burgers juicy and delicious!

2 clove(s) garlic chopped
1/4 cup(s) green pepper diced
2 tablespoon(s) tomato paste
1/2 cup(s) whole kernel corn (frozen)
1/2 cup(s) canned black beans, drained & rinsed
2 tablespoon(s) olive oil
1 pound(s) ground turkey
1 cup(s) corn tortilla chips, crushed
1 teaspoon(s) ground cumin
1/2 teaspoon(s) cayenne pepper
1 - egg
1 teaspoon(s) salt
- sliced tomato & avocado
4 - kaiser rolls
CHIPOTLE MAYO
1/4 cup(s) canned chipotles in adobo sauce, chopped
1 cup(s) mayonaise

Steps:

  • Combine the chipotles and mayo in a small bowl. Cover and refrigerate until ready to assemble burgers.
  • In a saute pan heat oil, then add onions, garlic, and green pepper. Cook until vegetables are tender, 3 to 5 minutes. Add the tomato paste and stir until well blended. Remove pan from heat and add the corn and black beans. Stir carefully
  • In a large mixing bowl, combine the turkey, corn chips, and spices. Add the corn and black bean mixture and egg. Mix well.
  • Shape mixture into 4 burgers. Grill over medium high heat until cooked through (about 10-15 minutes). Assemble burgers placing one on each roll with the tomato and avocado slices and chipotle mayo.
