1-1/4 pounds lean ground turkey
1 small onion, chopped
2 garlic cloves, minced
1/2 teaspoon salt, divided
1 can (14-3/4 ounces) cream-style corn
1 can (4 ounces) chopped green chiles
1 to 2 tablespoons chipotle hot pepper sauce, optional
2-2/3 cups water
2 tablespoons butter
2 tablespoons half-and-half cream
1/2 teaspoon pepper
2 cups mashed potato flakes

Steps:

  • Preheat oven to 425°. In a large skillet, cook turkey, onion, garlic and 1/4 teaspoon salt over medium heat 8-10 minutes or until turkey is no longer pink and onion is tender, breaking up turkey into crumbles. Stir in corn, green chiles and, if desired, pepper sauce. Transfer to a greased 8-in. square baking dish. , Meanwhile, in a saucepan, bring water, butter, cream, pepper and remaining salt to a boil. Remove from heat. Stir in potato flakes. Spoon over turkey mixture, spreading to cover. Bake until bubbly and potatoes are light brown, 25-30 minutes., Freeze Option: Thaw unbaked casserole in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake at 425° as directed until a thermometer inserted in center reads 165°.

2 medium potatoes, peeled and cubed
1/2 pound lean ground beef (90% lean)
1/2 cup canned diced tomatoes
1/3 cup medium salsa
2 tablespoons canned chopped green chilies
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 cup shredded cheddar cheese, divided
1 cup frozen corn
2 tablespoons butter

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender., Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, salsa, green chilies and 1/4 teaspoon salt and pepper; heat through. Stir in 1/2 cup cheese. Transfer to a greased 4-cup baking dish; sprinkle with corn., Drain potatoes and place in a large bowl. Mash potatoes with butter and remaining salt and pepper. Spread over top; sprinkle with remaining cheese., Bake at 350° for 20-25 minutes or until bubbly.

2 tablespoons olive oil
1 medium onion, diced
1 small green bell pepper, diced
1 tablespoon minced garlic
1 tablespoon chopped green jalapeño
1 pound ground beef
1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
Salt and pepper, to taste
2 cups tomatoes, chopped
1/2 cup cooked corn
1/2 cup black beans, rinsed
1/4 cup chopped cilantro
1 1/2 pounds sweet potatoes, peeled and cut in chunks
2 tablespoons butter
1/2 cup milk

Steps:

  • 1. Heat oil in a large pot over medium heat. Add onion and bell pepper; cook, stirring, for 10 minutes. Add garlic and jalapeño; cook for 2 minutes. Raise heat to medium-high; add beef and brown for 5 minutes.
  • 2. Add tomato paste and spices; cook, stirring, for 2 minutes. Add tomatoes; simmer until liquid reduces, 15 minutes. Add corn, beans, and 4 tablespoons cilantro. Spoon into a 9x9-inch baking dish.
  • 3. Place sweet potatoes in a saucepan with water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes. Drain; mash with butter and milk. Spread mash over the meat mixture. Bake in a 400°F oven until brown, 30 minutes. Garnish with more cilantro.

1 medium onion, diced
1 small green bell pepper, diced
1 tablespoon minced garlic

1 tablespoon tomato paste
1 tablespoon chili powder
1 teaspoon ground cumin

Steps:

  • Preheat oven to 400°F.
  • In a large frying pan, heat oil (medium heat). Add onion and bell pepper and saute for 10 minutes. Add garlic and jalapeno, cook for 2 minutes. Increase the heat to medium-high and add the ground beef, cook for about 5 minutes.
  • Add tomato paste, chili powder, cumin, cinnamon, salt, and pepper. Cook for 2 minutes.
  • Stir in chopped tomatoes and simmer 15 minutes to reduce liquid.
  • Mix in corn, beans and cilantro.
  • Spoon mixture into a 9 x 9 ovenproof baking dish.
  • Put sweet potatoes in a pot and cover with water. Bring to a boil, turn heat down to simmer and cook 30 minutes. Drain, then mash with butter and milk.
  • Spread mashed potatoes over meat mixture.
  • Bake 30 minutes.
  • Garnish with cilantro.

FOR THE POTATOES:
2 1/2 pounds Yukon Gold or red skinned potatoes, peeled, cut into large chunks.
2 tbls unsalted butter
1 1/4 cups hot milk
salt and pepper
FOR THE MEAT MIXTURE:
1 tbls. vegetable oil
2 pounds ground beef
1 large onion, chopped
3 large carrots (12 oz), peeled, trimmed and coarsely chopped.
1 tbls. unsalted butter
1 tbls. all-purpose flour
2 cups beef broth or stock
1 tsp. dried thyme
1/2 tsp. ground cayenne pepper
1 bay leaf
1 cup frozen corn kernels
1 8 oz. can tomato sauce
2 tbls. tomato paste
1/2 cup water
1 - 2 tsp. hot pepper sauce
1 tsp. kosher salt
1/2 - 1 tbls. minced jalapeno pepper

Steps:

  • 1. In a large pot of boiling water, cook potatoes until tender, about 25 minutes. Drain. 2. While potatoes are cooking, prepare the meat and sauce. In a large pot of Dutch oven, heat 1/2 tbls. oil and brown meat. When done, transfer meat to a colander to drain excess fat. 3. Add remaining 1/2 tbls oil to the pot. Add onion and carrots and cook over moderate heat until onions are tender, about 8 minutes. 4. Add butter, and when melted, stir in flour until thoroughly absorbed. 5. Add broth, thyme, cayenne pepper and bay leaf. Stir to combine. Bring mixture to a boil. Reduce the heat and simmer for 5 minutes, stirring frequently. 6. Mix in corn, tomato sauce, tomato paste, water, hot pepper sauce and salt. Bring sauce to a boil, then simmer for an additional 10 minutes. Remove bay leaf. 7. Mix in browned meat and jalapeno. 8. Transfer mixture to a greased 13X9 inch (with at least 2 1/2 inch sides) glass baking dish. 9. Preheat oven to 400F. 10. Place warm potatoes in a large bowl. Add butter and 1 cup hot milk and mash with a potato masher. Add enough milk so potatoes are creamy and fluffy, but not thin. Season to taste with salt and pepper. 11. Spread mashed potatoes over the meat layer in the baking dish and smooth the top. The dish can be made up to 1 day ahead; cover and refrigerate. Bring to room temperature before baking. 12. Place dish in the top half of oven, uncovered, and bake until bubbling hot and potatoes begin to brown around the edges, about 20 - 25 minutes. (If juices bubble over, pace a baking sheet on the rack below). 12. If desired, place dish under the broiler for 3 - 5 minutes to bronw the top. Note: If prepared ahead and frozen, bake, thawed at 350F for about 1 hour or until bubbling hot and beginning to brown on top.

One of my favorite ingredients - chipotle peppers - put the heat in this warm, comforting casserole. The original recipe called for just 2 chipotles, but we usually add more for extra heat.

1 1/2 lbs lean ground beef
1/2 cup chopped onion
2 cups water
3 tablespoons butter
1/2 teaspoon salt
3/4 cup milk
2 cups mashed potato flakes
1 (4 1/2 ounce) can chopped green chilies
1 cup shredded Mexican blend cheese
1 (10 ounce) can enchilada sauce
2 canned chipotle peppers, drained, seeded and chopped
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1 (11 ounce) can mexicorn
1/8 teaspoon paprika
1/3 cup sliced green onion
1 tomatoes, cut into wedges (optional)

Steps:

  • Heat oven to 400.
  • In large skillet, brown ground beef with onion over medium-high heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently.
  • Meanwhile, in medium saucepan, combine water, margarine and salt.
  • Bring to a boil.
  • Remover from heat.
  • Stir in milk and potato flakes.
  • Cover; let stand 5 minutes.
  • Stir in greel chiles and 1/2 cup of the cheese.
  • Drain beef mixture. Add enchilada sauce, chipotle chiles, cumin and oregano, mixing well.
  • Bring to a boil; remove from heat.
  • Spread beef mixture in ungreased shallow 2 quart casserole. Top with corn. Spread potatoes evenly over corn and top with remaining cheese.
  • Bake at 400 for 13 to 17 minutes or until cheese is melted and filling is bubbly. Sprinkle with paprika and green onions.
  • Top with tomato wedges; let stand 5 minutes before serving.

1 large onion, chopped
2 garlic cloves, minced
1 carrot, shredded
1/2 lb button mushroom, cleaned and sliced
1 lb extra lean ground sirloin
1 teaspoon dried oregano, crushed
1/2 teaspoon dried thyme, crushed
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
1 tablespoon unbleached all-purpose flour
1 cup canned fat free low-sodium beef broth (240 ml)
1/3 cup dry red wine or 1/3 cup additional beef broth
2 tablespoons tomato paste (30 ml)
vegetable oil cooking spray
1 lb russet potato, peeled and cut into chunks (480 g)
3 -4 tablespoons skim milk (45 to 60 ml)
1/2 teaspoon salt (optional)
1 -2 tablespoon minced pickled jalapeno pepper, to taste (15 to 30 ml)
1 tablespoon minced fresh cilantro or 1 tablespoon flat leaf parsley
1 tablespoon minced scallion (15 ml)
1/4 teaspoon paprika (1.25 ml)
3 tablespoons shredded 2% low-fat monterey jack cheese (30 g)

Steps:

  • In a large nonstick skillet, sauté onion, garlic, carrot, and mushrooms over medium heat, stirring occasionally, until vegetables are wilted and pan liquids are absorbed, about 6 minutes.
  • Crumble in the ground sirloin and continue to cook, stirring occasionally, until beef is well browned, about 5 minutes. Drain off any excess fat.
  • Add oregano, thyme, cumin, and pepper. Sprinkle flour over the beef mixture and stir. Add beef broth, wine, and tomato paste. Stir until well combined.
  • Line a 2-quart (2 l) casserole with a piece of heavy-duty aluminum foil large enough to completely enclose the casserole. Lightly spray the foil inside the casserole with cooking spray.
  • Transfer meat mixture to the prepared casserole. Set aside while you prepare the topping.
  • Place the potatoes in a pot of boiling water to cover. Reduce heat and simmer until tender when pierced with a fork, 15 to 20 minutes. Drain.
  • Mash the potatoes, adding sufficient skim milk until the potatoes are fluffy. Stir in the salt (if using), minced jalapeño chiles, cilantro, and scallion. Spoon the potato mixture onto the top of the meat mixture, making swirls with the back of a spoon. Sprinkle with paprika and cheese.
  • Cover the casserole and freeze until solid. Lift the food out of the casserole (the foil will adhere), wrap securely in the foil, then slip the package into a self-sealing plastic freezer bag or overwrap in additional foil or freezer paper. Label with the casserole name and the date. Use within 3 months.
  • When ready to bake, unwrap the casserole and place back in the casserole dish to bake. Defrost completely. Then bake at 375°F (190°C) for 40 to 45 minutes, until golden and bubbly. (Since the casserole will be full, it may bubble over, so place a sheet of aluminum foil under the casserole to catch any drips.) Serve hot.
