Number Of Ingredients 11

2 tablespoons salsa
1 to 2 jalapeno peppers, seeded
1 garlic clove
2 tablespoons chopped onion
1 can (16 ounces) refried beans
1/2 teaspoon ground cumin
1 tablespoon chopped fresh cilantro, optional
1 cup cubed cooked chicken
1 cup shredded cheddar cheese, divided
10 to 12 flour tortillas (6 inches)
Sour cream and additional salsa, optional

Steps:

  • In a food processor; combine the first eight ingredients and 1/2 cup cheese; cover and process until smooth. Spread evenly over tortillas. Roll up and place seam side down in a greased 13x9-in. baking dish. , Cover and bake at 350° for 20 minutes or until heated through. Sprinkle with remaining cheese; let stand until cheese melts. Serve with sour cream and salsa if desired.

2 cups water
1 cup quinoa
1 (16 ounce) can black beans, rinsed and drained
1 red bell pepper, chopped
½ cup fresh spinach leaves
2 tablespoons barbeque sauce
1 tablespoon chopped garlic
1 pinch ground cumin, or more to taste
1 pinch cayenne pepper, or more to taste
¼ cup shredded Cheddar cheese
4 (10 inch) flour tortillas, warmed

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • While quinoa cooks, mix black beans, red bell pepper, spinach, barbeque sauce, garlic, cumin, and cayenne pepper together in a saucepan over medium heat. Stir in Cheddar cheese and cook, stirring occasionally, until the cheese is completely melted, 5 to 10 minutes. Remove from heat and stir in cooked quinoa.
  • Place tortillas on a flat work surface. Spoon filling in a line across the middle of each tortilla; fold in opposing edges to overlap the filling. Roll up as you would burritos.

While visiting my mom we found this recipe in a magazine. We tweaked on it a little bit, and instead of shredding the chicken, we just cubed it and rolled it up in the tortilla with everything else. It was delicious! My brother LOVED this! He couldn't get enough of it.

This is a really good recipe from my Taste of Home collection. The recipe states to blend filling ingredients in a food processor, but I sometimes just mix the filling ingredients together to retain the different textures. Either way, it is delicious.
