How to make Southwest Steak and Potato Soup

1 1/2 pounds boneless beef sirloin steak, cut 1 inch thick
2 medium potatoes, cut into 1-inch pieces
2 cups loose-pack frozen cut green beans
1 small onion, sliced and separated into rings
1 1/2 cups thick and chunky salsa
1 14 ounce can lower-sodium beef broth
1 teaspoon dried basil, crushed
2 cloves garlic, minced
1/3 cup reduced-fat shredded Monterey Jack or reduced-fat Mexican blend cheese (optional)

Steps:

  • Trim fat from meat. Cut meat into 1-inch pieces. Set aside.
  • In a 3-1/2- or 4-quart slow cooker, combine potatoes, green beans, and onion. Add meat. In a medium bowl, stir together salsa, broth, basil, and garlic. Pour salsa mixture over meat and vegetable mixture in cooker.
  • Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  • If desired, sprinkle individual servings with cheese.

Southwest sweet potato soup
1 TB olive oil
½ cup chopped onion
2 cups peeled diced sweet potatoes
1 cup peeled diced baking potato
4 cups chicken or vegetable stock
1 cup frozen con kernels
1 roasted red bell pepper, diced
½ jalapeno pepper, seeded and chopped

Steps:

  • Heat oil over medium heat. Add onions and cook until transparent but not browned. Add potatoes and cook a few minutes longer. Add stock, heat to boiling. Reduce heat and simmer uncovered for about 20 minutes or until potatoes are tender. Puree soup with immersion blender. Add corn and peppers. Cook over medium heat until heated through, about 5 minutes.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 (15 ounce) can green enchilada sauce
1/2 cup red onion
1/4 cup poblano pepper
1 cup corn
1 cup black beans
1 cup cooked chicken
4 ounces sour cream
1/4 teaspoon dried chipotle powder
1/4 teaspoon cumin
3 garlic cloves
salt and pepper
3 tablespoons extra virgin olive oil
1 cup shredded cheese
1/2 cup green onion

Steps:

  • Finely chop the red onion, pablano pepper, green onions and garlic.In a large skillet saute the red onions, pablano, garlic in the olive oil. Once they are tender add the potatos and brown lightly. Add the cooked chicken, Enchilada sauce, corn, Black Beans, Cumin, Chipolte, salt and pepper. Simmer for 30 minutes. Add sour Cream and stir until blended. Serve in bowls and garnish with green onions and Shreded cheese.

This soup imparts a great southwestern flavor. Serve with a salad and bread as a meal. You can skip the jalapeno and use pepper jack cheese if you prefer.

6 green onions, chopped using white and light green parts
3 tablespoon(s) butter
2 tablespoon(s) flour
4 cup(s) milk, heated
1/3 cup(s) canned mild green chiles, chopped
3 medium russet potatoes, peeled and diced
1 - fresh jalapeno, seeded and minced (can use minced pickled jalapeno if you prefer)
1 cup(s) monterey jack cheese, shredded (if you prefer, skip the jalapeno and use pepper jack cheese)

Steps:

  • In a dutch oven, saute green onions in butter over medium heat. When onions have softened, add flour and cook for approx. 3-4 minutes.
  • Add the hot milk to the onion mixture and cook, stirring constantly, until the soup begins to bubble.
  • Reduce heat to low and add chiles and diced potatoes. Season with salt to taste.
  • Simmer for approx. 10 minutes or until the potatoes are just tender. Remove 1 cup of soup and puree in a blender and return puree to pot. Add the jalapeno pepper and cook an additional 5 minutes.
  • Serve soup with cheese sprinkled on top and add additional chopped green onion for garnish.
