1 avocado, halved
1 clove garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup olive oil
1 tablespoon fresh cilantro
1 lime, juiced
1 head lettuce, chopped
1 cup bell pepper, chopped
¼ cup fresh cilantro
15 oz black beans, 1 can
½ cup red onion, chopped
15 oz corn, 1 can
¼ cup scallion
¾ cup tomato, chopped

Steps:

  • Add all dressing ingredients to a blender, blend until smooth.
  • In a large bowl add lettuce, peppers, cilantro, beans, onion, corn, green onion, and tomatoes.
  • Top with prepared dressing; toss to coat.
  • Enjoy!

A crisp and refreshing southwestern salad tossed in a delicious creamy avocado cilantro-lime dressing.

1 large head romaine
15 oz. can black beans
1 orange bell pepper
10 oz. cherry/grape tomatoes (about 1 pint)
2 cups sweet corn, cooked
5 green onions
1 cup loosely packed cilantro (stems removed and roughly chopped)
1/2 avocado (or 1/2 cup plain vegan yogurt)
2 Tbsp. fresh lime juice (about 1 lime, more to taste)
1-2 garlic cloves
3 Tbsp. olive oil (for oil-free, sub a little water to thin)
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave & cumin to taste

Steps:

  • Make the dressing: Blend all dressing ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary. (I like the addition of a little cumin, and also agave to sweeten.)
  • Chop romaine, bell pepper, tomatoes, and green onions. Rinse and drain black beans.
  • Place all salad ingredients in a large bowl.
  • Toss with desired amount of dressing.*

This is a very good salad--nice to have the southwest flavor and still have the healthy benefits. Only 2 tsp olive oil!

2 cups frozen corn kernels
1 red bell pepper, diced
1 cup diced jicama (I left this out)
1 (15 ounce) can black beans, drained and rinsed
2 tablespoons fresh lime juice
1 tablespoon mirin
2 teaspoons olive oil
1 chipotle chile in adobo, chopped (about 2 tsp)
2 tablespoons chopped cilantro, plus more for garnish
1/4 teaspoon ground cumin
sea salt

Steps:

  • If using fresh corn, either grill the corn on an outdoor grill, roast in the oven or cook briefly in boiling water.
  • Slice the kernels from the cobs.
  • (If using frozen corn, thaw it under cool running water.) In a large bowl, combine corn, bell peppers, jícama, if you decide to use it, and black beans.
  • In a small bowl, stir together lime juice, mirin, olive oil, chipotles, cilantro, cumin and salt.
  • Pour over the vegetables and toss to mix.
  • Chill for at least 30 minutes to allow flavors to blend.
  • Garnish with a few cilantro leaves before serving.
