1/2 cup butter
6 medium sweet potatoes, peeled and sliced
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Melt butter in a large skillet over medium-low heat.
  • While butter is melting, in a small bowl combine sugar, cinnamon, nutmeg and salt.
  • Add sliced potatoes to melted butter and turn to coat.
  • Sprinkle sugar mixture over potatoes, stir to coat.
  • Cover skillet, reduce heat to low.
  • Stirring occasionally, Cook for 50-60 minutes (depending on how thick you sliced your potatoes), or until potatoes are tender.

¼ cup butter or margarine, melted
½ cup packed brown sugar
1 ¼ cups cinnamon red hot candies
¾ cup water

Steps:

  • Place the sweet potatoes into a large saucepan with enough water to cover. Bring to a boil, and cook over medium heat until tender, about 25 minutes. Drain water, and place potatoes in a large casserole dish.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the butter, brown sugar, red hot candies, and water. Pour over the sweet potatoes in the dish.
  • Bake for 1 hour in the preheated oven, until sweet potatoes are soft, and the candies are melted. After this, you may top with marshmallows, and return the dish to the oven for 10 minutes to toast them.

2 sweet potatoes (about 1 pound), sliced 1/2 inch thick
2 tablespoons vegetable oil, plus more for frying
1 tablespoon plus 1 teaspoon paprika
Kosher salt and freshly ground pepper
1 1/2 cups buttermilk
1/4 cup hot sauce
1 14-ounce package extra-firm tofu, drained, cut lengthwise into eight 1/2-inch-thick slices and patted dry
1/2 cup spicy ketchup
1/4 cup packed light brown sugar
1 tablespoon apple cider vinegar
1 1/2 cups all-purpose flour
Coleslaw, for serving

Steps:

  • Preheat the oven to 425 degrees F. Toss the sweet potatoes with the vegetable oil, 1 teaspoon paprika, 1/4 teaspoon salt and a few grinds of pepper on a baking sheet. Bake, flipping halfway through, until lightly browned and tender, about 30 minutes.
  • Whisk the buttermilk and hot sauce in a shallow dish. Add the tofu, turning to coat; marinate 10 minutes. Whisk the ketchup, brown sugar and vinegar in a bowl; set aside. Whisk the flour, the remaining 1 tablespoon paprika and 1/2 teaspoon each salt and pepper in a large bowl; stir in 1 tablespoon of the marinade to make clumps.
  • Heat 2 inches vegetable oil in a large pot over medium heat until a deep-fry thermometer registers 350 degrees F. Dip the tofu in the flour mixture, turning to coat, dip back in the marinade, then re-dip in the flour to coat with the clumpy bits; transfer to a plate. Fry the tofu in two batches, flipping halfway through, until golden brown and crisp, 3 minutes. Transfer to a rack; season with salt. Serve with the sweet potatoes, coleslaw and ketchup sauce.

1/2 cup Dijon mustard, divided

8 medium sweet potatoes (about 5 pounds)
3 cups coleslaw mix
1/2 cup fat-free plain Greek yogurt

2 tablespoons cider vinegar

1/4 teaspoon garlic salt

Steps:

  • Place roast in a 3-qt. slow cooker. In a small bowl, mix 1/3 cup mustard, brown sugar, garlic powder, cayenne and 1/4 teaspoon salt; brush over pork. Add broth; cook, covered, on low until meat is tender, 6-8 hours., Meanwhile, preheat oven to 400°. Scrub potatoes; pierce several times with a fork.   • Drop potatoes in boiling water covered by 3 to 4 inches. Remove before they are thoroughly cooked (about 15 to 20 minutes). Cool potatoes and then peel. And cut into pieces 2 inches long and 1/2 inch thick.
  • Heat oil to 375°F

6 to 8 medium red sweet potatoes (I had 9 long, skinny ones), peeled and cut into chunks or thick slices
1 stick salted butter, 1/2 cup
2 cups sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Peel and chop potatoes as desired; then rinse and drain well in a colander. In a mixing bowl, whisk together the sugar, cinnamon, nutmeg, and salt. Set aside. Cut butter in chunks and melt in a large skillet (that has a cover) over medium heat. Add potatoes and stir to coat in the butter. Pour the sugar mixture over the potatoes and stir until coated well. Cover the skillet and cook over medium heat for 30-40 minutes, or until largest potato pieces are tender, stirring occasionally. (I use a toothpick to check for doneness.) 8 medium sweet potatoes
4 Tbsp bacon drippings

Steps:

  • 1. Clean 8 medium sized baking sweet potatoes, not getting any more water on them than you can help. Usually they have been prewashed so cleaning with a paper towel should be enough. If wetting is require permit them to dry completely before going to step 2
  • 2. Trim ragged ends as necessary. Line a 13x9x2 baking pan with foil and sit near you on counter top. Put prepared potatoes in bowl near you on counter top. PREHEAT OVEN TO 425 Degrees
  • 3. Have a small bowl of cooled bacon drippings near potatoes and lined baking pan. Take a paper towel and dip it into bacon drippings. Rub dripping on potatoes coating each one well. Place potatoes in foil lined baking pan.
  • 4. When oven has pre heated to 425 degrees, place pan of coated potatoes in oven and set timmer for one hour.
  • 5. WHEN TIMER ALERT GOES OFF AFTER ONE HOUR TURN OVEN OFF BUT DO NOT OPEN OVEN DOOR. LET POTATOES REMAIN IN OVEN AT LEAST ONE MORE HOUR. THIS IMPROVES THE TASTE.
  • 6. Serve with brown sugar, unsalted butter, and a sprinkle of cinnamon. Top with some chopped, toasted pecans if desired.

For us down along this way, that's most often made using Steen's pure cane syrup, a well loved & local favorite from Louisiana. Of course, if you don't have access to Steen's you could certainly substitute another brand of cane syrup, pure maple syrup, sorghum syrup, or even some molasses, loosened with a bit of corn syrup. A good southern whiskey will work just fine in this recipe too. Jack Daniels comes to mind. Use what you have & like.

- kosher salt, to taste
1 stick(s) butter, salted, cold, divided
1/4 cup(s) steen's pure cane syrup
1 1/2 cup(s) dark brown sugar, firmly packed, divided
1/4 teaspoon(s) cinnamon
1/4 teaspoon(s) cloves
5 dash(es) freshly grated nutmeg (about 5 passes on a microplane)
1/4 cup(s) pecans, chopped
1/2 - 3/4 cup(s) bourbon

Steps:

  • Bake the sweet potatoes at 400 degrees F. for about 45 - 50 minutes, or just until fork tender but not mushy. Can be done in advance; can also boil whole until tender. Butter a 9 x 9" casserole dish; set aside. Once sweet potatoes are cooled, peel, cut into 1/2" rounds & layer into the casserole dish, sprinkling a few light pinches of salt in between the layers.
  • Preheat the oven to 325 degrees F. Melt 1/2 of the butter in a skillet, stirring in the cane syrup & 1/2 of the brown sugar until blended. Stir in the cinnamon, cloves, nutmeg & pecans. Remove from the heat & stir in the bourbon. Taste & adjust as needed.
  • Pour the butter & bourbon mixture on top of the sweet potatoes. Cut the remaining butter into thin slices & spread over the top of the sweet potatoes. Sprinkle the rest of the brown sugar all over the top.
  • Bake, uncovered at 325 degrees F., basting a few times with a spoon or a baster, for about 25 - 30 minutes, or until bubbly & thickened.
  • NOTE: I call for the regular salted butter in this recipe since I used fresh, raw sweet potatoes & feel the salted butter more appropriate. If you use unsalted butter, you'll probably want to use some additional salt sprinkled on the layers. Also, if you substitute canned sweet potatoes or canned yams for the fresh sweet potatoes, understand that those are very often already heavily sweetened & you may want to adjust the brown sugar accordingly.
