Down here in Alabama, Southern Style White Beans would be a main dish, usually served with turnip greens and a large chunk of cornbread. However, it makes a delicious side as well. Many love to top a bowl of these beans with corn relish, tobasco sauce, or clear pepper sauce. Even better the next day!

Number Of Ingredients 4

4 cups dried white beans, rinsed and drained
1 ham hocks or 1 ham bone, with some ham still remaining
2 teaspoons salt
black pepper or red pepper

Steps:

  • Place beans in a large pot. Fill water to four inches over the beans.
  • Bring to a boil over medium high heat on top of stove.
  • Add ham hock or bone, salt and pepper.
  • Reduce and simmer covered for three hours or until beans are soft.
  • Add water as needed to keep beans covered.
  • I have always eaten these beans cooked extra-soft but you may keep them a little firmer!

These are good with rice or good ole cornbread!

2 lb great northern beans, dry
2 Tbsp creole seasoning
salt, to taste
3 slice bacon, uncooked

Steps:

  • 1. First, rinse dry beans and place in stock pot. Cover with plenty of water.
  • 2. Add creole seasoning, salt, and bacon.
  • 3. Let boil until beans are tender. You have to keep an eye on them while they cook...you may have to add more water throughout cook time.
