1 cup all-purpose flour (130 grams)
1/4 white sugar (50 grams)
1 tablespoon baking powder
1 teaspoon salt
1 cup water or almond milk (235 milliliters)
1 egg, beaten
1/3 cup oil (80 milliliters)

Steps:

  • Preheat the oven to 400°F or 200°C.
  • Whisk together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.
  • Add water, egg, and oil. Mix until well incorporated.
  • Using a ladle to pour into a each cup of the muffin pan.
  • Bake for 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely before removing from pan.

1/4 cup Vegetable oil or shortening
1 large Egg
1 1/2 cups Buttermilk (or 1 1/3 cups milk)
2 cups Martha White® Self-Rising Enriched Yellow Corn Meal Mix
1 teaspoon of salt
Cooking or baking spray

Steps:

  • Preheat oven to 450ºF degrees. Grease a 12-muffin muffin tin and set aside.
  • Add all dry ingredients to a bowl and whisk together. Set aside.
  • Then, whisk an egg in a medium bowl, and add the remaining wet ingredients: vegetable oil, buttermilk, and cornmeal mix.
  • Pour the dry ingredients into the wet ingredients and stir to combine.
  • Evenly fill muffin tins ¾ of the way full with the cornbread batter.*
  • Place in the preheated oven and bake 20 to 25 minutes or until golden brown.

2 cups white lily self-rising buttermilk cornmeal mix
1 1/2 cups buttermilk
1/4 cup crisco pure vegetable oil
1 large egg
1/4 cup sugar
3 tablespoons butter, softened

Steps:

  • Heat oven to 425°F Take a muffin pan and using Crisco All-Vegetable Shortening, coat each individual muffin cup with the shortening.
  • Mix all ingredients in a large bowl. Stir till moistened and lumpy.
  • Pour batter into each cup till the cup is 2/3 full.
  • Bake 20 to 25 minutes.

2 cups cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking soda
1 3/4 cups buttermilk
1 egg, beaten
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Combine cornmeal, four, sugar, salt, and baking soda in a large bowl, mixing well.
  • Combine buttermilk, egg, and butter, mixing well.
  • Add to dry ingredients stirring just until moistened.
  • Spoon into greased muffin pans. Bake at 425 for 15 minutes or until edges begin to brown.
  • Yield is 1 dozen regular muffins or 6 Texas sized.
