GRILLED CRAB AND CHEESE SANDWICH

2 tablespoons mayonnaise
1 tablespoon lemon juice
1/4 teaspoon cayenne pepper
1/2 cup shredded Gruyere
Salt and pepper
1 can crabmeat, drained
4 slices sourdough bread
2 tablespoons butter

Steps:

  • In a small bowl, combine mayonnaise, lemon juice, cayenne pepper, grated cheese, and salt and pepper, to taste. Add crabmeat to mayonnaise mixture and stir to combine. Spread crabmeat mixture on bread. Cover with a second piece of bread. Melt butter in a medium skillet over medium heat. Add sandwich and brown for 2 minutes; flip and continue to brown for 2 to 3 more minutes. Repeat with second sandwich. Slice and serve.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3 tablespoons mayonnaise
5 teaspoons minced celery
1 tablespoon minced green onion
2 English muffins, split
4 slices tomato
4 slices cheddar cheese (1/2 ounce each)
4 slices Monterey Jack cheese (1/2 ounce each)
Paprika

Steps:

  • In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

Oh my goodness ... this sandwich is intoxicating! I always have canned crab meat in the pantry, and was surfing the web looking for something new to do with it. This recipe graciously shared on the cooking blog Hugging the Coast.

6 ounces crabmeat, well drained
1/3 cup cubanelle pepper, finely diced
2 green onions, minced (tops only)
1 stalk celery, finely diced
3 tablespoons mayonnaise
1 teaspoon pepper vinegar
1/4 teaspoon black pepper
4 thick slices light-textured grainy bread
butter, for spreading
paprika, for dusting
6 ounces shredded sharp cheddar cheese

Steps:

  • Combine the first seven ingredients (crab meat to black pepper) in a bowl.
  • Toast the bread lightly on both sides. Heat a skillet or griddle over medium-low heat.
  • Generously spread two slices of bread with butter, dust generously with paprika, and place them butter side down in the pan. Distribute 1/4 of the cheese on each of the two slices. Spread half the crab salad on each; top with remaining cheese. Butter and sprinkle paprika on the remaining bread and place on top. Press down very gently, if necessary.
  • Cook sandwich until bottom is crisp; turn over carefully and cook until other side is crisp. Cut with a serrated or very sharp knife, taking care not to press out the filling. Serve with bread & butter pickles.

1 3/4 cups mayonnaise
6 large eggs
2 tablespoons honey mustard
2 tablespoons fresh parsley
Juice from 1/2 lemon
1/2 ounce baking powder
1/2 ounce seafood seasoning, such as Old Bay
1/2 ounce Worcestershire sauce
3/8 ounce hot sauce
3/8 ounce sriracha
1/8 ounce celery seed
2 1/4 cups panko breadcrumbs
2 pounds jumbo lump crabmeat
Unsalted butter, for cooking

Steps:

  • Combine the mayonnaise, eggs, honey mustard, parsley, lemon juice, baking powder, seafood seasoning, Worcestershire, hot sauce, sriracha and celery seed in a large bowl. Whisk together, making sure to break up the eggs and combine all the ingredients thoroughly. Add the panko and incorporate it. Let the mixture set for 10 minutes so the panko absorbs as much moisture as possible. Add the jumbo lump crabmeat (if desired, substitute with smaller lump crabmeat to keep your cost down). Mix in the crab gently with your hands so that you don't break up the crab lumps. Refrigerate until the mix solidifies, about 20 minutes.
  • Add some butter to a nonstick pan over medium-high heat. Use a 4-ounce ice cream scoop to scoop a level crab cake into the pan. Cook the crab cakes in batches until golden brown on one side, 4 to 5 minutes. Then flip with a spatula and cook until the other side is golden brown, 4 to 5 minutes more.

3 tablespoons mayonnaise (or tartar sauce)
2 tablespoons minced onions
1/2 cup shredded gouda cheese (or use cheddar)
1/4 teaspoon fresh ground black pepper
1/4 teaspoon ground mustard
8 slices bread
3 -4 tablespoons butter, sofetened

Steps:

  • in a small bowl, mix crab, mayonnaise (or tartar sauce), onion, cheese, ground mustard and pepper.
  • Butter outside of sandwich of each slice of bread. Place 1/4 of the crab mixture on the unbuttered side of 4 slices of the bread and sandwich together with remaining 4 slices of bread (buttered sides out).
  • Heat large saute skillet to medium heat and cook sandwiches on both sides, until cheese is melted and bread is golden brown.
