5 cups white distilled vinegar
3 cups granulated sugar
2 tablespoons kosher salt
1 tablespoon whole cloves
1 tablespoon mustard seeds
1 tablespoon whole black peppercorns
1 teaspoon yellow mustard powder
1 teaspoon ground turmeric
Pinch crushed red pepper flakes
1 bay leaf
4 green tomatoes, finely diced
2 green bell peppers, finely diced
1 red bell pepper, finely diced
1 large sweet onion, such as Vidalia, finely diced
1/2 head cabbage, shredded (about 6 cups)

Steps:

  • Clean and sterilize 2 quart-size canning jars with lids.
  • Add the vinegar, sugar, salt, cloves, mustard seeds, peppercorns, mustard, turmeric, red pepper flakes and bay leaf to a large saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until the sugar dissolves and the flavors start to marry, about 5 minutes.
  • Add the green tomatoes, green and red bell peppers, onion and cabbage and bring to a boil, lower the heat and let simmer, stirring occasionally, for 15 to 20 minutes. Remove from heat. Divide the mixture between the two jars and let cool to room temperature. Serve immediately or seal and refrigerate for up to 6 weeks.

2 cups panko bread crumbs
1 tablespoon parsley flakes
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground black pepper
1 (1 pound) pork tenderloin, cut crosswise into 1/2-inch thick slices
¼ cup olive oil

Steps:

  • Stir panko bread crumbs, parsley flakes, garlic powder, onion powder, and black pepper together in a bowl. Dip tenderloin slices in the crumb mixture to coat both sides.
  • Heat olive oil over medium-high heat in a skillet and fry the pork until the crumb coating is browned and the pork is no longer pink inside, 2 to 3 minutes per side. An instant-read meat thermometer inserted into the center of the pork should read at least 145 degrees F (65 degrees C).

Transform any meal with a spoonful of my chow chow recipe, a classic Southern relish that's a flavorful combination of tart, sweet, crunchy, and spicy.

12 medium onions (4 cups)
1 medium head cabbage (4 cups)
10 green tomatoes (4 cups)
12 green bell peppers
6 sweet red bell peppers
½ cup coarse salt
6 cups granulated sugar
2 tbsp mustard seed
1 tbsp celery seed
1 ½ tsp turmeric
4 cups white vinegar
2 cups water

Steps:

  • Chop vegetables finely using a food processor or grinder. Place the chopped vegetables in a porcelain or glass container and sprinkle with the salt. Cover and let them stand overnight.
  • Place the vegetables in a large colander and rinse very well under cold running water. Divide into smaller batches if necessary.
  • Drain thoroughly and place in a large stockpot. Combine remaining ingredients and pour over chopped vegetables. Heat to boiling and then boil for 4 minutes.
  • Ladle into clean pint jars that have been sterilized in boiling water. Seal with sterilized lids according to manufacturer instructions. Process in a boiling water bath for 10 minutes.

1 (1-pound) pork tenderloin
Kosher salt and freshly ground pepper
8 bacon slices
1 teaspoon olive oil
8 shallots, halved
1/2 cup dried sour cherries
3/4 cup chicken stock
1 teaspoon cornstarch
Chopped fresh dill, for garnish, optional

Steps:

  • Preheat the oven to 400 degrees F. Pat dry the pork tenderloin and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper, then wrap with the bacon, overlapping the slices.
  • Heat the oil in a large nonstick skillet over medium-high heat until hot, then brown the pork and shallots, 6 to 8 minutes. Flip the pork tenderloin browned-side up and transfer the skillet to the oven. Roast until the pork reaches 145 degrees F in the center, 15 to 18 minutes.
  • When the pork is done, transfer to a cutting board, leaving the shallots in the skillet. Add the cherries and stock to the skillet and bring to a simmer. Stir together the cornstarch and 1 tablespoon water, then add to the skillet, bring to a boil, whisking until sauce is thickened, about 2 minutes. Season the sauce with salt and pepper. Slice the pork into 8 pieces, divide among 4 plates with the sauce, and sprinkle with dill, if desired.

1/2 cup black peppercorns
1/2 cup salt
2 dried bay leaves
1 teaspoon chili flakes
1 1/2 cups ice
4 bone-in pork chops, pounded to 1/4-inch thick
2 sweet potatoes, peeled and cut into 1-inch pieces
2 tablespoons olive oil
1 tablespoon dark brown sugar
Salt and ground black pepper
1 cup apple cider vinegar
3 tablespoons sugar
1 tablespoon salt
1 tablespoon mustard seed
2 teaspoons turmeric
1 teaspoon crushed red pepper flakes
2 cups diced green cabbage
2 cups diced green tomatoes
1/2 cup diced red bell pepper
1 tablespoon minced garlic
1 dried bay leaf
Salt
1 large egg, lightly beaten
1 cup panko breadcrumbs
2 tablespoons olive oil, plus more as necessary

Steps:

  • For the pork chop brine: In a saucepan, combine the peppercorns, salt, bay leaves, chili flakes and 1 1/2 cups water. Bring to a simmer and cook for 5 minutes, stirring to dissolve the salt. Remove the brine from the heat and add the ice to cool it down.
  • Place the pork chops in a baking dish and pour the cooled brine over them. Let the pork chops sit in the fridge while you prepare the rest of the dish.
  • For the sweet potatoes: Preheat the oven to 350 degrees F.
  • On a baking sheet, toss the sweet potatoes with the oil, brown sugar and some salt and pepper. Roast the potatoes until tender and cooked through, 30 to 40 minutes.
  • For the chow-chow: In a large saucepan, bring the vinegar, sugar, salt and 1/2 cup water to a boil. Add the mustard seed, turmeric and crushed red pepper flakes and stir. Add the cabbage, tomatoes, bell pepper, garlic and bay leaf and bring to a boil. Reduce the heat and let simmer, stirring occasionally, until the relish is thick and saucy, 15 to 20 minutes.
  • To cook the pork chops: Remove the pork chops from the brine and pat dry with paper towels. Sprinkle with salt. Place the egg and panko in separate shallow bowls. One at a time, dip the pork chops first in the egg and then in the panko to coat both sides.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Fry the pork chops in batches, adding more oil as needed, until crispy, browned and cooked through, about 5 minutes per side.
  • Serve the pork chops topped with the chow-chow and the sweet potatoes on the side.

1 1/2 lbs pork tenderloin (2 whole) or 6 pork chops
4 teaspoons chili powder
1 1/2 teaspoons dried oregano
3/4 teaspoon ground cumin
1/8 teaspoon garlic powder

Steps:

  • In a small bowl mix together chili powder, oregano, cumin, and garlic powder.
  • Place tenderloins or chops on a large platter. Rub the dry mixture over the pork, cover and refrigerate for 2-24 hours.
  • Grill the pork over medium coals or this can also be broiled. Turn occasionally. Tenderloins will take approximately 25-30 minutes and pork chops will be done in approximately 10-15 minutes. A meat thermometer should read 155-160 degrees and there should also be a hint of pink in the center.

For the Pork:
2 T. chili powder
1 tsp. each of kosher salt, black pepper & garlic powder
1/2 tsp. thyme
1/4 tsp. cayenne pepper
2 T. veg oil
1 pork tenderloin, trimmed (about 1-1/2 lbs)
For the chow-chow:
1/2 cup prepared yellow mustard
1/4 cup chopped onion
3 T. honey
2 T. sweet pickle relish
2 T. cider vinegar
2 tsp. worcestershire sauce
kosher salt to taste

Steps:

  • Preheat grill to med-high heat. Combine spices in small bowl and stir in oil. Rub mixture over pork. Grill, covered over direct heat 3 min. Rotate pork and grill 3 min. more. Rotate pork every 3 min. until internal temp registers 155 on instant heat themometer, about 15 min. total. Remove from heat, tent with foil and let rest 5 min. For chow-chow: Simmer sauce ingredients in small saucepan over med-low heat for 3-4 min. Serve with pork.
