This dish is a bit spicy, but oh so good. It's great to use that fresh summertime garden okra, tomatoes and fresh green onions. Serve the okra over rice; it makes a wonderful side dish.

Number Of Ingredients 11

1 lb fresh okra, tops removed and okra sliced (frozen okra just isn't the same)
1 can(s) diced tomatoes (if using fresh tomatoes, peel and dice 4 or 5 tomatoes, depending on size and the amount you desire in your dish)
1 c chicken broth
2 clove garlic, sliced thin or minced
2 leeks or green onions, sliced thin
1/2 - 1 tsp red pepper flakes, depending on taste
1 Tbsp old bay seasoning, or use your favorite cajun-style seasoning
1/2 tsp oregano
salt and pepper to your taste
cooked rice (i use brown rice, but your preference)
1-2 Tbsp extra virgin olive oil (evoo)

Steps:

  • 1. Saute garlic, onions or leeks, and red pepper flakes in EVOO. Right before it begins to brown, add the tomatoes (with juice). Add broth, oregano, Old Bay and then the okra, add salt and black pepper to taste. Mix well, cover, and simmer over med. heat about 10 minutes. Serve over hot rice. NOTE: This recipe is a bit spicy, so add red pepper flakes to your taste or omit them altogether, if you prefer.

Southern Okra and Tomatoes With Bits of Bacon image

TASTY SIDE DISH!!! You will see this dish in southern cafes including Paula Deens! The bacon bits give it much flavor. You may also use fresh tomatoes and okra out of the garden. Some cooks like to serve over rice.

6 slices bacon, reserve drippings
1 (16 ounce) bag frozen okra, sliced
1 (14 ounce) can petit diced tomatoes
1 medium onion, chopped
1 tablespoon sugar
1 teaspoon salt
black pepper

Steps:

  • Fry bacon and reserve 3 tablespoons of drippings. Crumble bacon and set aside.
  • In a large saucepan, mix okra, tomatoes with juice, onion, sugar, salt and pepper. Add the 3 tablespoons of bacon drippings. Gently bring to a boil and turn heat down to slow simmer. Cover with lid and simmer for approximately 30 to 40 minutes until tender. Do not stir okra because it easily falls apart.
  • Pour into a serving bowl and add crumbled bacon on top.
  • Note: If using fresh okra, wash okra and cut off ends. Cut into 1 inch pieces. For fresh tomatoes, wash and core tomatoes. Cut into small pieces.

My mom have a flea market and sell the produces and I bought okra, squash, green beans, and black eyed peas from her. I cleaned and washed the vegetables and sliced the vegetables to put in the freezer bags and put them in the freezer. I have alot of okra so I could make okra and tomatoes for my husband. He loves it. It is so good and tasty.

1 cup(s) cut okra
1/2 cup(s) chopped onion
1/4 cup(s) chopped green pepper
3 tablespoon(s) butter or bacon fat
4 - quartered tomatoes peeled if desired
1 teaspoon(s) salt
1/4 teaspoon(s) pepper

Steps:

  • Saute okra, onion and green pepper in butter or bacon fat over low heat. Add tomatoes and seasonings. Cook until vegetables are tender, stirring as little as possible.
