What a deliciously cheesy hash brown casserole. A potato lovers dream! They're creamy and tart with a bit of sweetness from the oven. A crunchy Corn Flake top puts it over the top. So simple to make, it would be a great breakfast or dinner side dish.

1 bag(s) frozen hash brown potatoes (2 lbs)
2 c shredded cheddar cheese
1/2 c melted butter
1 1/2 tsp salt
1 small onion (chopped)
1 can(s) cream of chicken or cream of mushroom soup, 10.75 oz.
1 c sour cream
2 c crushed Corn Flakes
1/4 c melted butter

Steps:

  • 1. As mentioned above, thaw hash browns (or use refrigerator style hash browns).
  • 2. In a large bowl, mix together hash browns, cheddar cheese, 1/2 cup melted butter, salt, onion, soup, and sour cream. Stir until evenly mixed.
  • 3. Spray a 9 x 11 or 9 x 13-inch pan or casserole dish with Pam or lightly grease the dish. This helps with clean up.
  • 4. Pour mixture from the bowl into the pan and spread evenly with a spoon. Do not pack down tightly.
  • 5. In a small bowl, mix together Corn Flakes and 1/4 cup melted butter. Mix together and spread on top of casserole.
  • 6. Bake at 350 degrees F for 45 minutes without a lid. The top should be lightly browned when done.

1 package (20 ounces) refrigerated shredded hash brown potatoes
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup apple jelly
1/4 cup apricot preserves
1 tablespoon horseradish sauce
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 cups cubed fully cooked ham
4 large eggs
2 green onions, finely chopped

Steps:

  • Preheat oven to 400°. Place potatoes in a greased 15x10x1-in. baking pan. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Bake until edges are golden brown, 25-30 minutes., In a small bowl, combine jelly, preserves, horseradish sauce, Dijon, garlic powder and onion powder. Pour over potatoes; add ham. Toss to coat., With the back of a spoon, make 4 wells in potato mixture. Break an egg into each well. Bake until egg whites are completely set and yolks begin to thicken but are not hard, 10-12 minutes. Sprinkle with green onions and additional pepper.

These kicked-up hash browns are de-lish! There's a slight bite, but it's not too hot. Super creamy and flavorful, they'd make a great side dish or a tasty addition to a potluck dinner.

1 large bag of frozen hash browns, country style, and thawed
1 medium chopped onion
1 medium chopped green bell pepper
1 regular size can of rotel tomatoes and chilies....hot
1 Tbsp celery seeds
1 Tbsp garlic salt
1/2 tsp cumin
1/2 tsp paprika, sweet mild
1 jar(s) hormel real bacon bits...do not use dried imitation bits
3 c finely shredded cheese (i use monterey/cheddar mix)
1 can(s) cream of celery soup
1 24 ounce container of sour cream
1 c finely shredded cheese as above

Steps:

  • 1. After the hash browns are thawed, mix all ingredients in a large bowl except the soup and sour cream, and the 1 cup of shredded cheese. Toss together well.
  • 2. In a small mixing bowl, whisk together the cream of celery soup and sour cream. Add this mixture to the potato mixture and thoroughly mix together.
  • 3. Spray a 9x13 casserole dish with oil and preheat the oven to 375 degrees. Pour the potato mixture into the casserole dish and spread out evenly. Place in preheated oven and bake for 1 hour.
  • 4. After an hour pull the casserole out of the oven and sprinkle the last cup of cheese over the top. Turn the oven off and put the dish back in the oven and let it stay about 10 minutes for the cheese to melt.
  • 5. This dish is spicy but not really hot. If you are adventurous and want more heat, add 1/2 cup of finely chopped jalapeno pepper;leave the seeds in for even more heat!!!

1 stick butter ( 1/2 cup )
1 c chopped red onion
1/2 c small chopped celery
1 Tbsp chunky garlic paste or minced garlic
1 - 32 oz pkg, southern hash browns, partially thawed - these are the cubes, not shredded - although you could probably use them as well.
2 1/2 - 3 c fresh shredded - sharp cheddar cheese
1 - 14.5 oz can, cream of chicken soup
3 c milk
1 c heavy cream
1/4 - 1/2 c sour cream
1 Tbsp parsley paste or fresh chopped
1 tsp each - kosher salt & garlic salt or to taste
1 tsp fresh cracked black pepper
toppings real bacon bits, sour cream, cheese

Steps:

  • 1. In a dutch oven over medium heat - melt butter. Add onion, celery and garlic - cook and stir until celery and onion are tender, about 5 minutes.
  • 2. Stir in the hash browns - continue cooking and carefully stirring for another 5 - 10 minutes or so. Making sure not to stick.
  • 3. Next, stir in the milk, cream, soup, salt, pepper, garlic salt, sour cream, parsley. Stir, making sure the sour cream and soup is thoroughly combined and cheese is melted.
  • 4. Continue cooking and stirring for another 15 - 20 minutes or until potatoes are nice and tender. Serve in bowls and top with sour cream, cheese and bacon bits if preferred. It's delicious and very satisfying.

1 medium onion, finely chopped
1/4 yellow bell pepper
1/4 red bell pepper
1 cup sweet corn, drained
3 tablespoons minced garlic

1/2 teaspoon ground black pepper
2 cans cream of chicken soup
3/4 cup milk
1/2 cup sour cream
2 cup shredded cheddar cheese
1 teaspoon garlic powder

1/2 tsp red pepper flakes
2 tbsp fresh parsley, finely chopped
2 pounds of southern style hash browns

Steps:

  • In a skillet cook the ground beef with onion, bell peppers, and red pepper flakes until browned; drain fat over a colander. Return to pan and add in corn, garlic, season salt, and black pepper; cook until meat is lightly browned.
  • In a medium bowl, whisk together the soup with milk, sour cream, 1 1/2 cups cheddar, garlic powder, seasoned salt, black pepper, red pepper flakes, parsley and potatoes.
  • Preheat oven to 350 degrees. In a greased 9 x 13 baking dish, pour the potato/soup mixture. Next pour the ground beef mixture over the top and cover with remaining 1/2 cup cheddar cheese.
  • Cover with foil and bake for 35 minutes. Remove foil and broil for 3-4 minutes or until cheese is golden and bubbly. Enjoy!

Four 14-ounce pork chops
Marinade, recipe follows
1 cup Apple Cider Glaze, recipe follows
3 cups Sweet Potato Hash, recipe follows
Salt and pepper, to taste
4 rosemary sprigs
2 ounces bourbon
2 ounces Worcestershire
1 handful juniper berries, crushed
Freshly crushed black pepper
Pinch of rosemary, thyme, sage, chopped
1/4 cup olive oil
2 tablespoons honey
1 cup brown sugar
3 cups apple cider
1/2 cup cider vinegar
1 clove garlic, minced
1 sprig fresh thyme
1 sprig fresh sage
1 teaspoon ground black pepper
1/2 cup yellow onion, diced
1 clove garlic, minced fine
2 tablespoons olive oil
1 cup andouille sausage, diced
2 whole sweet potatoes, peeled and diced 1/4 by 1/4-inch
1 cup chicken stock
3 tablespoons heavy cream
1 teaspoon salt
1/2 teaspoon black pepper, finely ground

Steps:

  • Marinate the pork chops for 2 to 3 hours. In the meantime make the hash and glaze.
  • Preheat grill to medium. Remove the chops from the marinade and wipe off any excess marinade. Grill chops, basting with Cider Glaze until desired temperature. Medium temperature is 15 to 18 minutes. Present chops with a base of Sweet Potato Hash with pork chop placed on top and garnish with a rosemary sprig.
  • Mix ingredients together.
  • Caramelize the honey and brown sugar in a pan over medium heat, stirring constantly. Combine the apple cider, vinegar and garlic and add to sugar, bring to boil over high heat. Lower the heat to medium and simmer for 30 minutes. Strain into a small saucepan and add thyme, sage, and pepper and cook over medium heat for 15 minutes. Remove herbs and reserve for pork chops.
  • Saute onions and garlic in the olive oil over medium heat in saucepan until translucent. Add andouille sausage and stir well to combine. Once some of the fat begins to render from the sausage and the diced sweet potato and cook for stirring frequently for 10 minutes. Add chicken stock until evaporated then add cream and reduce until liquid is absorbed. Season with salt and pepper and keep warm.

Chunks of crisp potato, bits of bacon, and tender morsels of crab are held together with melting cream cheese for a spectacular sort of Southern-accented comfort food.

2 pounds boiling potatoes, peeled and cut into 3/4-inch pieces
6 slices bacon
1 onion, chopped
Cooking oil, if needed
1/2 teaspoon salt
3 ounces cream cheese
1/4 cup milk
1 1/2 teaspoons Worcestershire sauce
Pinch cayenne
3/4 pound lump crabmeat
1/8 teaspoon fresh-ground black pepper
3 tablespoons chopped fresh chives or scallion tops

Steps:

  • Put the potatoes in a medium saucepan of salted water. Bring to a boil. Lower the heat; simmer until almost tender, about 5 minutes. Drain.
  • In a large nonstick or cast-iron frying pan, cook the bacon until crisp. Remove the bacon from the pan and crumble it. Pour off and reserve all but 1 tablespoon of the fat from the pan. Add the onion to the pan and cook over moderate heat, stirring frequently, until browned, about 8 minutes. Remove the onion. Wipe out the pan.
  • In the same pan, heat the reserved bacon fat and enough oil to measure 3 tablespoons over moderately high heat. Add the potatoes; let them cook, without stirring, for 6 minutes. Add 1/4 teaspoon of the salt, stir, and cook the potatoes until well browned, about 6 minutes longer. Add the onion and bacon and continue cooking until they are warm through, about 1 minute longer.
  • In a medium saucepan, heat the cream cheese, milk, Worcestershire sauce, cayenne, and the remaining 1/4 teaspoon salt over moderately low heat, stirring, until hot, about 5 minutes. Add the crab and black pepper and cook, stirring, until warm through, about 2 minutes longer. Stir the crab mixture and 2 tablespoons of the chives into the potatoes until just combined. Serve topped with the remaining 1 tablespoon chives.

  • Put vegetables through the meat chopper, using coarse cutter; cook in the stock, covered until tender. Add beef, salt and pepper; when hot turn onto a platter.
  • Corn beef can be used, use salt sparingly.
